I'm hoping that Canticle for Leibowitz and The Memory Police, which I haven't read yet, get a chance to be discussed in a VBC so I'd rather they were kept separate but it's not absolutely necessary. Canticle could and should generate an interesting discussion about the role Christianity has played in shaping the world, memory, and how we interpret the past. No idea what kind of discussion The Memory Police will inspire.

I'd be lying if I said I was excited about the prospect of discussing any of the other books, even though I did enjoy reading them. :/

Oh no, it's definitely not YA. Some people label the first book as such, because the characters start fairly young. But the series follows them as they age, and besides, it's violent, heavy in terms of subjects it explores and from the second book also politically intricate.
