Um, wow. Can honestly say I have never had this question come up before. Personally, if I have a collection of books in one volume, I will first see if there is an individual entry for a particular book since GR counts it as one book, not two or three or whatever. For example, some Nora Roberts books are frequently republished as 3-in-1 collections.
Some mystery authors also occasionally have early books reprinted in 2-in-1 or 3-in-1 collections. For example, Anne Perry's first two Christmas books have been repackaged in one volume as An Anne Perry Christmas: A Christmas Journey / A Christmas Visitor. If I had this 2-in-1, I would list these titles individually, not as the collection, in order to get full credit for reading each book.
If the story included in the anthology/collection is not available as an individual story, then I guess I would list the book by title/author read that you counted towards the challenge.
