Lisa Kay (lisakayalicemaria) | 15159 comments I made myself hungry yesterday posting it, too. I've gone vegan, and I'm trying at least one new recipe a day. Yesterday I made noodles for lunch. Super easy recipe. LOVE fresh basil.

Avocado Pesto Pasta, can be found here.

message 656: by Sashana (new)

Sashana That's awesome, LK! Did you go vegan for a special reason? I've been thinking about going vegetarian but I don't think I have the will power to.

message 657: by Lisa Kay (last edited Nov 05, 2012 08:54PM) (new)

Lisa Kay (lisakayalicemaria) | 15159 comments Though I am a big animal lover, I went vegan strictly for health reasons. My BFFL (best friend for life) wanted to attempt it again (I had never tried before, but she has several times). My feet were terribly, terribly swollen - and painful. I thought, "What the hey, I'll give it a whirl." I was completely expecting to fail.

Instead, after TWO (count them!) days, my edema was completely gone in my right foot and almost gone in my left. (It would come and go in the left - a sign of Congestive Heart Failure, BTW... - over the next five weeks, then be gone for good.) I was completely, 100% sold. As I had to re-stock my kitchen with the remodel, I just restocked it vegan! I'm really, really loving it.

As an added bonus, I've lost 31 pounds, as of about a week and a half ago. (I get a little crazy around scales...so I only weigh once a week or less.)

Loving being able to bake cookies, cakes, and pies and lose weight. ☺

message 658: by Sashana (last edited Nov 05, 2012 09:06PM) (new)

Sashana That's great, LK! I'm glad it's working out well for you. It gives me hope that maybe I can try it and succeed as well. *Fingers crossed*

message 659: by Lisa Kay (new)

Lisa Kay (lisakayalicemaria) | 15159 comments The last week in August I eased into it by only eating meat once a day (for dinner). I'll be honest and say it was a rough week. I think it is hard to go "cold turkey" vegan. Mainly because it is a learning experience on so many levels. Getting your protein, eating when your hungry, learning new recipes, stocking your pantry, reading labels, etc. I eat about five to six times a day now. Smaller meals. I can't believe the suppression of appetite... because I'm satisfied.

Note: It wasn't until I went strictly vegan the my edema disappeared.

I hope it works for you, Sashana, if and when you try it.

Mary (merinwe) | 1043 comments Sure, Nancy! Are you new to reading challenges in general?

For the first month, you're going to do a spell-it-out challenge for your birthday month. Spell-it-outs are fun and flexible. What you do is match a book from your shelves to each letter, by either the title, the author (first or last name), or a character within the story. My birthday is in July, so Month 1 might look something like this for me:

J - John Green - The Fault in Our Stars
U - Veronica Rossi - Under the Never Sky
L - C.S. Lewis - Till We Have Faces
Y - Maria V. Snyder - Poison Study (Character: Yelena)

See how I matched to each letter of July? (J from John, U from Under, L from Lewis, Y from Yelena) That's how a spell-it-out works. Do you have any more questions?

message 689: by Lisa Kay (new)

Lisa Kay (lisakayalicemaria) | 15159 comments Phyllis, Lisarenee set it up that way so you would have options. People do a variety of things: either/or; both-take a month each to do; or both in one month. Your choice. ☺
