Picture of an eye sculpture outside a castle in CopenhagenAs I mentioned earlier, our photography trip to the Faroe Islands began with 3 days in Copenhagen, both to make sure we arrived for the workshop, and to shed some of the jet lag before we had to deal with what turned out to be long–very long–days. Of course, we didn’t simply sit around in our hotel room. We went out, armed with OM System cameras and iPhones. I haven’t recapped our all-day tour, but here are a few pictures of the sights we encountered.

Sorry – no recipe this time, but here are some of the wonderful things we had to eat (and drink) in Copenhagen.

You may note that I loved all the salmon offerings! You’ll also note that the salmon I ordered was smoked, not cooked. Think lox. I ate it for breakfast, too!  (The carpaccio was beef.) Avocados were very popular, and showed up in a lot of salmon dishes.

Copenhagen harbor and row of colorful buildingsOur trip began in Copenhagen, and the travel gods were on our side this time. Denver to JFK went off without a hitch. There was a delay getting from JFK to Copenhagen. Weather had created issues at JFK, and we had to wait for our captain. Seems he was on another plane, which had landed, but there was no gate, so he couldn’t get off. We were late arriving in Copenhagen, and there were long lines at Passport Control, but we were in the right place on the right day.

WCW – Grilled Turkey Tenderloin

WCW – Grilled Turkey Tenderloin

Ingredients
1 pkg turkey tenderloins, about 1 ½ pounds
¼  c packed brown sugar
¼ c whole grain mustard I used Inglehoffer Original Stone Ground
1 T apple cider vinegar
1 t cumin
½  t. black pepper
¼ t smoked paprika
¼ t garlic powder
¼ t salt

Instructions:
In a small bowl, whisk together everything but the turkey.
Reserve about 2-3 T of the marinade
Combine the turkey and the rest of the marinade in a plastic bag and refrigerate for one hour

Summertime. It’s hot. Who wants to heat up the kitchen (and the whole house)? We’ve been grilling a lot. Here’s a cucumber radish salad recipe that would make a great side.

Cucumber Radish Salad

Ingredients:
1/4 c fresh lime juice
1 T sugar
2 Cucumbers, thinly sliced (I used 1 big one, peeled)
1 bunch radishes, thinly sliced
1/3 c golden raisins (I used regular, since I didn’t have golden)
