A Feast for Crows by George R.R. Martin: has "epic fantasy" as one of its genres on its main page, and it is also 1000+ long
Note: Since I recently posted another completed tasks that includes George R. R. Martin's (epically long) A Storm of Swords, I would like to make it clear that I did not magically read two 1000+ page books in a day. Haha, I had a hard drive malfunction which caused my first reading list to be deleted. As I made my list a second time, I came to realize I could shift my tasks around to make it more efficient. I actually finished both A Storm of Swords and A Feast for Crows a couple weeks ago.
