Pineapple Upside-Down Cake.
This is my favorite recipe for homemade classic Pineapple Upside-Down Cake. Super-moist and full of flavor!
Another springtime cake is sitting on my kitchen table today.
As I sit at my desk and see this outside, I’m desperately craving any and all things fruity. Apparently making fruity, luscious springtime cakes tricks my mind into thinking it’s actually pastel-wearing weather again? Flip-flop weather, blue jeans and t-shirt weather, floral scarf weather, flowy dress weather…
I’m diving head first into this super-moist pineapple cake with hot pink nail polish on my fingers and mint green on my clothes. I don’t care, it’s springtime inside this apartment.
My mom makes pineapple upside-down cake every year when spring rolls around. Sometimes mom does a little shortcut cake mix version when she’s elbow deep in other things. But this year, I’m bringing my homemade version to the table.

Cake Batter Oreo Cookies.
The ultimate sugar rush! Soft-baked and ultra chewy chocolate chip cookies flavored with cake batter and studded with Oreo cookies.

I’ve found my new favorite cookie.
I can’t believe I’m saying this? I’m an oatmeal cookie kind of girl. A peanut butter cookie freak. A snickerdoodle lover. But that’s all changing today because these soft chocolate chip cookies, filled with Oreos, sprinkles, and cake batter flavor are stealing my heart.
…the only thing better than a cookie is a cookie in another cookie. With sprinkles.
I made today’s colorful cookies to celebrate my biggest accomplishment. Also for my best friend’s birthday last weekend. Erin LOVED them.
Today, March 1st 2014, is the official release date of my cookbook!! I’m so excited that I can hardly breathe today. I jumped out of bed this morning ready to take on my celebration-filled day. I may or may not be publishing this post with champagne in hand. Cookies and champagne go well together, right?

Photo A Day, February.
Welcome back to my Photo A Day posts!
My gosh, February was a whirlwind. How is it already over? Lots of snow, food, 5 degree weather, girls’ nights, chocolate, and cookbooks. I’m hitting my yoga mat again (I took a couple months off) and it’s feeling incredible. Helps calm my nerves, especially when I receive HUGE butterflies-in-my-stomach news. See Feb 27!
Feb 1. My favorite shoes. I bought them for a steal on sale in January, but can’t find them again to link up for you. These are the same brand and look similar.

Cheesy Spinach Quiche.
This super cheesy spinach quiche is baked in my favorite homemade pie crust. Impress all your brunch guests with this recipe!
Earlier this month, we went over Kerry’s house for brunch. Kerry is Kevin’s sister, also one of my bridesmaids. She’s one helluva cook! She’s the brains behind this chocolate/peanut butter operation. Yes, it was amazing.
For brunch a few weeks ago, she made two quiches (one spinach, one mushroom) and overnight french toast. I have been dreaming about remaking her quiches the whole month! Also that french toast. Heaven in a casserole pan.
I couldn’t decide between her spinach quiche or mushroom quiche, so I combined them into one. One ultra cheesy, ultra savory, peppered, mushroom, spinach fiesta. I baked it all in my homemade flaky pie crust. My favorite pie crust recipe in the world.

Dark Chocolate Almond Butter Cookies.
These 6 ingredient Flourless Dark Chocolate Almond Butter Cookies are so good, you won’t miss the butter and flour!
Today recipe = part 2 to my 5 ingredient flourless Almond Butter Chocolate Chip Cookies. A chocolate-enhanced sequel, if you will.
I made a dark chocolate version, complete with pure dark chocolate chunks, and a sprinkle of colorful chocolate-coated sunflower seeds. The seeds are optional, but may I suggest you replace them with sprinkles?!
If you’ve made the original version before then you know how good today’s version will be. They’re simply made from homemade almond butter, an egg, some brown sugar, and cocoa powder. That’s about it! Flourless, easy, and quick. 30 minutes and you’ll be in gluten free chocolate heaven.

S’mores Banana Bread.
Super-moist brown sugar banana bread infused with your favorite s’mores flavors. Including toasty marshmallows on top!
Happy National Banana Bread Day! Yes, I’m a nerd and I follow food holidays. I hope you celebrated National Margarita Day yesterday.
(Um, don’t worry… it’s not too late for a late margarita celebration.)
I’m very excited about today’s recipe. I’ve been dreaming about summer campfires, flip flops, and toasty s’mores for the past 4 weeks. It’s keeping me warm underneath the 12 inches of snow we recently had. It might not feel like summer outside yet, but today we’re bringing summertime s’mores inside. No campfire required!
The base for this recipe is my standard, go-to banana bread.
As a bonafide banana bread lover, I’ve tried several recipes and methods for this quick bread. Oil or butter? 1 egg or 2? Brown sugar or white? I baked about 9 different loaves before deciding on the winner last year. I posted my Best-Ever Banana Bread recipe last May and you all seem to love it too!

Ultimate Marble Cupcakes.
For when you can’t decide if you want a chocolate cupcake or a vanilla cupcake!
Tuesday was my friend Kristin’s birthday and Saturday is my friend Erin’s birthday. Going out tonight and Saturday night to celebrate my two best gals.
But first… cupcakes. Very confused cupcakes. Are they chocolate? Are they vanilla? Who cares! Have both flavors and eat them too because today you don’t have to choose!
It’s party time. ♥
I have a few kitchen-tested, reader-approved, very trusty cupcake recipes on my website. Two favorites? These vanilla funfetti cupcakes and these chocolate cupcakes. I knew I wanted to make one of them, but was having trouble deciding which. Kevin told me to just make both, but that sounded like too much work– even for bakeaholic me.

Master Muffin Mix.

I have a real treat for you today. Several recipes in 1!
Many of you have been asking me for 1 simple muffin recipe. An easy, straightforward muffin batter to which you can add anything. Blueberries, banana, streusel, glaze, cinnamon, chocolate chip, the works.
I spent some time in the kitchen the past week playing around with my own “master muffin batter” and you’re going to love the results.
I’ve been using the same muffin batter to make blueberry, chocolate chip, and raspberry chocolate chip muffins for the past year. I even used this same muffin batter to make Blueberry Streusel Muffins in my cookbook. See image here.
Using that same master batter, making only a couple changes that I will explain in this post, I made Very Berry Muffins and Banana Nut Muffins over this weekend.

Blueberries ‘n Cream Danish Braid.
Follow these easy instructions and create a flaky, buttery cream cheese Danish at home. You can be a master at this, I promise!

One of the kitchen challenges I gave myself last year was to make homemade Danish pastry. You know those buttery, flaky, fruit/cream cheese filled pastries at catered breakfasts and meetings? They’re totally irresistible, I know.
Making Danish pastry at home was extremely intimidating, but I put on my big girl pants last October and spent days in my kitchen trying my hand at it. Call me determined, call me pastry crazy, call me whatever but I finally got it! Lucky for us, the recipe I use to make our beloved pastries at home is a quick-method.
If you haven’t tried it yet, now is the time. Don’t be scared; you can do this too!

My Danish pastry dough and method is an adaption of several trusted sources: Cooking Illustrated, Joy of Cooking, and pastry master Beatrice Ojakangas. I studied the three methods and sort of mish-mashed them all together. Using what I learned, I made a beautiful Iced Raspberry Danish Braid and brought it to Kevin’s parents’. If heaven had a taste, it would be my raspberry danish braid.
