The holidays are fast approaching! When I think of the holidays, I often remember my Grandma Rosemary picking up pies from the Perkin’s. She would get a few French Silk pies. I think that was her favorite pie!

If French Silk Pie is your favorite holiday dessert, you must try my recipe because it is the BEST keto  pie you will ever have! The brown butter gives the filling an extra boost of caramelly goodness!

Remove the opening in the top of the blender and slowly add the hot brown butter (or coconut oil) into the egg mixture. The heat will cook the eggs. Once all the brown butter is in the blender, place the top back onto the blender and puree until very smooth. The holidays are fast approaching and I couldn’t be more excited!

I LOVE to bake cookies during the holidays but I have been in South Africa the past few weeks so as soon as I got home from a LONG flight, I turned on my camera (do not judge how tired I look… one flight was 16 1/2 hours long!) and made a YouTube video making my recipe for all of you!

HOW TO MAKE CHOCOLATE CARAMEL MERINGUE COOKIES

TIPS ON MAKING MERINGUE COOKIES

Use Room Temperature EggsDo not allow any water to touch the whites: make sure your bowl is dry, the spatula is dry and the hand mixer is dry.Do not spray the parchment with fat. Place the cookie batter on dry parchment. Spray will cause the cookies to fall.Use erythritol instead of allulose. Allulose will work BUT they are very sticky. “Anyone who has toyed with the idea of going full carnivore for their mental health…DO IT! As background, I have been severely depressed and anxious for quite literally my entire life, with diagnoses of bipolar and BPD coming and going because it was hard to pinpoint. Hospitalized twice for my mental health. 


I’ve tried quite honestly just about every medication they make for mental health, and none of them actually made me feel THAT much better, and side effects (including permanent tremors) were pretty awful. I’ve been carnivore since mid August, and the change is honestly astounding. About a month in, I started to realize I was smiling for literally no reason? I was like ok that’s weird but not bad weird. 


I started to notice my mood in general was more stable day by day. I just felt calm and happy, and a lot less stressed out. I’m going to be going off my antidepressants because I honestly don’t think I need them anymore and I’m tired of side effects. And not at all because my life stabilized in any way, I am a PhD student in a difficult family situation with relationship issues related to my mental health, a 14 year old with pathological demand avoidance, oh and I just moved from Texas to Alabama rather suddenly because of school. So yeah, there is literally no reason for me to be as happy and content as I am, but here we are. My physical health issues are improving!


With Ehlers danlos syndrome and POTS, I have to consume absurd amounts of electrolytes, so honestly that first month to 6 weeks of carnivore was brutal physically as my body adjusted, but the mental improvements were enough for me to push through it, and I’m starting to feel pretty amazing physically too, to the point where I am back into weightlifting after a long break because I just couldn’t. Not quite ready to get off the meds for POTS yet, but I think that will come with time. 


Did I mention I’ve also lost 20 lbs? In 2 months? 


I honestly feel incredible!

“I have been overweight for as long as I can remember, as a kid I grew an attachment to eating my feelings which carried all the way into my adult life. What is your favorite holiday dessert?

Is it pecan pie? Is it cheesecake?

Those are my 2 favorite holiday desserts so I married the two to create the best keto Pecan Pie Cheesecake!

HOW TO MAKE KETO PECAN PIE CHEESECAKE

If you haven’t noticed, I do not allow advertising on my site.

I just didn’t agree with some of the products that were advertised. They were keto products, but they were unhealthy and I would never personally eat most of the products. It was hard to say no to blog advertisements; they pay thousands of dollars a month, but I just felt uncomfortable about having the products I didn’t recommend on my website.

Instead, I have created a shopping list where you can find all the healthy ingredients that are difficult to find in the grocery store (and if you do find them, they are often very expensive).

I have done a lot of detective work and found the lowest prices on for all of the products I use and love. Everything from food, pantry items, kitchen tools, supplements, and skin products are on my list.

I rarely waste time in the grocery store because I find everything online for a way better price!

Intermittent hyperthermia has been shown to reduce insulin resistance in obese mice. The results were a 31% decrease in insulin levels and a reduction in blood glucose levels, both of which can contribute to an increase in fat loss as well as muscle growth. It has also been shown that a 30-minute intermittent hyperthermic treatment can cause a significant expression of something called ‘heat shock proteins’ in muscle, which is correlated with 30% more muscle regrowth after a week of immobilization.

Even if you don’t exercise yet you take saunas, you can still maintain muscle!

2. Helps Immune System 

Studies show that after saunas, there is an increased number of white blood cells, lymphocyte, and basophil counts. These studies are proving that saunas help to stimulate the immune system. Additional research also found that saunas are able to significantly reduce the incidences of colds and flu. Taking regular saunas lead to a 30% less chance of getting a cold or influenza.

