Let It Be Sunday, 354!
Hello friends! Happy Sunday and a proper HAPPY NEW YEAR to you!
If you missed me last Sunday, I was pictured above – camping in the sand dunes of Padre Island with Will. We turned the back of Will’s Jeep into a kitchen because the wind was too intense to cook outside and I can confirm that he’s the sweetest man in the world for being the first person up in the cold to make us coffee in the morning.

Easy 4-Ingredient Peanut Butter Cookies
Maybe you thought I gave all my cookie magic away in holiday cookie tins tied with glittery bows last month, but NOPE! There is literally ALWAYS cookie dough balls in my freezer so every season is cookie season. These sweet and salty peanut butter cookies are some of best and easiest. They come together with just four ingredients and happen to be secretly gluten free – making them the best peanut butter cookie recipe I have to offer.

Let It Be Sunday, 353!
Friends, hello! Welcome to another morning together!
I’m admittedly a little tardy with this last Sunday post of the year because I opted for more family time than computer time this week. Thank you for the grace. I wish the same for you, but glad you’re here (maybe with a hot cup of tea – I always want a bevvie for you) and a moment to yourself.
Here is where I sit still and marvel at another fine year we’ve had together here.

Small Batch Overnight Mocha Cinnamon Rolls
I’d say it’s been a very steady year of recipes this 2021. We’ve baked birthday cakes. We’ve stuffed cookies with cheesecake (that one was truly ridiculous I’m sorry). We’ve celebrated some of my aunt Dede’s best recipes, and now here we are – celebrating the end of this holiday baking season with a small batch overnight cinnamon rolls.
Consider this my Christmas morning invitation.

PEANUT BUTTER.
You’re searching for it here on Joy the Baker and I love you for it – it’s no wonder we’re friends.
You might recognize these Peanut Butter Cup Cookies as the peanut butter cookies that are often dotted with Hershey’s kisses. The invitation is to level up and peanut butter cup.

Gingerbread Ricciarelli (Chewy Italian Almond Flour Cookies)
If you’ve flipped through the latest issue of Joy the Baker Magazine, you might have noticed that I went on an Italian Christmas cookie bender. I just think there’s so much possibility in an Italian pink bakery box tied with baker’s twine and I wanted to create those possibilities for you. I couldn’t possibly pick a favorite cookie from that printed cookie section but the Red Velvet Ricciarelli Cookies are the almond flour cookies towards the top of the list.

Let It Be Sunday, 352!
Friends, hello! Happy Sunday from me to you! Just a few things before we get to our Sunday links from Kim Baldwin (they’re fantastic, but first business). Our last virtual class of the year is coming right up on Christmas Eve morning. We’re making overnight cinnamon rolls so basically, I’m trying to make your Christmas morning dreams come true. No – not a bow on a car in the driveway – but warm cinnamon rolls.

The Most Delicious Homemade Doughnuts
Friends, hello! I’m here to invite you to your next kitchen superpower: HOW TO MAKE HOMEMADE DOUGHNUTS. Once you know how to make yeasted dough and fry it up, well… there’s no going back. You’ve gone and done it. You’re everyone’s favorite person come weekend brunch. In my early baking days I was obsessed with learning how to make doughnuts, likely inspired by my family’s Saturday night trips to the 24 hour doughnut shop.

Cranberry Orange Loaf Cake
I’m running through the Wilson family’s greatest holiday baking hits in my kitchen, counting down the days until I spend Christmas with my family in Los Angeles. Wait… doesn’t Wilson Family’s Greatest Holiday Baking Hits sound like a great idea for a television show? Oh the butter. Oh the antics. Now, while dad is chief pie baker and cookie connoisseur, Mom Wilson has some tried and true holiday recipe GEMS I tell ya.

Let It Be Sunday, 351!
Hello friends and happy Sunday! I’ve been baking nearly nonstop this week and the true salvation has been this new pair of (rather ugly) kitchen slippers. You know those cushy kitchen mats some of us have in long-stand areas of our kitchen? These shoes are like attaching those mats to your feet. I have no regrets and hundreds of sugar cookies.
This week our friend Toby is here with out links.
