Vegan Mixed Berry Salad with Spinach and Sesame Ginger Dressing
This salad is so light and the fresh berries make a great combination with the sweet and savory ginger dressing.
Yield: 2 salads
Ingredients:
3 cups fresh spinach leaves
1 cup mixed berries (blueberries, raspberries, and strawberries)
1/2 cup raw walnuts
1 tbsp. sesame seeds

2 tbsp. olive oil
1 tbsp. pickled ginger and brine

Baked Halibut for Two with Teriyaki, Ginger, and Lemon
I love baking fish, it’s a really simple way to make a healthy meal in less than 30 minutes. Halibut fillets, sweetened with a nice teriyaki marinade, freshly grated ginger, and a touch of lemon. I love to have this when I want to make fish tacos, on top of a salad, or as is with veggies and quinoa.
Chef tip: Keep fresh ginger in the freezer, then just grate/use as needed.

Salami Pasta Salad
This pasta salad is light, full of greens,and has just a hint of mustard. It’s the perfect side dish for cookouts with family and friends. Give this one a try and let’s get started!
