Grilled Chicken with Lemon Basil Pasta

TPW_6718I have another lemon pasta recipe on this site, and it's always been a summertime favorite of mine. If you haven't traveled to the land of mixing lemon and pasta, it can seem a little foreign at first. But the fact is, it's a dreamy and delicious pairing that knocks my socks off every time.


 

I added some grilled chicken to the top of this pasta dish at the end…but the grilled chicken is really secondary. It's the pasta here—a creamy concoction of lemon, cream, and basil—that deserves top...

Muffins That Taste Like Doughnuts

TPW_6522I was about 3/4 of the way through this Tasty Kitchen recipe, submitted by TK member lemanda, when I realized it was similar to an old recipe I picked up in ninth grade French class. The recipe I learned was called French Breakfast Puffs (I love them so much, I included them in my cookbook) but lemanda's version is called, appropriately enough, "Muffins That Taste Like Doughnuts." And they really do resemble cake doughnuts coated in cinnamon and sugar.

Make-Ahead Muffin Melts

TPW_6404This is another recipe from my mother's recipe binder—the one she inadvertently left here one beautiful day back in 2008. Okay, so it wasn't all that beautiful for her, considering I didn't give it back for weeks and weeks. And okay, it was months.


Boy, did I ever make some wicked photocopies.


This was one of the recipes I was drawn to. It's a make-ahead concoction meant to be spread on English muffins and broiled. And it's just…it's just…

16-Minute Meal #4: Mexican "Flatbread" Pizza

TPW_5530This is the final in this week's series of throw-together, quickie meals that boys and husbands will eat. Last night we had rain and craziness on the ranch, and I slopped this all together in no time. The "flatbread" crust is actually made from canned biscuits (food police, take me to jail), and I wound up using some leftover taco meat from a recipe earlier this week.


To say my cooking this week has been low-effort has been an understatement of epic proportions.

A Break from the Boy Food

 

I've been sharing my week of boy-friendly meals with you this week, and it's been a lot of fun. My girls have been gone since Sunday, so it's just been Marlboro Man, our two boys, and me. And Charlie. And George. I'm outnumbered by the male gender!

16-Minute Meal #3: Mini Meatball Sandwiches

TPW_5370Okay, fine. Taken from start to finish, this took a little longer than sixteen minutes. But it did take sixteen minutes to get it to the point where it simmers in the skillet…so it sorta kinda maybe possibly counts. What can I say? I like consistency! I couldn't bear the thought of breaking the run of "16-Minute" titles this week.


Boy oh boy, was this one good. Scrumptious moist meatballs simmered in marinara sauce then spooned into a standard dinner roll and surrounded by melted cheese...
