Chocolate Lava Cake For Two (Or One)

Ingredients

1 whole + 1 yolk large eggs
2 Tbsp white sugar
4 Tbsp + 1 tsp butter
1/3 cup semi-sweet chocolate
2 Tbsp flour, divided

Instructions

STEP 1: Divide 1 tsp of butter between two four-inch ramekins. Using your fingers, smear the butter all over the inside surface of the ramekins until they are coated. Place 1 Tbsp of flour inside one ramekin and roll it around until the entire inside is dusted with flour. Pour the excess flour into the second ramekin and dust in the same manner. Discard the excess flour from the second ramekin.

STEP 2: Preheat the oven to 450 degrees. In a small bowl combine the egg, egg yolk and white sugar. Using a mixer, whip the mixture until it is aerated and a light yellow color (about 2 minutes).

STEP 3: In a small microwave safe bowl, combine the chocolate and butter. Microwave for 15 second intervals, stirring well between each interval. The chocolate will melt further as you stir between heating so stir well. My chocolate took 3, 15 second intervals (45 seconds total) to melt completely.

STEP 4: Stir the remaining 1 Tbsp of flour and the melted butter/chocolate mixture into the whipped eggs and sugar. You can use the mixer again if desired but I just stirred really well with a fork.

STEP 5: Divide the cake batter between the two ramekins. Place the ramekins on a baking sheet and place in the oven. Cook for 8-10 minutes. Keep a close eye on the cakes, you want to remove them from the oven when the edges are set but the centers are still soft and jiggly.

TIP: You will notice the batter rising (puffing up) during the last couple of minutes of cooking. The outer edge will rise first and then the center will rise as it cooks. If the center rises up, that means it has cooked and will not be molten. So, remove the ramekins from the oven when the edges are high but the center is still a little sunken in. (hide spoiler)]

Ingredients

Crust
1 3/4 cups all purpose flour
1/2 teaspoon salt
6 tablespoons chilled unsalted butter, cut into small pieces
5 tablespoons chilled solid vegetable shortening, cut into small pieces
2 tablespoons (or more) ice water
Filling
3 3/4 pounds Granny Smith apples (about 10 medium), peeled, cored, thickly sliced
1 tablespoon fresh lemon juice
2 1/2 tablespoons unsalted butter
1/3 cup sugar
1 teaspoon ground cinnamon
2 tablespoons apple cider
1 tablespoon cornstarch
1/4 cup applesauce

Topping
3/4 cup all purpose flour
1/2 cup sugar
1/4 cup (packed) golden brown sugar
3/4 cup chopped walnuts (or pecans)
6 tablespoons (3/4 stick) unsalted butter, cut into small pieces
1/4 teaspoon salt

Instructions

For crust
Mix flour and salt in processor. Add butter and shortening; using on/off turns, cut in until mixture resembles coarse meal. Drizzle 2 tablespoons ice water over. Process until moist clumps form, adding more ice water by teaspoonfuls if dry. Gather dough into ball; flatten into disk. Wrap in plastic. Chill 1 hour.
Roll out dough between 2 sheets of plastic wrap to 14-inch round. Transfer dough to 10-inch-diameter glass pie dish. Fold overhang under. Crimp edges decoratively. Pierce bottom of crust all over with fork. Freeze crust 15 minutes. (Can be prepared 1 day ahead. Keep frozen.)
Preheat oven to 350°F. Line crust with aluminum foil. Fill with pie weights or dried beans. Bake 15 minutes. Remove weights and foil. Bake until golden and set, about 10 minutes longer. Cool.

For filling
Toss apples and lemon juice in medium bowl. Melt butter in heavy large skillet over medium-high heat. Stir in sugar and cinnamon. Add apples; sauté until coated with cinnamon butter and crisp-tender, about 5 minutes. Whisk cider and cornstarch in small bowl. Add to apples. Bring to boil, stirring constantly. Transfer apple mixture to large bowl. Mix in applesauce. Cool completely. (Crust and filling can be made 1 day ahead. Cover crust; let stand at room temperature. Cover and chill filling.)

For topping
Preheat oven to 350°F. Using fingertips, rub all ingredients in bowl until moist clumps form.
Place filling in crust. Sprinkle topping over apples. Bake until topping is golden brown, about 40 minutes. (hide spoiler)]

Then you just make sure you have another three apples available for a do-over. :D

My advice - make your pie as normal. Caramelize some bacon. Taste them together. Won't be quite the same as baking it in but should give you an idea.

Every now and then I get someone who....takes issue with my review and they don't want to hear otherwise. This guy just got condescending (you know I "just didn't understand what he was saying"...I'm no5t bright enough, you know). It turned out in this case he hadn't read the book in question, he just didn't approve of my reason for not liking the book.
