Dinner Recipe: Pesto Noodles
This dinner recipe is a sleeper. It’s much simpler than Peanut Noodles, and it lacks the obvious cheese and Frito goodness of the Beans & Rice, yet it’s rated as highly as both by our clients.
Meal stats
Recommended meal weight: 5.6 oz
Total calories: 700
Caloric density: 125 calories/ounce
To increase the caloric density, which is already very high, add more olive oil, more noodles, or more cashews.

Ingredients
The spices can be altered to change the profile of the dish. For example, add some dried oregano or rosemary.
For extra goodness, drop in some chunks of salami, beef jerky, or similar.
Pine nuts are more commonly used in a pesto sauce. We use cashews instead, since they’re less expensive and more widely available.
This dish can be made vegan by substituting the Parmesan. Vegan Parmesan products are available online and at local natural grocers. Or, easily make your own using cashews, nutritional yeast, and a pinch of salt.


At-home preparation
Discard the MSG-loaded seasoning packet in the bag of noodles, either at home or in the field.
For single-servings, all ingredients should be bagged together, except for the Parmesan — keep that separate. I store the olive oil in a Nalgene bottle made of HDPE, which are available in 4-, 8-, 16-, and 32-ounce sizes. The screw-lids are very secure, and I haven’t had one leak oil.
In a group setting, each group member receives their own ration of noodles, and all of the other ingredients (Parmesan, olive oil, sun-dried tomatoes, and spices) are packaged separately. Divide them in the field.

Cooking instructions
For perfect at-home consistency:
Use 10 ounces of water. Add the leathery sun-dried tomatoes at the start, to give them time to soften up.
Bring the water to a boil, or a near-boil.
Add all ingredients, save for the Parmesan. The ramen seasoning packet should be discarded.
Stir and let reconstitute. No simmer is needed.
Once the ingredients have cooked and the pot has been removed from the stove, add the Parmesan. Unless you want a gooey cheese mess in your pot, do not jump the gun on the Parmesan.
Add salt, pepper, and red pepper flakes to taste.

Dinner Recipe: Peanut Noodles
For years Peanut Noodles has been a crowd favorite, usually ranking just below the world famous Beans & Rice. This backpacking dinner recipe goes on every single guided trip and on most personal trips, especially if I have a prepared batch of sauce already in the fridge.
The sauce has gone through several iterations, getting better each time. It’s worthy of at-home use — we keep a bottle of it in the fridge as a quick-dinner option, usually pairing it with a blackened chicken breast.

Ingredients
If you have a gluten sensitivity, swap the Top Ramen for Millet and Brown Rice Ramen from Lotus Foods.
Cashews are not critical, but they improve flavor and texture. They can be substituted for raisins or crushed peanuts. Or, use more than one.
Since we first developed this recipe, the sauce has become more involved, now with eight ingredients. The effort is more easily justified by making a large batch, like for a group, a long solo hike, or mixed field/home use. If you need to simplify it (at the expense of flavor), the most critical ingredients are:
Peanut butter
Toasted sesame oil (or olive oil, with a big hit to flavor)
Soy sauce
Garlic
Per each two-ounce serving of the sauce, use about 0.04 ounces garlic and 0.01 ounces of ginger. A normal postal scale will not register these trace amounts; you need to buy a drug scale or to make a 10-serving batch.
For our guided groups, we don’t add Sriracha chili sauce because some clients object to the spiciness. But we love it. For each 2-ounce serving, add about 0.04 ounces. A field-friendly alternative are red pepper flakes, which are part of the universal spice kit.
While I haven’t personally tried it, an alternative butter (e.g. cashew, almond, or sunflower) would avoid peanut allergy concerns.

