Beauty Inspires Health and Nutrition, Variety is an Essential Practicality

Week 3 of the New Nordic Diet course asked the study question: "How do you think that a greater variety of healthy foods in supermarkets in your country would inspire to healthier eating habits?"

Having lived in Florida, New York and California within the United States I already see a great variety of healthy food offerings and produce on the supermarket shelves. I am not persuaded variety is the key to inspiring dietary changes among people and countries.

Beauty and vanity however is a source of inspiration and lessening the exposure to pain (via costly and painful plastic surgical procedures following obesity and old age) could be a great motivator.

Educating through informercials and TV adverts picturing beautiful women and handsome men eating healthy (fresh fruit and vegetables, seasonal fish, grains and more living food - as opposed to boxed and processed food) definitely could have an impact on a sight and sound culture.

Variety alone thus far in the USA (already a breadbasket of plenty to itself and the world) has not made much of an impact apart from adequate education.

Furthermore a good variety of produce if prepared improperly (cooked and made with harmful oils - vegetable oils and GM canola oil) can be equally harmful, though on the label quite misleading and untruthful.

More images of beauty coupled with accurate information and education therefore is needed to effect a greater social shift, change and dietary reformation.

The social factors said to be closely aligned with the New Nordic diet are "high level of urbanization, education, women more accepting than men, and higher income."

Cultural factors influencing acceptance of the New Nordic diet are ""ínterest in cooking, eating habits that embrace ‘feminine’ tastes, ‘modern’ dishes and healthy foods, as well as preferences for consuming organic and seasonal foods."

Thus female tastes, preferences and a desire for beauty (or just plain being beautiful) can both endear other women to the Nordic diet and men desirous of feasting their eyes on beautiful women while enjoying good food.

To me the most important parts of the nutrient budget to prevent nutrient losses to the environment are adequately surveying the soil(s) and topography farmers are working with before haphazardly endeavoring to apply expensive and time-consuming inputs (which potentially might harm the environment and prove ineffective agriculturally).

Why spend money haphazardly on expensive inputs without first testing the soil to see what is needed and works? It's like trying to win a woman's heart without first knowing her love language.

English Teachers in China - China English Teachers Paid Like Janitors and Dishwashers

I was recently approached by a company representing a prestigious university in China hoping to recruit me to be their English teacher.

The salary English teachers in China are typically paid is around 8,000 RMB (Yuan).

As for salary 8,000 RMB = 1,313 US dollars. 1,313 x 12 = 15,756 a year

This salary is at the U.S. poverty line http://aspe.hhs.gov/poverty/13poverty... based on these guidelines.

Teachers in the USA are typically paid a minimum of 3,000 USD a month (18,271 RMB) and having 2 master degrees as I do, teachers typical earn higher wages around 4,000 USD a month (24,361 RMB).

Janitors and dishwashers are typically paid minimum wage 8.25 USD an hour. A 40 hour work week (4 weeks a month) a minimum wage worker would earn 1,320 USD (8,000 RMB).

So you see what China offers foreigners (Americans, Canadians, British, Australians) to move away from their civilized countries and family to teach English in China where the air and water are less clean is what a minimum wage worker earns here in the United States to clean floors and wash dishes.

Nevertheless several universities like the National University of Defense Technology in China offer several degree programs as shown below:

A possibility of sweetening the opportunity for a English teacher going to China would be to ask the university you are teaching at to give you the opportunity to earn a degree while you teach, or study Chinese (Mandarin) for free.

In my case I am seeking a PhD by publication from a University (as I have published over 20 books) if I were to teach for them.

Also another option is to write in the contract that you would be permitted to fulfill outside speaking engagements whenever you are not teaching, for example in the evenings. This would enable you to earn some extra money possibly.

In the USA I deliver some motivational talks throughout the year and am typically paid $2,500 per hour for delivering a keynote speech (15,226 RMB). Yes, that is right. This is what I am paid to speak for one hour. I speak for the U.S. Military, Fortune 500 Companies, the Travel Industry and Universities.

If the China English School or University will allow you to speak outside their university (write it in the contract) and offer you some free Chinese language lessons (or a PhD by publication in my case), maybe working for lower wages combined with the cultural experience of living in China ....and being exposed to a world of new opportunities would be worth considering?

Manufacturing in Wenzhou, Zhejiang province has turned a major river white as the latex from unsustainable manufacturing processes washes straight into vital rivers and become so polluted people are dying and becoming very ill from the water pollution.

Wenzhou city, Zhejiang province in China offered me a job to teach English but when I looked at how polluted the air and water is I immediately said no.

8,000 RMB is too little money for me to endure the water and air pollution there.

Breastfeeding - Breast Fed Babies are Healthier and Embrace Variety of Foods

The Nordic diet acknowledges that breastfed babies have more of a palate for variety versus formula fed babies.

After all an infant eats what their mother does. But if a mom just factory feeds her baby formula, she drastically hinders the newborns ability to embrace a variety of cuisine later in life.

A bonus to breastfeeding as opposed to formula is breastfeeding exposes the infant to a variety of tastes early on ...unlike formula. So later in life she will embrace other tastes and types of food versus being a rigid and frigid eater.

Read below from "The Nordic Diet"

Acceptance of a variety of foods throughout one's lifetime is far easier to embrace for a child when they have grown up as an infant experiencing different tastes from their mother's breast.

Evidence shows food acceptance is traceable and linked to the first 2 years of a child's life.

Thus exposure via the breast is a simple conditioning mechanism. This early dietary programming to food for babies is often lost when mothers refuse to breastfeed.

"In the utero, the unborn child is exposed to tactile and sound inputs, but also to different tastes and smells via
amniotic fluid." (Nordic Diet, Univ. Copenhagen)

Even preferences for sweet tastes
are already developed before birth just like the rejection for bitter and sour tastes. In an elegant study, the prenatal exposure to an acid flavor was shown to accept with positive head movements towards an acid odor in infants just after birth." (Nordic Diet)

Exposure to flavor substances derive from the mother's diet and related
homeostasis processes. There is a clear evidence for a relation between what a mother eats during pregnancy and the initial stages of flavor programming in the unborn child. This relationship becomes even clearer after birth when the
infant is fed by mother milk or formula
milk." (Ibid)

Because formula milk is typically the same and constant in composition (unlike mother's milk varying based on what the mother eats daily), "differences in the
easiness of acceptance of novel flavors in the weaning period have been related back to the kind of milk feeding the infant did receive. Breast fed infants showed a greater accept of novel flavors than infants fed with formula milk" (Ibid).

These early experiences with milk among newborns greatly impacts their development and food preferences later in life (often unbeknownst to mothers who had they known might have been more apt to breast feed during infancy).

"Some studies report that the learned
preferences in the first two years of life even remain all the way into adulthood. Another aspect with infants is that, in comparison with toddlers and other children, they tend to accept new flavors more rapidly with relatively few exposures required. Early exposure to a variety of flavors during pregnancy and lactation may therefore being important in assisting desirable long term dietary outcomes." (Ibid)

By age two through six years of age, "a
greater decline in accepting novel foods is generally observed" (Ibid).

That being said, I plan to breastfeed all of my children and encourage all of my clients to do likewise who I provide health coaching to as a game plan for optimal health and peak performance for a lifetime.
