Quinoa and Lentil Salad with Butternut Squash

A hearty and nourishing salad of lentils, quinoa, butternut squash, and pomegranateOne of my favorite lunches these days is a sweet and savory salad of quinoa, roasted butternut squash, and arugula. It sounds labor intensive, but it really takes about 2 minutes to throw together because I keep everything prepped in the fridge. I make a batch of quinoa and lentils on the weekend to easily add complete protein to my daily diet. Lentils and quinoa are a couple of my favorite vegan protein sources. I made this particular salad at the last minute to bring to my mom's house on Thanksgiving. Holiday Tuna Recipes with Bumble Bee

A few weeks ago I received a package from Bumble Bee along with a challenge to create festive holiday recipes with their new and classic tuna. When we were in northern Italy over the summer I noticed that almost every restaurant and panini stop we visited had some form of canned tuna on the menu. I often ordered Insalata Tonno, a salad of crisp greens, fresh mozzarella, tomatoes, canned tuna in olive oil, and sometimes carrots and corn. So when I heard from Bumble Bee I thought it would be fun to come up with some new ways to use tuna. Mini Chocolate Pumpkin Pies

Last year I made mini pumpkin pies... or maybe they should be called pumpkin tartlets, for the kindergarten Thanksgiving pot luck. Either way, we loved these cute little pies so much that I had to make them again. They are easy to make and I love that they don't have any sort of canned condensed milk, just real ingredients like cream. When I spotted Heather Christo's gorgeous Chocolate Pumpkin Pie, I knew I had to add chocolate to these babies. Chocolate and pumpkin is such a fantastic combination - I don't know why it's not more common!

Butternut Squash Toasts Inspired by ABC Kitchen

When I got to spend 2 dreamy days with my dear friend Liz in New York awhile back (she's also the super talented gal who produced the Yummy Mummy Kitchen cookbook trailer!) tasting and ice skating our way through the city, we stopped at ABC Kitchen for their famous Squash Toast. When I got back home I recreated this delicious snack at home. I just found these images I took last year and realized this would be a perfect appetizer for Thanksgiving, or any fall or winter day, and had to share the recipe with you. You're going to love it!

Quinoa Enchilada Bake with Black Beans and Butternut Squash

Quinoa Enchilada Bake
Last night's dinner was so good I just had to share it right away. Maria at Two Peas and Their Pod had mentioned somewhere on social media that their Quinoa Enchilada Bake was one of their most popular recipes. You know how I adore quinoa. I make a batch every week to add to my salads and wraps throughout the week. So a quinoa casserole sounded like the perfect Monday night dinner on a cool autumn night. One of the most popular recipes here on Yummy Mummy Kitchen is my Black Bean and Butternut Squash Enchiladas. One reader on Instagram said it's the best recipe she's ever made! Yippee!  I added roasted butternut squash to my quinoa bake and it added delicious sweetness. I wasn't sure how my little girls were going to respond to this dinner, as one is not a huge fan of quinoa. But covered in gooey cheese, they both ate their dinners without any complaints.

Recently my 7 year old requested pot pie for dinner. I loved her suggestion, as it's comforting for fall, packed with healthy veggies, and I had most of the ingredients in the freezer already. I also make these early and bake them just before dinner, which makes this busy mama's life a lot easier. The small soft veggies are perfect for small kiddies. Did you know that almost 80 percent of Americans fail to consume the recommended amounts of fruit, with nearly 90 percent failing to meet dietary recommendations for vegetables? This recipe is definitely not contributing to that problem!