At-home preparation
Ramen noodles have their own packaging, and I normally leave them that way. The exception is a short solo trip, when at home I may crush up the noodles and re-bag them with the raisins or crushed cashews.
The raisins or crushed cashews are bagged separately and divided in the field.
The sauce should be made at home. Mix all of the listed ingredients, minus the noodles and cashews. I recommend making big batches with a kitchen mixer, unless you want an arm workout.
Carry the sauce into the field in a 4- or 8-oz Nalgene HDPE Container or a 16- or 32-oz Nalgene Wide-Mouth Bottle. Even if you only need one serving, do not attempt to use a 2-oz bottle to save a few grams over the 4-oz or 8-oz size — you will struggle to pour the sauce into it and to clean it later.

Cooking instructions
If you prefer smaller noodle pieces to long, stringy ones, crush the noodles before opening the package. But be careful — the package can rip open.
Remove the MSG-filled “flavor” packet.
Bring to a boil at least 1.25 cups (10 oz, 300ml) of water.
Add the Ramen and the cashews, turn off the stove or let it burn out, and let the noodles sit for 5 minutes.
Add the sauce.
If you use more than the minimum 1.25 cups of water, everything can be added at the very beginning, since the extra water will prevent scorching the ingredients.
To get the sauce out of the bottle, we add water and shake vigorously. A 32-ounce bottle becomes very clean after two or three rounds.

Breakfast Recipe: Cheesy Potatoes
This breakfast recipe has been a staple on our guided trips since 2015, when Amanda set out to create a savory dish to help balance sweet options like oatmeal or Quickstart Cereal.
The ingredients and ratios have been tweaked multiple times based on feedback, and I believe we now have a real winner. Among 100+ clients polled during the 2019 season, it was their top-rated breakfast, with an average score of 2.60/3.0.

To increase the caloric density, use more butter and less potato, and substitute the canned green chilies for dried. To increase the net calories, add more of the goodies, specifically bacon, cheese, or butter.

Ingredients
This is a deceptively large meal because the potatoes absorb a lot of water per their dry weight. If your breakfast appetite is suppressed, reduce the potato flakes by a half-ounce. Alternatively, save it for later in the trip when you have a thinner meal and/or you are hungrier.
The nutritional yeast adds a savory, Parmesan-like characteristic. It can also be substituted for real Parmesan if you’d like — add it at the end of the cooking process with the cheddar.
Find real crumbled bacon at your grocery store, or in 20-ounce packages at Costco. You can also cook bacon at home prior to your trip. Definitely pack the bacon fat, too, for extra flavor and calories. For vegetarians, there are many non-meat bacon products.
For our guided groups we pack a can of green chilies. For soloists and smaller groups, a smaller amount of dried green chilies would more calorically dense and perhaps less wasteful.


At-home preparation
Package the potato flakes, nutritional yeast, and dried onion in a sandwich bag. For shorter trips, soloists can add the crumbed bacon, too — I’ve had no ill effects after it was repackaged and sat in a hot car for 10 days. The canned green chilies are more perishable, so find a replacement or skip them.
On group trips, we package the bacon separately so that vegetarians and vegans can forgo their share.
Put the cheese in another sandwich bag, or keep it in its original packaging.
Unless it’s a cold trip, the butter is best stored in a plastic food container so that it doesn’t make a mess if/when it gets soft. On group trips, we divide these items in the field.
Cooking instructions
Per usual, preparing this recipe is very straightforward.
Bring 10 ounces (300 ml) of water to a boil. This meal does not need to be “cooked,” and you shouldn’t need to reheat it.Add half of the bag of potato flakes, then stir. Add the rest of the bag, and stir again. This two-step method will help prevent spills and clumps.Remove from the flame, and mix in the butter and bacon. The cheese and chilies can be mixed in, too, or sprinkled on top.
If you want a soupier consistency, use 12+ ounces of water.

