WCW – Watermelon Tomato Salad
This is one of those “modify amounts” recipes depending on how many people you’re serving, and where your preferences lie.
Ingredients
1 small seedless watermelon.
1 pint cherry or grape tomatoes
6 oz. feta, cubed
2 T balsamic vinegar
2 T olive oil
S&P
About 10-15 basil leaves, or to taste (depends on the size), torn.
Instructions
Cube the watermelon. You should have about 6 cups. Save the rest for later.

Changes – Yes or No?

When we were selling our Florida house, one of the recommendations (a very strong recommendation) was to consider curb appeal. No Excuses, No Guilt
Not a lot getting done this past week. Our dog required surgery, and none of the veterinary surgeons had ever seen anything like what they found when they went to repair her Achilles tendon. It was a 3 hour procedure, and she’s requiring a lot of TLC. She’s restricted to as little mobility as possible, which has confused her. She doesn’t understand why we’re not going for our daily long walks, and that she’s stuck on the deck. At least she can be outside, her favorite place.

It’s been a while since I’ve posted a recipe here, but this one intrigued me when I read it, so I had to give it a try. It’s a keeper. Interesting flavors, and not complicated to prepare.

Working … With Interruptions
