Raspberry Raw Vegan Cheesecake Slice Recipe

With Valentine's Day just a couple of weeks away I thought it time to make you a sweet pinkalicious treat. But I love you too much to give you refined sugar and processed ingredients. And they are just not necessary. It's beautiful organic food like this that reminds me how amazing nature is. I mean, this dessert is 100% plants! Cashews are a common ingredient in vegan and raw creamy recipes. Once soaked, they can be pureed into a smooth "cream" that can be flavored however you like. If you've never tried a cashew based cheesecake it may sound a little suspicious, but I promise it's just as tasty as the real thing. Yummy Hubby had no idea this was a healthy dessert. When I asked him what he thought this was made out of he was sure it was cream and sugar. Nope, it's just pure fiber, protein, plant-y goodness.

I've made these chocolaty little morsels three times in the past couple of weeks. My whole family loves them and I personally can never eat just one. Ordinarily inhaling chocolate treats is a problem, but with these babies? I don't feel guilty (or nauseous). In fact, they are great little energy bites, loaded with protein from nut butter, cacao, and quinoa. I made a batch for my first grader's class only I used sunflower seed butter, as there are children with nut allergies in her class. Orange Protein Smoothie

Many of you have been enjoying my smoothie recipes here and on Instagram so I'm excited to share one of my favorite post-workout smoothies today! It's incredibly simple and healthy, but tastes like 50/50 ice cream. Did you ever have a 50/50 bar as a kid? They are so good... but so bad. My kids love this smoothie as much as I do and with two tangerines and probiotics it's a great immune booster as well. Plain greek yogurt is a very strong source of protein. The yogurt I have right now, Wallaby Organic Plain Greek yogurt, has 23 grams of protein per cup! The notion that vegetarians don't get enough protein is just nonsense, and this recipe is just one example of how easy it is to get plenty of protein in our diets. This smoothie is just as tasty green - try adding a handful of kale to the blender!
Enjoy this sweet but refined sugar free smoothie for breakfast on the go, after a workout, or an after school snack.

Orange Protein Smoothie

Prep time: 1 minute
Cook time: 1 minute
Total time: 2 minutes
Yield: 1 smoothie

Ingredients
2 medium seedless tangerines or mandarin oranges 1 frozen banana, peeled and sliced prior to freezing 1/3 cup plain Greek yogurt to taste stevia, honey, or coconut syrup 1/2 serving vanilla protein powder (optional) small handful ice cubes Cooking Directions
Place all ingredients except for the stevia into a blender, starting with the oranges. Blend until smooth. If you don't have a high powered blender, you may need to add a little water. Sweeten to taste with stevia, honey, or coconut syrup. Add more ice if you would like your smoothie to have more of a frozen texture. Enjoy!
*Make it green! I love adding a cup of kale to this one for a green smoothie.*Vegan option: use coconut yogurt and vegan protein powder.

Pineapple, Kiwi, and Greens Smoothie

We love our smoothies over here. My Vitamix gets its workout daily. Usually multiple times a day. Today I made my girls' daily smoothie a little more fun and tropical. The only thing missing was a warm beach, Hawaiian music, and a pineapple to drink our smoothies from. The girls are on a kiwi kick at the moment so I thought a kiwi smoothie would be the perfect opportunity to sneak in some dark leafy greens. Waaahahaha, sneaky, sneaky. Avila Barn

On the way up to celebrate my grandma's 95th birthday a few days ago, we stopped at the Avila Barn. The next time you are in central California, be sure to make a pit stop at this charming farm. We spent a good hour petting and feeding the goats, chickens, lamas, umus, horses, and a cow. This barn doesn't just have a petting zoo though. The Avila Barn is stocked with delicious produce, pies, gifts, toys, Stonewall Kitchen goodies, and so much more. In the summer hot corn on the cob and an ice cream cone is a must. In the fall The Avila Barn has hay rides and u-pick apples, and even pony rides. avila barn cow The gal has the sweetest eyes, don't you think? She loves being petted. Veggie Black Bean Soup Recipe

Happy New Year! After all the holiday indulging, this soup is a delicious and hearty detox dinner. My mom made this for us for Christmas dinner and my little girls loved it. The soft bite-sized veggies and beans are perfect for little mouths. I added sweet potato to my soup because I just love it with black beans, and since y'all loved my Black Bean and Butternut Squash Enchiladas, I knew you would too. This soup begs for additional texture and flavor in the form of yummy toppings. I love crumbled tortilla chips on top for some crunch and avocado with a squeeze of lime is a must. Chocolate Protein Smoothie Bowl

I know I should be posting holiday recipes, but I just got home from a great workout and had this recovery protein smoothie bowl that was so delicious I just had to share it with you right away. It tastes just like a chocolate milkshake but is filled with superfood goodness instead of sugar.
I used to have a major sweet tooth and could never imaging not craving chocolate. Now that I take better are of myself by avoiding sugar and sticking to a high protein plant based diet I don't have sugar cravings at all. Part of the road to success in cutting out sugar for me was replacing sugar with nutritious treats like this one when I did want a sweet treat.
