Remember last year’s Thanksgiving?  That’s a bit of a trick question – 2020 was a pandemic blur.  What I do remember about last year’s holiday was our smaller scale gathering, big gratitude, AND the Turkey Pot Pie.

Today’s Turkey Pot Pie recipe is a adaptation from last year’s most popular recipe from Joy the Baker Magazine.  Y’all LOVED this pot pie because it’s essentially an entire Thanksgiving feast in a single pot pie.

Hi, JTB friends! It’s Toby again with a bit of an SOS situation. Anybody have ideas for a good Thanksgiving side to serve for my dad who has Celiac? He’s been a lifelong potato-hater, so he’s always passed on our beloved sweet potato casserole. Now, he’s suddenly decided he doesn’t like rice, which I guess is something you can get away with when you’re 84 years old.

It’s about this time of year, every year, that I check in to see if you have everything you need for the upcoming holiday.  Mostly I’m checking to see if you have Dad’s Sweet Potato Pie ready to go. This year I’m checking in because I have something you might need, namely, this easy pumpkin pie recipe. We’re talking press-in crust, no-fuss filling, and incredibly impressive toasted meringue topping.

I’ll tell you now that the proportions here are bonkers… and exactly to my liking.

Let It Be Sunday, 346!

Let It Be Sunday, 346!

Friends, hello! We made it to Sunday!

A week ago today I was slow running my butt down the road and back in Houston.  I finally ran that half marathon I’ve been working towards for months. IT WAS SO MUCH FUN! For years I had settled on the story that running that far wasn’t for me.  I feel really proud for proving myself wrong.

The night before the race (we’re talking like 7:30pm) I wanted to go for a run to shake out my nerves.