Breakfast Recipe: Quickstart Cereal
To get out of camp as early as possible, the most ideal breakfast item is an individually wrapped bar (or several): granola bars, energy bars, protein bars, breakfast bars, etc. They require no prep and can be eaten on-the-go.
But there are downsides to this approach. First, they’re not very satisfying. Second, they probably constitute a large share of your daytime calories as well, possibly leading to culinary boredom.
A hot breakfast like Cheesy Potatoes is at the opposite end of the spectrum. They’re more enjoyable, but also more time-consuming, and thus inconsistent with ambitious morning plans.
My happy-medium option is this Quickstart Cereal, which balances efficiency and palatability. It’s my go-to breakfast on personal trips, and one of the top-rated meals on my guided trips. We normally reserve it for the last morning of the trip or for summit days.

Ingredients
This meal can be very simple, with as few as two ingredients: cereal plus powdered milk or powdered protein. The recipe included below goes 50/50, which is how we do it on the guided trips.
For cereal, personally I rotate between granola and grape nuts. They taste good, pack well, and are spatially dense. Many granola varieties are carb-heavy, and I prefer the more calorically dense versions available in bulk at my local natural grocer.
For more variety in your cereal, add crushed walnuts, almond pieces, freeze-dried berries, raisins, Craisins or similar. To keep the portion size in check, subtract an equal amount of cereal. I have served this meal to hundreds of clients, and the 4.5-ounce portion is about right for most.
Powdered milk is the more conventional choice to pair with cereal. I recommend Nestle Nido, which is powdered whole milk and thus more calorically dense than powdered skim milk.
Protein powder is a convenient form of this difficult-to-get-enough-of nutrient. On my personal trips, I skip the milk and add only protein powder. Costco has the best prices on protein powder (if you are prepared to buy 5 pounds of it); at Amazon, Muscle Milk is about $1 more per pound for similar sizes (and you don’t have to leave your house!).

Portion sizes and ratios
If this meal is too much or too little, change the amounts. Personally, I use 1.5 ounces of protein powder and 3.5 ounces of cereal, because I want the extra protein and because I often need a slightly bigger breakfast.
Hot or cold?
Almost always I consume this meal cold. However, it can be eaten hot. Some cereals — notably grape nuts — will soften and absorb water when cooked. Some protein powders may congeal when heated, which may be unappetizing to some. I’m less bothered by it, and find that stirring well and using a minimal amount of water helps.
Preparation
This meal is very simple to prepare, and is the same for soloists and groups. At home, premix the cereal (with optional fixings) and the protein powder (or powdered milk) in a sandwich-sized storage bag. Each bag is one breakfast for one person.
In the field, simply add water and eat. I’m not going to recommend a specific volume of water — presumably, you have a preference for this ratio already.

Dinner Recipe: Beans + Rice with Fritos & Cheese
This meal is my favorite. It goes on every single backpacking trip. I never get tired of it. Clients love this recipe. Need more convincing to try it?

It’s rare that someone struggles to finish this meal. But if you have a smaller appetite, use less beans and rice (but keep the ratio). To increase calorie count or caloric density, add more Fritos.
Ingredients
The four main ingredients are essential. The rice, Fritos, and cheese are widely available. The beans are best found online; in a pinch, I have used a seasoned bean dip from the Whole Foods bulk section.
Assuming the beans are plain, the Taco seasoning is critical. Most people skip salt and pepper, but may add red pepper flakes to inject some heat.



