OVERNIGHT BISCUITS

From Marilu’s NY Times Bestseller “Healthy Holidays” this biscuit recipe is wonderful for lazy weekend breakfasts in cold weather or family dinners over the holidays.


 

Overnight Biscuits 


1 package dry yeast

2 cups soy buttermilk

3 tablespoons Sucanat

1 teaspoon sea salt

5 cups whole wheat pastry flour

1 tablespoon baking powder

1 teaspoon baking soda

¾ cup soy margarine


In a small bowl, dissolve the yeast in 2 tablespoons water. Add the buttermilk substitute, Sucanat, and salt and set aside. In a large bowl, mix the flour, baking powder, and baking soda. Cut in the margarine. Add the liquid ingredients and mix lightly—don’t knead. Store in a large covered bowl in the refrigerator overnight. When you are ready to bake the biscuits, preheat the oven to 450°F. You can either pinch off pieces of the dough and form them like hamburger patties, or you can knead the dough, roll it out, and cut out biscuit shapes. Place the biscuits on a baking sheet and bake for 10 minutes, or until lightly browned on the bottom.
