Today as I walked into my place of work after having been to our local ymca pool for some exercise my boss encouraged me that I should post a picture of myself now since the last picture was back In December at Christmas.

What’s not to love about a crispy sticky Asian wing?

Before allulose came along, I was never able to create a sticky sauce for chicken wings.

If you haven’t noticed, I do not allow advertising on my site.

Many of you know I worked at a coffee shop since I was 15 years old. At this cute coffee shop, I would make the best lemon poppy seed muffins with delicious lemon curd dolloped on top! Before school, I would go to the coffee shop to make the scones and the muffins and then after school, I would go back to work. At the end of the day, I got to bring home the cinnamon rolls, scones and lemon poppy seed muffins that didn’t sell! So guess what??? I would make lemon poppy seed muffins to make sure I had some to go home with! No wonder why I was so unhealthy and overweight! Once I was diagnosed with PCOS, I decided to create healthy keto recipes of my favorite things like this protein sparing lemon poppy seed angel food cake!

My recipe for protein sparing angel food cake is only 42 calories and 1 gram total carb per slice compared to the whopping 700 calories and 97 grams of carbohydrates that my lemon poppy seed muffin had!

Here is my before photo when I was eating too many lemon poppy seed muffins and this is my after photo. Protein sparing modified fasting helped me get to my goal weight.

I love deviled eggs! Who doesn’t?

Deviled eggs are always the first thing to disappear when I bring them to parties!

When I was on the carnivore tv show in Costa Rica, I was also the chef. I wanted to make delicious food, not just steak for the carnivores. So I made the best deviled eggs and they were completely carnivore!

HOW TO MAKE CARNIVORE DEVILED EGGS

To make my carnivore deviled eggs you can use bacon mayo or my butter mayo recipe! Either works great and tastes delicious!

Did you ever wonder why it is easier to gain weight compared to keeping it off?

The key to this is in the fat cells where a powerful hormone is produced called leptin. Leptin signals the brain to regulate the metabolism in order to store or to burn fat.

Leptin is a hormone produced by fat cells that helps regulate appetite and energy expenditure. When leptin levels are high, it signals to the brain that the body has enough energy and can stop eating. However, when the body becomes resistant to leptin, this signaling system breaks down, leading to increased appetite and decreased energy expenditure. In this blog post, we will discuss some tips on improving leptin sensitivity.

WEIGHT LOSS STRUGGLES

85% of people who lost weight, end up regaining weight because the “metabolic thermostat” of the body, leptin, is reset upward automatically. When people lose weight, leptin production decreases, which causes people to regain the lost weight. This protein hormone is derived from fat cells so when you lose fat, leptin levels drop. When you gain fat, leptin levels rise. Once leptin is secreted by your fat cells, it travels to the hypothalamus; which controls eating behavior. Once it’s there, leptin activates anorectic nerve cells, which decreases your appetite. At the same time, leptin stops cells from stimulating your appetite. To put it simply, when leptin levels drop, you get hungry. When they go up, you feel full. Leptin communicates directly to your brain, telling the brain how much fat is in storage. It controls appetite, energy, and metabolic rate. Leptin problems are the primary reason for food cravings, overeating, slow metabolism, food obsession, and heart disease.

You’d think that having extra fat stores create more leptin, but that is where an interesting mystery comes into play. 98% of those who are significantly overweight are leptin-resistant. Most defects in leptin signaling may lead to obesity, overeating and less energy expenditure. Leptin-resistance is similar to insulin-resistance in that it occurs after being overexposed to high levels of the hormone. At this point, the body no longer responds to the hormone. Much like high blood sugar levels result in surges in insulin, sugar metabolized in fat cells causes the fat to release surges in leptin. Over time, leptin-resistance may develop.

Leptin Resistance and High Fat Keto/Carnivore

This is also why so many people don’t lose weight on high fat keto or carnivore. Or they lose a little weight then stall. If you are overweight or obese, you are likely leptin resistant so don’t get the “I’m full” signal like you should. So you overeat and overeating on fat means less of your own body fat burned for fuel. You have to dial the dietary fat down so you lose more body fat. Losing body fat will then help reverse the leptin resistance and help you to feel full quicker.

What is Leptin Resistance?

Leptin is released by fat cells and travels to the brain to signal that the body has enough energy stores and that it can stop eating. However, when the body becomes resistant to leptin, this signaling system breaks down, and the brain no longer receives the message that the body has enough energy. This leads to increased appetite and decreased energy expenditure, which can contribute to weight gain and obesity.

What Causes Leptin Resistance?

There are several factors that can contribute to leptin resistance. One of the main causes is obesity. When the body has excess fat, it produces more leptin. Over time, the body becomes resistant to leptin, and the signaling system breaks down. Other factors that can contribute to leptin resistance include a high-fat diet, inflammation, and genetics.

How to Eat to Reverse Leptin Resistance

The best way to reduce your chances of diabetes is to avoid surges in leptin; which is the leading cause of leptin-resistance. Eating the typical American diet, full of refined sugars and other processed foods, is a guaranteed way to cause undesired surges. Focusing your diet on simple, unprocessed real foods is the best way to prevent leptin-resistance.

One food to help with leptin is protein. Protein improves leptin sensitivity, which lowers calorie intake by helping you feel full faster. Increasing your protein to at least 30 grams for breakfast and at least another 60 throughout the day. Choose quality proteins like salmon, grass fed meat, and free-range eggs!

HOW TO IMPROVE LEPTIN SENSITIVITY

1. Reduce Calorie Intake

5. Reduce Stress

Chronic stress can also contribute to leptin resistance. Stress can lead to inflammation and disrupt hormone balance, both of which can contribute to leptin resistance. Finding ways to reduce stress, such as meditation, yoga, or spending time in nature, can improve leptin sensitivity.

In conclusion, improving leptin sensitivity is important for regulating appetite and energy expenditure. By reducing calorie intake, prioritizing protein intake, exercising regularly, getting enough sleep, and reducing stress, it is possible to improve leptin sensitivity and promote a healthy weight. The best thing you can do to reverse leptin resistance is to shrink your fat cells by losing body fat.

The BEST Homemade Deli Meat

So many of you are loving my easy Homemade Deli Meat recipe, I couldn’t wait to share my new and improved BEST homemade deli meat recipe with all of you!

HOW TO MAKE THE BEST DELI MEAT IN AN INSTANT POT

If you do not want to go through the trouble of boiling a pot of water for an hour, you can use an Instant Pot!

Spray 2 wide mouth canning jars with avocado oil spray and place the pureed chicken into them. Put on lids onto the jars. Pour a cup of water into the bottom on the Instant Pot. Place a trivet into the bottom and place the jars on the trivet. Press Manual and pressure cook for 20 minutes. Once finished, place the jars in the fridge for 8 hours before removing and slicing.

TIPS ON MAKING HOMEMADE DELI MEAT

As you can see in my photos of my easy homemade deli meat, I have a lot of holes. This is user error. I should have pressed the pureed chicken into the meat press as I added it. After I made a few batches, I found that when I packed it tightly, I didn’t get the holes.

This is why I also decided to add Further Food gelatin to the deli meat!

Further Food gelatin made the deli meat really tender and the texture was just like store bought deli meat but with a much fresher flavor.

I always stock my pantry with Further Food gelatin and collagen! They have so many different flavors of collagen that really make my recipes extra delicious! I know it looks crazy, but I seriously use Further Food in most of my recipes!
