Autumn Birthday Party

fall party
Wow, wow, wow. I have a seven year old. A full blown big kid. This weekend we celebrated sensational seven with an autumn themed party, at the birthday girl's request. If only I had known we would be at the height of a record breaking heat wave, we may have opted for a beach party like last year. Oh well... she had a great, although sweltering, fall party. I gave her this adorable Little Miss Pumpkin shirt as a birthday gift. It's made by Paper Doll Clothing Co. aka lovely mommy and blogger, Lindsay. Here are some of the details. And you don't need a birthday to celebrate this beautiful season...

Healthy Snack Ideas for Soccer Games

healthy snacks for kids
The fall sports season is in full swing. It's our first year with soccer and my 6 year old is loving it. Her 4 year old sister is not loving being an 8 am Saturday morning cheerleader, but hopefully she'll grow to love it too. Our girls have done ballet, swimming, and gymnastics in the past, but this year of soccer is taking athletics to a new level. The kids are all sweaty and bright red faced after practices and games. And so, so hungry. I've been thinking about healthy snacks to nourish our growing kids after sports and wanted to share them with you. After strenuous exercise, it's important to refuel with protein, so that muscles and bones can continue to grow strong.

Keep reading for ideas and a free printable!

How to Caramelize Onions

When my daughter was three, we went out one night for burgers. When the server asked if she would like a plain kids burger, my little gourmand asked if they could put caramelized onions on top. While our server was a bit surprised, when you think about it, there's nothing not to love about caramelized onions. Even if you're three. Raw, onions are undeniably intense, but once they have been slowly cooked down, they release all of those spicy notes and tear-inducing gasses and leave only sweetness behind.

Allrecipes has picked my method for the relaunch of their how-to section, coming soon. I'm so excited to be working will Allrecipes.com and wanted to let you know to stay tuned for their new How To section. For now, here are some delicious ways to use caramelized onions.
Use your caramelized onions to top your burgers, like my little ones do, or use them to add flavor to any other dish you would like. Or try some of these delicious caramelized onion recipes:

Caramelized Onion and Arugula Pizza
Sweet Potatoes with Caramelized Onions
Bacon and Caramelized Onion Rolls
Macaroni and Cheese with Caramelized Onions

This is a sponsored conversation written by me on behalf of Allrecipes. The opinions and text are all mine.

Vegetable Enchiladas Recipe

veggie_enchiladas
A few weeks ago we went over to our good friends' house for an end-of-summer dinner party. All our friends are such wonderful cooks and we all have the best time eating, chatting, and laughing with them. The adults sat at a long table decorated with beautiful blue jars filled with sunflowers, and the kids had their own kiddie table right next to it. When we have dinner parties like this one, the kids (ages 2-7) usually eat whatever the grown ups are having. Laurie's party was no exception, she made incredible fresh enchiladas that the kids devoured and the moms all wanted the recipe. Laurie says even her meat-loving hubby loves this vegetarian dinner.

10 Healthy Life Hacks

Healthy living is a big part of our family. I try to work out 4 days a week doing a combination of running (mostly sprint work), weights, and yoga, and eat a clean healthy diet most of the time. Yummy Hubby is training to ride in a 100-mile bicycle race next month, which means 4 hour rides on the weekend and more during the week. Over the summer I let these things slide... I'm pretty sure I had an ice cream cone every day for the entire month of July. Now that we are getting back in the groove of school and a schedule, I'm finally getting back into my healthy habits. Silk asked me to share my favorite health hacks. I love getting these assignments as they are great for breaking writers block. And I love that Silk wants to spread healthy living ideas with the world through bloggers. So here we go, here are 10 of my healthy living hacks...

the Yummy Mummy Kitchen garden

Pretty scenes from our little backyard garden.  summer garden
As our tomato plants slow down and our sunflowers droop, I realized I hadn't shared some of the beauty that is our little backyard garden. It's not the It's Complicated garden, but I love it. I hear people say "I don't have a green thumb. You're so lucky you can garden." But I don't believe in green or black thumbs. Maybe for some people gardening is intuitive. It definitely is not for me and I've killed many a plant. Like anything else, growing food and flowers is a learning process, and you can't expect success without studying. The first year of my "garden" I planted a single zucchini plant. The next year I planted some herbs, strawberries, and one cherry tomato plant. Each year I've become more comfortable with gardening and learned how much water, light, etc. each of my plants need to thrive. This summer was our best garden yet, and I'm going to be very sad to go back to buying tomatoes. There really is nothing better than a sweet tomato right off the vine. Even though summer planting is over, I hope this post inspires to you to go plant some herbs (they are SO overpriced in stores), winter greens (hello kale chips!), or butternut squash (yum!).

Here's what we have going on in the garden this summer...

3-Ingredient Taquitos Recipe

We made it through our first week back at school! We have one in 1st grade and one in her last year of preschool. Getting used to the longer school day of 1st grade and then after-school soccer, ballet, and swimming is definitely an adjustment after summer. One lunch recipe I've been meaning to share with you for over a year now, but just haven't gotten the chance (between being a chauffeur, cook, housekeeper, tantrum tamer, farmer, etc. sometimes it's hard to blog) is an incredibly easy homemade taquito recipe. Our girls love taquitos in their lunchboxes, but I even make these for dinner. They also freeze well, so make extra. I prefer to make taquitos myself because it saves money and you can control the quality of ingredients. Considering almost all non-organic corn products these days are GMO, it makes me feel better to choose my own tortillas. And it's easy and inexpensive to use organic cheese and beans as well. Gluten free friends can easily use gf tortillas.

How to Make Marinara Sauce with Fresh Tomatoes

An easy marinara sauce recipe.  marinara sauce recipe
Homemade sauces are so much tastier than jarred. Homemade sauce is fabulous with boxed tomatoes (I don't use canned because of bpa concerns), but during tomato season when our vines are dripping with tomatoes, it's fun to use them up in sauce. It's an amazing cycle to plant tiny tomato seeds and months later have a beautiful tomato sauce simmering on the stove. This recipe is incredibly easy. I don't peel the skins anymore, and have found I don't need to. I hate to waste any little bit anyway.

Baked Spinach Arancini Balls

Arancini are a typical Italian snack. They are tasty fried balls of rice stuffed with cheese. Who wouldn't love that?! My 4 year old and I made a healthier batch this week with a spinach filling. Instead of deep frying we baked them off in the oven. They were just as crisp on the outside and ooey gooey on the inside. So satisfying.
