Chicken with Mushrooms and Artichokes
This is the second of two chicken-centered pantry meals I made last week after discovering a slew of chicken legs that were close to their expiration date. Any chicken pieces can be substituted—I actually love thighs the best—and you can throw in whatever other ingredients sound good.

I have a foodblogging friend, Stephanie O'Dea, who's pretty much a Crockpot Wonder Woman. A while back, Stephanie started a website called Crockpot 365, where she chronicled an entire year of cooking in her much beloved Crockpot.

Chicken with Tomatoes and Garlic
This is a pantry meal! Well, sorta. Yesterday afternoon, after surveying the state of my refrigerator, I realized I had a slew of chicken legs that were going to be skating dangerously close to expiring if I didn't act fast. After giving them a sniff and deeming them fit for human consumption, I decided to whip up two separate dishes using the chicken legs…and whatever I could find in my pantry and fridge.
