This is a repost from #1774 explaining why reading a book written by a trained, professional chef who has had a long career in not only restaurants but in the managing of them, would fit this task. In addition to providing a further inside-view of the professional kitchen as he did in ‘Kitchen Confidential’, Mr. Bourdain offers advice to those who want to enter cuisine arts. Yes, he is opinionated and crass…but he provides a stripped down, real world view of professional cooking, provides tips of the trade and offers up what has worked best for him. There are some short sections providing personal anecdotes, however the majority of the book is focused on providing guidance to those who are looking to either enter the field or improve upon their CV as well as tips and tricks for foodies…I fit in every one of these categories and take his musings to heart and look for ways to apply his advice in my catering, my own menu design and how I run my business.
