Chipotle Chicken Roll-Ups
Spread flour tortillas with thin layer of chipotle mayonnaise. Sprinkle on shredded Monterey jack, and Cheddar cheese. Add shredded roast chicken, thinly sliced tomato, red onion, avocado, and cilantro. Roll up, wrap in plastic wrap, and refrigerate until ready to eat. Q & A
What was your favorite part about writing WANTED: TEXAS DADDY?
I loved having a pregnant heroine, and doting daddy-to-be.
What was challenging about writing this book?
I covered the entire pregnancy, from the first mention of having a child together, to bringing baby home from the hospital. A lot of ground to cover in 55,000 words!
How would you describe the relationship between Sage and Nick?
Committed. They started out as great friends, became lovers and then finally husband and wife.
How did you come up with their names? Do they mean anything specific?
Nick is a guy’s guy, so I wanted him to have a name that was both masculine and accessible. Sage is a popular girl’s name in the southwest—probably because the plant is both hardy and evergreen and beautifully blooming. Sage really blossoms in response to Nick’s love and attention.
When did you first realize that you wanted to be writer?
I started dreaming up stories when I was eleven-adding details to the story was how I put myself to sleep most nights. I got serious about putting words to page when my children were toddlers.
If you didn’t write, what would you do for work?
Teach.
What else do you love to do besides writing?
Spend time with family. Garden, read, listen to music, watch TV and movies to feed my voracious appetite for ‘story’.
What is the biggest misconception about your genre?
That the books are silly, pointless, or easily created. A great love story stays with the reader long after the last page is read. Creating a memorable story is a lot of work!
What future projects are you working on?
I just started a new six book series about the heroes and heroines of fictional Laramie County.
10)Do you have any advice for new writers?
Finish the book. Taking the story from beginning all the way to the end teaches a writer more about craft, than anything else. Then, while trying to sell the first book, start another, and finish that, too!
CATHY GILLEN THACKER is a full-time wife, mother and author who began writing stories during “nap time” when her children were toddlers. She wrote seven books as she taught herself how to be an author, and her eighth attempt was published in 1982. Since then she has written and published more than 70 novels.

Why sports or specifically NFL?
Good question. Athletes who excel at their sport have always fascinated me. My eight siblings and I grew up playing sports…not that we were very good AT ALL. Let me put it another way, we weren’t allowed to not play sports. If we didn’t pick a sport, then our parents would’ve picked one for us. In our home, watching TV was not allowed on school nights, and we didn’t have cell phones or even phones (landlines) in our rooms. We were expected to either be studying or playing a sport (preferably out of the house and my mother’s hair.) Since most of us were vertically challenged, basketball was out. (Instead we are fanatical fans for UNC basketball.) My brothers played some football, but almost all of us swam, played tennis, or ran track. In school, I played field hockey, tennis and golf. Again, not very well, but I did enjoy the competition. We grew up with an appreciation for what it took to be the best at your sport. As for the NFL, my son is my inspiration. He LOVES all sports and competes with way more success than I ever did. He’s a huge football fan and can spew stats and make predictions that are scarily accurate. He really should be a color commentator, because he’s not only entertaining, but tells it like it is. So when I mentioned I was writing about an ex-quarterback turn NFL coach, he was all over my technical questions, pointing me to different players as examples. I felt fairly confident tackling football, knowing he was on my team.
What sports do you enjoy watching or playing?

Darling Vox Box Review
I am part of the Influenster program and this box had some great products that I have not tried before today. O got them all free for product testing. All the opinions below are my own. As you can see from the below picture there were several things included.
I do love the free country crock coupon and will be getting it later this week. That is the only butter spread we use.
The Live Clean the boys love. My youngest wanted to take another bath as the smell was nice and no tears. It is gentle and the lotion makes his skin feel so soft.
The Eva Nye I was looking forward to as my hair is on the dull side and have been looking for treatments. I did try this today and my hair feels a bit more softer as it is supposed to hydrate your hair. I think it works well.
This is the first day trying the Energy Gummies by Nature’s Bounty. You need to take two gummies with a meal. Another product I am looking forward to trying and seeing how it goes.
What I love most about this product by Duncan Hines? All the different flavors they have to choose from. Confetti will be the next to try but for us chocolate lovers this is the best by far and for one person is great.

One of my favorite comfort foods that would go well with this book is shrimp and grits. Here’s an excellent recipe:
Bring water to a boil. Add salt and pepper. Add grits and cook until water is absorbed, about 20 to 25 minutes. Remove from heat and stir in butter and cheese.
Rinse shrimp and pat dry. Fry the bacon in a large skillet until browned; drain well. In grease, add shrimp. Cook until shrimp turn pink. Add lemon juice, chopped bacon, parsley, scallions and garlic. Sauté for 3 minutes.
Spoon grits into a serving bowl. Add shrimp mixture and mix well. Serve immediately.

What is your favorite part about writing for Always My Baby?
The best part of having the opportunity to write Always My Baby was having the ability to showcase a real friendship between China and Alexander. Even when things start to change between them, and their lives start taking them in different directions, safe guarding their friendship remains their priority.
What are the traits you admire most in China and Alexander?
I admire China’s ability to wrap the vulnerability she thinks her love for Alexander brings out, in her confidence and independence.
How long does it typically take for you to write a book?
It typically takes me two months to create the story and two additional months to make final edits.
What else do you love to do besides writing?
Other than writing, I love spending time with family and friends enjoying good food and music.
When did you first realize that you wanted to be writer?
I’ve always written in some form or another throughout my professional career. Only in the last five years have I been able to bring my desire to write romance to fruition.
What is your favorite thing about writing contemporary romance?
I enjoy writing contemporary romance because all the places I can take the story. I love the creative freedom it gives me.
What are a few of your favorite books? Do you have any recommendations?
I have an eclectic taste when it comes to my choice in books. I’m a big fan of romance and mystery. As far as recommendations goes, for all things romance, you can’t go wrong with any of the Harlequin novels; there’s something for everyone. When it comes to mystery, I’m a big fan of Janet Evanovich Stephanie Plum series.
What book are you currently reading right now?
I don’t read for pleasure while I’m working on my own book. However the book I finished just before I started my current project was Sister Betty says I Do by Christian Comedienne Pat G’Orge-Walker.
What future projects are you working on?
I’m currently working on the third installment in my Kingsley of Texas series.
10)Do you have any advice for new writers?
The one piece of advice I’d give new writers is to write. Just write. Don’t worry about anything other than telling your story.

About The Author
Lesley retired from her life as a professor of psychology and reclaimed her country roots by moving to a small cottage in the Butternut River Valley in Upstate New York.
