What’s Cooking Wednesday – Broccoli Cheddar Soup

I found a bag of broccoli in the freezer that was mostly stems, and decided it would work best as soup. This is an easy, somewhat “light” adaptation of several recipes I found on line. I used milk instead of heavy cream, and didn’t add flour or any other thickening agents. Of course, you can use fresh broccoli. There are lots of recipes on line for that.

Spaghetti Squash Boats

Spaghetti Squash BoatsIngredients:
1 medium spaghetti squash (about 3 lbs)
1 T olive oil
1 small onion, diced
1 lb Crimini mushrooms, sliced
1 can (14 oz) diced tomatoes
c grated Parmesan cheese
c basil chiffonade (thin strips)
S&P to taste
Optional: Italian seasoning mix

Instructions:
Cook spaghetti squash. The easiest way is to stab it with a sharp knife (good way to get rid of some aggression) and cook in the microwave until soft enough to cut in half, about 10-15 minutes. Then, cut it...

After “The End” – Taking a Bit of a Break

Over the weekend, I finished the first draft of my second Mapleton Mystery novella, Deadly Engagement. I decided I’d earned a little time off. Watch for more of my free book marketing posts next week.

And, it’s my daughters’ birthday (yes, the apostrophe is in the right place.) Feels like a good enough reason to take a break to me.

I saw upticks in both the book’s ranking as well as Author rank at Amazon. This recipe came from a grocery store flyer. It’s a perfect dish now that the weather is turning cooler.

Sausage and Apple Stuffed Acorn Squash

Stuffed Acorn Squash
Ingredients:
3 acorn squash
Olive oil
S&P
1 t dried Italian seasoning
t cayenne pepper (to taste)

I’d applied, unsuccessfully, for a BookBub feature, but that was turned down. (They reject about 85% of all submissions.) I opted to use the money I’d been willing to spend on 4 other marketing newsletters that feature free books...

 Hubster likes cucumber salads, and this was one he tried that wasn’t sour cream and dill based. He says, “all ingredients are to taste” so have fun experimenting.

Zesty Cucumber Salad

Zesty Cucumber SaladIngredients:
1 large cucumber, peeled and sliced thin
Olive oil
Lemon juice
S&P
Chili powder

Instructions:
Whisk together the olive oil and lemon juice. I like things tart, so I’d go with 2 parts oil to 1 part juice.
Season to taste with S&P
Add a dash of chili powder, again to taste.