There is another interesting study (source) showing that cold exposure or cold therapy, followed by heat like a sauna can increase our “natural killer cells”. Natural killer cells are cells that consume pieces of virus and also release cytokines which aide in the immune response. It has been shown that people who end up needing intensive care due to COVID-19 are very low in these natural killer cells (NK).

There is significant increase with heat, then cold and then exercise (incrementally more natural killer cells with each done after each other). So cold therapy with sauna and exercise is a great combo for building immune health.

3. Skin Health

Saunas cause deep sweating and help remove bacteria out of the epidermal layer of the skin. This increases the rate at which dead skin cells are replaced can be increased. This deep sweating helps the movement of fluid to the skin which helps deliver mineral-rich nutrients and also helps to fill spaces around the cells, increasing firmness and reducing the appearance of wrinkles.  It also causes increased capillary circulation, which can give the skin a softer-looking, younger appearance.

4. Increases Growth Hormone

Growth hormone is essential for repair and recovery of muscles, and studies show that two 20-minute sauna sessions elevated growth hormone levels two-fold over baseline. If you increase the temperature even more and do two 15-minute sauna sessions there is a five-fold increase in growth hormone. And two one-hour sauna sessions for 7 days has been shown to increase growth hormone 16-fold!

5. Detoxes Chemicals and Heavy Metals

This was the main reason Craig wanted the sauna. He had very high heavy metal levels and mold issues. The skin is a major detox organ, but most people do not sweat enough to get the chemicals out. Saunas help purify the body by eliminating unwanted chemicals such as heavy metals, PCB’s, toxins that are stored in fat cells, which release these unwanted chemicals when exposed to heat.

HOW TO MAKE CARNIVORE GRAVY

To make my carnivore gravy, I used Further Food gelatin!

My recipe is a carnivore version of the very popular egg gravy recipe. Egg gravy uses flour, milk, and eggs but instead of flour, I used Further Food gelatin as a binder!

I love using gelatin in recipes! Gelatin helps create collagen which is a great carnivore pre-biotic for the gut!

Remove bacon from the skillet while leaving the drippings. Set the bacon onto a plate lined with a paper towel. Crumble the bacon and set aside.Add 1 teaspoon gelatin to the bacon grease. “Hi Maria! I have to share how you helped saved James! 


James journey with Crohn’s began in May of 2001. He was put on all the usual suspects of medications. He would see little if any improvement and would spiral into horrible flare-ups. That’s when we were introduced to steroids. That seemed to be a constant from his gastro doctor. 


Over the next year, he was hospitalized on and off for flare-ups and attempts with new medications, even a chemo pill. These were temporary improvements, basically a band-aid on a serious illness. 


One day, I rushed him to the ER, and he had a fever of 105.2 and was having seizures. They put him in an ice bath immediately and heavy meds. His WBC was  33,000, and a normal WBC 1 4,500 to 11,000. He was admitted, and each day, his WBC 35,000 to 60, 000. 


November 2002, still in the hospital, his WBC reached catastrophic levels. They found nodules inside the small intestines. It was sent to the MAYO clinic, and 5 days later, we had a devastating diagnosis… non Hodgkin’s lymphoma of the small intestines. Worse yet, he was too sick to receive chemo. 


Finally, in ICU, he was removed from life support for the 13th time. I was about to leave for a desperate shower, and he coded. There was a blood clot in his lung. 22 minutes after coming off life support, he went right back on it. Now, he was in a 24-hour fight for life. He pulled through. More surgeries, more blood, and now he developed a fungal infection. Halt chemo, treat fungus, very slow moving to heal, back on chemo. After 2 weeks back off life support. 


February 2003, we are still in ICU. The night before his release, he developed crippling pain in the bowel. His nurse refused to call the on call doctor. Something was wrong. 5am, they stormed his room and rushed him to surgery. His WBC was 175,000, and his vital organs were shutting down.


Now, as we are in March, he’s stable and back in PT. I requested a dietitian to speak with us. It seemed natural to me since this involved the bowel. They were shocked! I thought diet could have anything to do with his stomach. Weird, but ok. I left and went to the medical library that I had access to from school. I spent weeks learning about Keto and the positive outcomes of many illnesses, especially stomach issues. 


We were released and started keto immediately! We were told it would be 2 years before he could walk again, work, drive, bath himself, and I told him… nope. We wasted enough time. We worked around the clock, and as keto was doing it’s magic he was gaining weight, 4800 to 6200 calories a day.



He was 84 pounds at his lowest and 91 pounds at release. By June 2003, he was walking unassisted, and by August, he was skateboarding again. 


James was still in chemo, and within weeks of starting Keto, he went into full remission! 


He came off of ALL his medications, and his bowel was not only showing no signs of inflammation… there were no visible signs of Chron’s. 


By 2004, he was back to normal. We were both healthy from Keto and accepted that because of the Chemo, we’d never have kids. I guess there were other plans, and as I write this, I’m carrying our 3rd child naturally. I give a lot of credit to Keto and endless prayers.” -Liz
