Salad of Fall Greens with Persimmons
From Marilu’s NY Times Bestseller Healthy Holidays:
3/4 cup fresh tangerine juice
1 Tablespoon grated tangerine zest
1/2 cup vegetable oil
1/4 cup walnut oil
2 Tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
Pepper
1 head escarole (about 12 cups)
1 large bunch watercress, stems removed (about 6 cups)
1 (5 ounce) package mixed baby greens
2 Fuyu persimmons, peeled, halved, and thinly sliced
12 cup hazelnuts, toasted, skin rubbed off, and coarsely chopped
In a heavy small saucepan over medium-high heat, boil the tangerine juice and zest until reduced to 1/4 cup, about 5 minutes. Transfer to a medium bowl. Whisk in the oils, vinegar, salt, and cinnamon and season to taste with pepper. Place all the greens and half of the persimmon slices in a large bowl. Add the dressing and toss to coat. Divide among ten plates and top with the hazelnuts and the remaining persimmon slices.

Emergency Tip for Pets
At this time of year with lots of extra activity, decorations and packaging it’s easy for curious pets to get into trouble. Here’s a tip that will help if you suspect your dog has ingested something sharp. THIS IS NOT INTENDED TO REPLACE A CALL OR TRIP TO THE VET.
Keep cotton balls on hand (real cotton balls, not ones made with synthetic fiber) Dip the cotton ball into milk or cream (dairy or dairy free) and feed it to your dog. They seem to enjoy these treats but if you need to add something savory to it go ahead. Dogs under ten pounds should have the equivalent of two cotton balls torn into pieces, while dogs weighing 10-50 pounds should have 5-7 balls. The cotton will wrap itself around the offending object and protect the digestive tract.
This is a good protection while you are waiting to consult your veterinarian.

Meatless Monday…CLEAN EATING !!
From Marilu’s NY Times Bestseller, “The 30 Day Total Health Makeover” here’s a recipe that will make a nice change from the heavy dishes normally prevalent at this time of year. Add some crusty bread and your favorite wine and this meal is both festive AND satisfying.
ARUGULA AND GRILLED VEGETABLE SALAD
2 Tablespoons balsamic vinegar
1/4 teaspoon Dijon mustard
1 teaspoon water
1 and 1/2 teaspoons mellow barley miso
1 Tablespoon olive oil
Pepper to taste
1 medium sized sweet onion, peeled and cut into thick slices
1 medium zucchini, cut diagonally into 1/4 inch slices
4-6 cups torn or coarsely chopped arugula
2 Tablespoons whole basil leaves
1 Tablespoon chopped Italian parsley
Whisk together vinegar, mustard, water, and miso. Dribble in olive oil, whisking constantly until dressing emulsifies. Season with pepper to taste. Brush onion and zucchini with dressing and grill or broil, turning once, until tender. (If zucchini slices are particularly large, cut in half lengthwise after grilling.) Toss together arugula and basil leaves with just enough dressing to coat. Divide among 4 salad plates. Arrange grilled vegetables on top and sprinkle parsley over all.

Aaaahhh!!
Long lines, big crowds, buffet tables crowded with eight kinds of cheese dip. Do you know where you don’t have to fight a crowd, wear pinchy shoes or make small talk? Your bathtub.
Treat yourself to a baking soda bath. Think of it as a mini retreat. Add a cup of baking soda and some epsom salts to a comfortably warm tub. Add essential oils to make it even more soothing; tea tree or eucalyptus for their healing properties, chamomile or lavender to help you relax. Sip on a cup of tea, bring a book, plan to soak for 40 minutes in order to pull out the toxins and absorb the minerals. Afterwards wrap up in your warmest robe and continue to flush out toxins by drinking plenty of water.

OVERNIGHT BISCUITS
From Marilu’s NY Times Bestseller “Healthy Holidays” this biscuit recipe is wonderful for lazy weekend breakfasts in cold weather or family dinners over the holidays.
Overnight Biscuits
1 package dry yeast
2 cups soy buttermilk
3 tablespoons Sucanat
1 teaspoon sea salt
5 cups whole wheat pastry flour
1 tablespoon baking powder
1 teaspoon baking soda
¾ cup soy margarine
In a small bowl, dissolve the yeast in 2 tablespoons water. Add the buttermilk substitute, Sucanat, and salt and set aside. In a large bowl, mix the flour, baking powder, and baking soda. Cut in the margarine. Add the liquid ingredients and mix lightly—don’t knead. Store in a large covered bowl in the refrigerator overnight. When you are ready to bake the biscuits, preheat the oven to 450°F. You can either pinch off pieces of the dough and form them like hamburger patties, or you can knead the dough, roll it out, and cut out biscuit shapes. Place the biscuits on a baking sheet and bake for 10 minutes, or until lightly browned on the bottom.

Healthy Potato Latkes
From Marilu’ NY Times bestseller HEALTHY HOLIDAYS enjoy this recipe for healthy potato latkes.
2 Tablespoons plus 6 teaspoons canola oil
1 medium organic Spanish onion
6 medium organic baking potatoes
2 large organic cage free eggs
2 Tablespoons matzo meal
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon freshly ground black pepper.
Preheat the oven to 350 degrees. In a heavy nonstick saucepan over low heat, put 2 Tablespoons of the oil. Add the onion and saute until softened, about 10 minutes. Cool. Coarsely grate the potatoes into a mixing bowl. Squeeze out the excess liquid or drain in a colander. Transfer the potatoes to a bowl and mix in the sauteed onion, eggs, matzo meal, garlic powder, salt and pepper. Grease a 12-cup nonstick muffin pan well and pour 1/3 cup potato mixture into each muffin tin. Smooth the tops lightly and spoon 1/2 teaspoon oil over each. Bake about 45 minutes, or until firm and brown at the edges. Remove from the oven and run a small, sturdy rubber spatula around the edges of the latkes to release them. You can leave them in the pan 15 to 30 minutes to keep hot. Serve hot with applesauce.

Traditional Applesauce
This recipe is wonderful to have on hand at the start of Hanukkah because it goes so well alongside latkes. But it’s also a great anytime dish. It will fill you home with wonderful aromas and make a nice light snack or a side dish on a variety of menus.
From HEALTHY HOLIDAYS:
4 pounds organic apples, cored, peeled, and quartered
1/2 cup Sucanat
12 teaspoon ground cinnamon
1 Tablespoon strained fresh organic lemon juice
In a large saucepan, combine the apples, Sucanat, cinnamon, and 1/2 cup water and bring to a boil over medium-high heat. Uncover and cook, stirring frequently, about 15 minutes, or until the apples are very tender. Cool. Use a slotted spoon to transfer the apples to a food processor. Puree the apples. Return the puree to the saucepan and simmer a few more minutes, stirring, until it is the desired thickness. Add the lemon juice and more Sucanat, if needed, stirring to blend.
