how are you today?

I'm okay. Still don't have water or electricity in my kitchen. Though I called Wednesday for a Friday appointment (and told her everything I needed done), the scheduler didn't allow enough time for the plumber to install everything, so he comes back on Tuesday. Yes, Tuesday. NOT Monday. Because, you see, a person has to schedule two days ahead. Doesn't seem quite fair, does it, when it is their mistake? Oh, but she managed to get the bill out to me for all of it; that arrived yesterday. LOL!

No workmen coming today. Planning my menus for the coming weeks and my grocery list. Stocking the kitchen, where I can (still need back-splash tile installed.) I've gone Vegan and doing surprising well on this plant-based food. Very pleased with the results. Surprised at the number of Vegan cooking shows.

oh man, that sucks! our water tank rusted away and we had to live without water for a week..hell, I tell ya!

so, what does a vegan menu include?

Lots of vegetables, fruits, tofu, lentils, etc.

Nope. No meat. No fish. No chicken. No eggs. No dairy.

I'm surprised that I'm doing so well. When I want meat, I go to Whole Foods (a supermarket/health food store) and get Beyond Meat, a meat substitute that I SWEAR is chicken.

Plus, I'm still having some sweets. I got and am dying to try out some cookies. I did make Lemon Bars at my girl-friends house and they were WONDERFUL. Her boy-friend snarfed them down. (And so did I!) LOL!

They have a lemon tree growing in their back yard. I must admit, fresh lemons are better than bottled...but, man-oh-man! a home grown lemon is divine.

Meh. I'm okay. Did something to my back the other day and having to take Tylenol Arthritis formula to relieve it. Don't know what I did.

Had to get a new computer, too. Everything is conking out on me! LOL!

I get several kinds in the email, there's one type called "Astroslam". I hate it cuz it lives up to its name completely. Makes me chuckle too.

An example:
‘Accomplishment’ is the word for today — however, your accomplishments are pretty meaningless. Picking your fingernails isn’t earth-shattering stuff, mind you. Why not at least vacuum the floors and do the laundry. That would be a good start.

Oh, I see. However, just so you know, I did some laundry yesterday...though I have tons more because the dust from the remodel GETS EVERYWHERE! And vacuum the with the dust is an everyday event. **sigh** You know, when this is all over with, I'm not doing anything for a week.
