What’s Cooking Wednesday – Chicken Tetrazzini Soup

Here’s another soup recipe from the King Sooper’s/City Market flyer. This one is for Chicken Tetrazzini  Soup.

Ingredients:
2 T butter
1 onion, minced
1 lb mushrooms, sliced
2 cloves garlic, minced
8 c chicken broth
8 oz. spaghetti, broken in half
2 c chopped, cooked chicken
1 c frozen peas, thawed
c half and half
t lemon zest
c grated Parmesan cheese
c chopped fresh parsley
S&P to taste

What’s Cooking Wednesday – Sloppy Joe Soup

We found this recipe for Sloppy Joe Soup in an advertising booklet from City Market. It’s a riff on Sloppy Joes, but it’s soup, and since we’ve been having some cooler weather, soup is good.

Sloppy Joe Soup

Sloppy Joe SoupIngredients:
1 T vegetable oil
2 lbs lean ground beef
1 onion, minced
c minced bell pepper
2 cloves garlic, minced
t dried thyme
t cayenne pepper
c ketchup
2 c tomato sauce
2 c water
4 c beef stock
1 T Worcestershire sauce
1 T apple cider vinegar
1 T brown sugar

What’s Cooking Wednesday – Mom’s Almond Torte

I ran this recipe back in 2011, on my old blog. I thought it was worth revisiting. Although Mom used strawberries, you can use the fruit of your choice.

Glazed Almond Torte (with Strawberries)

Mom's Almond Torte with Strawberriesamaretti cookiesIngredients:
1 c blanched almonds, (5 oz)
c sugar
4 eggs
cup macaroon cookie crumbs (Mom uses Amaretti cookies, but plain macaroon cookies are fine – The crisp ones, not the chewy kind. Grind them in a food processor, then measure.)
cup butter, softened, (half a stick)
1 t baking powder
