Rosemary Skewers

 

We just had a baby shower on the ranch for my beloved old babysitter Brandi, who had the audacity to move away, go to college, and get married rather than come over and play with my kids the rest of her life. The nerve of some people.


Brandi's an important person to us. Six years ago, she drove me halfway to the hospital when I was in premature labor with my fourth baby. (It was a relay, and someone picked me up on the other side.) On her way home, she hit a deer.

Lemon and Grape Granita

TPW_1943It has only just begun to heat up around these parts, and on a 95-plus degree Oklahoma day there's just not much that tastes better than an icy fruity granita.


Okay, so a Popsicle tastes great, too.

Malted Milk Chocolate Chip Cookies

TPW_1879Is there anything better in the world than a chocolate malt? Notice I didn't say chocolate shake, though goodness knows I wouldn't turn one down if someone offered it to me.


I'm talking about chocolate malts—milkshakes with the addition of malted milk powder. When I was a little girl, I was obsessed with malts. I Scream

ice cream collage custardI have a problem. I'm a little bit in love with the recipe collages my friend Erika makes over on Tasty Kitchen. She picks a theme, then scours the Tasty Kitchen recipe vault for the stand-out recipes that fit into that theme.


 

But then she takes it one step further and splits all the recipes into specific categories. This week, to mark the (effective) beginning of summer, the theme was Ice Cream. So she compiled all the custard-based recipes into one collage (above.)

Can't Cook Without 'Em

 

I asked this on my Facebook page yesterday, and it bears repeating: Has this week been particularly crazy, hectic, bizarre, frenzied, and nuts…or is it just me? I don't know what's going on in the universe: some weird combination of school ending for the summer, the short Memorial Day week, the moon being in the fourth house instead of the seventh where it belongs, and the fact that I've been forced against my will to get up at 4:00 every morning this week…I don't know.

Blackberries with Sweet Cream

TPW_1515This recipe is based on a scrumptious recipe my mother-in-law and I shared at a Ruth's Chris steakhouse in Denver shortly before Marlboro Man and I were married. It's a berry/sweet cream dish that (I believe) is still on their menu today, and at the time we shared the dessert, she and I both agreed that it was probably the most delicious fruit dessert either of us had ever eaten. My father-in-law, who'd ordered his own, fell completely in love.

Tequila-Lime Chicken with all the Fixins

TPW_1186I made homemade flour tortillas over the weekend, and they wound up forming the basis of this delicious meal: a wonderfully flavorful marinated chicken breast grilled to perfection and topped with creamy Jack cheese and served with refried black beans, pico de gallo, and whatever else I could get my hands on.


Though it looks like a complicated plate of food, it really wasn't at all. Most everything can be done in pieces or stages here and there, and the throwing-it-all-together is a cinch.
