Jeremy Jernigan likes to cook. And he likes to invent his own recipes. And he likes to try other people’s recipes. And now I’m going to share them with you.
   
Well, because they are having Christmas at the beach.
INGREDIENTS1 pound bay scallops1 pound uncooked small shrimp, peeled and deveined8 ounces imitation crabmeat½ cup butter1 8-oz can chicken broth1 lb mozzarella cheese, grated8 oz Ricotta cheese1 8-oz bottle clam juice½ cup all-purpose flour1 ½ cups whole milk1 cup heavy whipping cream½ cup Parmesan cheese, divided1 box lasagna noodles, cooked and drained. SEASONINGSSalt and pepper, to taste
2 teaspoons garlic powder * garlic powder not salt.
1 teaspoon oregano
1 teaspoon basil
DIRECTIONSBring broth and clam juice to a low boil.Add scallops, shrimp, and crab meat; return to a boil.Reduce heat; simmer, uncovered, for 4-5 minutes or until shrimp turn pink and scallops are firm and opaque, stirring gently.Drain, reserving cooking liquid; set seafood mixture aside.In a large saucepan, melt the butter.Whisk in flour until smooth; add seasonings.Combine milk and reserved cooking liquid; gradually add to the saucepan.Let simmer, stirring with whisk until thickened; remove from heat.Blend in cream and cheeses.Stir 3/4 cup white sauce into the seafood mixture.Preheat oven to 350°.Spread ½ cup white sauce in a greased 13 x 9 inch. baking dish.Top with three noodlesSpread with half of the seafood mixture and half of the remaining sauce.Repeat layers.Top with remaining noodles, sauce and cheese.Place in oven and bake uncovered for 30 – 40 minutes.Let stand for 15 minutes before cutting.SERVING SUGGESTIONServe with fresh salad with Italian dressing, and warm garlic bread or breadsticks.

How many disasters can one Christmas holiday survive.
It all started with old wiring and a fire.
The Elliott family had always enjoyed gatherings with extended family and friends. Especially at Christmas. They had discovered Blue Mountain Inn, near Asheville, North Carolina; it became their venue of choice, and had hosted their crowd the past three years.
This year promised to be the best yet with over a hundred family and friends planning to come.
Until the wiring in the hundred-year-old inn sparked a fire, destroying much of the beloved inn. And two weeks before Christmas, too.
With no venue, it seemed their fledgling holiday tradition was a bust. Until Gigi called on a friend who ran a B&B at Heron Cove.
All systems were go; their holiday was rescheduled for the last week of January.
Until eighty-four-year-old Gigi had a stroke. On New Years Day.
Gigi’s free spirit, and three weeks of recovery and therapy, and all systems were go. Again.
One disaster follows another as the family and friends gather to celebrate Christ’s birth. But even with a lost aunt and uncle, muddy dogs, a jellyfish sting, and dogs eating the turkey, there is joy and peace and laughter at Blue Heron Inn. And love. Lots of love.
NOTE: There is a short mention of racism in this story that might be offensive to some readers.

My characters struggle in some way for their identity. Their stories are their journey to know who God created them to be.
There is also a strong element of friends, family, and faith in all my stories, and the difference it makes to have such a support system.
I am a Christian and write from a Christian world view, but some of my characters are not believers and therefore do not abide by the Bible and the guidelines for life that we take for granted. My books contain some mild swear language in a few places—and demonstrate the difference when the grace of God prevails.

How identical is too identical?
Twin sisters Elizabeth and Meredith Elliott are so identical their own parents can’t even tell them apart. Two halves of a whole.
Elizabeth, the more cautious of the two, reining in her sister’s impetuous side. Meredith, the more daring, urging Elizabeth to step beyond her comfort zone.
Elizabeth and Meredith walked in each other’s shadow; it’s what they did. Filling in for one another, switching places to prank their friends and to cover for one another in a pinch.
But when heartbreak befalls one of them—while the other’s heart and arms are fulfilled—will it drive a wedge between them?
NOTE: This story deals with issues—miscarriage and infertility—that might be difficult for some readers.
