Another one pot meal, something very welcome, especially to the dishwasher

Yield:4 to 6 servings

Ingredients

3 T olive oil
1 Vidalia or yellow onion, chopped
1½ t salt, plus more for seasoning
1 medium zucchini (about 8 ounces), halved lengthwise, seeded and ½-inch diced
3 garlic cloves, minced
2 pints cherry tomatoes, halved
⅓ c torn fresh basil leaves, plus more for serving
¼ t red-pepper flakes, plus more to taste
2 T balsamic vinegar

Time to Get Back in the Groove

I’ve been home long enough—maybe—to get back to a more normal routine. Copenhagen and the Faroes was a major adventure. First order of business then was dealing with editorial feedback and getting the book ready to upload.

Then, after a short recovery time, it was off to New Hampshire for a family reunion. Lots of fun, lots of memories.

Instead, we wandered the town of Torshavn for a couple of hours and met at the Irish pub for dinner. To be honest, this is the kind of photography I prefer over long hikes for landscapes. It was also nice to get out and tour the town, since our hotel was some distance away.

jackdaw standing the the grassOur final day in Copenhagen was filled with an all-day tour, giving us a way to see more of the city and its surrounds. We’ve learned that the secret to our marriage (which hit the 55 year mark this past Saturday) is to find a tour that has things each of us can enjoy, and let someone else do the driving and explaining.
