Roasted Potatoes with Paprika

I love roasting potatoes, and veggies in the oven. It’s a great way to meal prep a little extra to have through the week. It takes minimal prep time and the oven does all the work! I like to leave the skins on, you can also peel the potatoes if you prefer. These are great as is, or you can whip these into mashed potatoes also!

Vegan Baked Enchilada Casserole

This lovely casserole is so simple and less than ten ingredients, its simple and so delicious. Layers of corn tortillas, refried beans, enchilada sauce, diced tomatoes, corn, and fresh cilantro will make smiles all around the table.

In this recipe I made it vegan, feel free to make this your own and add extras like cheese, or shredded chicken, any adaptation you like. It’s a great base recipe, so get creative and make it your own!

Baked Sweet Potatoes with Rosemary

This lovely side dish is simple and with just a few spices, it makes the sweet potato shine all on its own. This dish is minimal prep and with less than five ingredients, its a great dish for two.

Yield: 2 servings

1 tsp. dill

1 tsp. celery seed

1 tsp. crushed rosemary

Breakfast Cereal Blend

Making your own cereal mix is cheaper and healthier because its less processed. I buy a few bags of my favorites and mix them all together.  It lasts for months and you can top with fresh fruits, raisins, or cinnamon and make it your own.  When I have this for breakfast,  I like to add sliced bananas on top with yellow raisins and lots of cinnamon. Serve with your favorite milks, flax, almond, or coconut, and enjoy.

Slow Cooker Red Enchilada Chili with Hominy and Quinoa

Ever since I got back from my Santa Fe road trip I’ve been missing those flavors! , I’ve been on a Mexican food kick, and this is so easy and delicious. It’s budget friendly, and perfect when you’re short on time in the morning. Carrot Salad with Apples, Cherries, and Cinnamon

This carrot salad is wonderfully sweet with the cherries, apples, and a touch of cinnamon. I love to make this dish around the holidays. The textures play well with each other and its become a new favorite to make in only minutes!

*To save time you can buy pre-grated carrots, though its more budget friendly if you peel and grate them yourself.

Chicken Stew with Navy Beans, Green Beans, and Tomatoes

This is a great family meal and all done in one pot. Stewed tomatoes make the base of this hearty stew with green beans, navy beans, capers, sun-dried tomatoes, and olives making it healthy too.

Leave out the chicken for a great vegetarian and vegan option. Serve as is with some good bread, over rice, grains, or pasta.

Cumin Spiced Guacamole with Radishes

I love avocados, and making this guacamole is so quick and easy. Just a few ingredients and you’re on your way for flavor town.  I love the crunch you get from the raw radishes, and the cumin is such a great spice in this recipe.