At-home preparation
For groups, I do the following:
Each group member is given one 2.5-oz snack bag of beans and rice mixture
Fritos and cheese are kept together, and divided proportionally in the field
Meals are individually seasoned with the taco seasoning and group spice kit
When solo, I vary between two approaches. If I plan to have this meal several times on the same trip (or the same leg of a thru-hike), I have a pre-spiced snack bag of beans and rice for each meal, and my supply of Fritos and cheese is kept together but preferably somehow delineated so that I don’t steal tomorrow’s calories for tonight’s dinner, e.g. divide the block of cheese equally but keep it all together. Alternatively, if I plan to have this meal just once, I will use up to three bags (beans/rice, cheese, Fritos) but I’ve also combined everything into one bag before. It works out okay since the ingredients are fairly easy to separate in the field.
Cooking instructions
For many reasons, I make all of my meals soupy. This simplifies some the cooking:
Add at least 12 oz of water to my stove pot.
Pour in beans, rice, taco seasoning, and any other spices at anytime.
Cook, ideally to a simmer for about 60 seconds, stirring to avoid boil-over.
Cut cheese into dice-sized pieces and add to meal.
Add Fritos just before consumption. If added too early, they will soften.
For perfect at-home consistency, use 10 oz (300 ml) of water. To prevent burning, do not add beans, rice, and taco seasoning until water is boiling.

Review: “Total Marriage Refresh” with Dr. Wyatt Fisher
Almost as predictably as the leaves turning color and the days getting shorter, Amanda and I normally reach a marital low point each fall. Amanda feels lonely and ignored for most of the summer while I’m physically gone or emotionally preoccupied with guided and private trips. And when I return, I crave personal time so that I can decompress and re-energize for another season.
It may seem like I’m airing dirty laundry, but I’m also being honest and real.
To help correct course, I signed us up for a day-long retreat with Dr. Wyatt Fisher, a licensed Boulder-based psychologist who specializes in marriage counseling and who offers his “Total Marriage Refresh” retreat several times per year in Colorado and Texas.
Review: “Total Marriage Refresh” with Dr. Wyatt Fisher
When reviewing backpacking shelters or running shoes, I often identify a specific optimal end-user — e.g. “best for thru-hikers and gram-weenies in arid climates” or “ideally suited for long runs on rugged trails.”
But I won’t similarly limit the suggested audience for Dr. Fisher’s retreat. If you are or want to be in an intimate relationship, I’d heartily recommend it. Amanda concurs.
For couples not yet married, it will help preempt some difficulties; For struggling married couples, it will help identify specific areas for improvement and give you tools for addressing them; and,For role-model couples, it will help you be even more awesome.
The 8.5-hour event cost $150 per couple, and we spent another $100 on a discounted room at Marriott’s Renaissance Boulder Flatiron Hotel so that we could have a rare uninterrupted night of sleep (our feline fur child is TERRIBLE at night) and so that we’d be on-site for the 8:30 AM start.

About Dr. Wyatt Fisher
Dr. Fisher has a masters and doctorate degree in Clinical Psychology, and is licensed in Colorado. His practice is in Boulder.
At these retreats, he seems to be in his element. He clearly has a genuine interest in the content and a passion for helping couples, and his stage presence is excellent. Amanda and I also really appreciated his relate-ability — he regularly used his admittedly imperfect marriage as a case study and as a source of comedic stories, and during breaks he staged himself at the ballroom door so that he could give attendees more personalized counseling.
Honestly, if I could ever attend one of my own Backpacking Gear & Skills Clinics, I hope I’d walk away as impressed with the presenter.
Content & format
The retreat’s narrative arc uses the “Six Proven Steps to Marital Satisfaction,” which is Dr. Fisher’s proprietary packaging of relationship research and anecdotal best practices. Like Steven Covey’s “7 Habits of Highly Effective People,” Fisher’s program is easily digestible yet thorough. A forthcoming book was not mentioned, but it seems like an inevitable accompaniment to his in-person practice, blog, podcast, and retreats.
Dr. Fisher lectures about each step for about 45 minutes, mixing it up with personal stories, client experiences, and funny video clips. These portions were clear, concise, and engaging.
After each step is explained, couples were dismissed for individual breakout sessions to personalize the content and to practice some communication strategies. We found this time to be as valuable as the more formal component, and reason enough to attend the retreat in-person together instead of simply utilizing Dr. Fisher’s recommended reading list:

Room for improvement
Our only recommendation is to update the workbook so that it’s gender-neutral, e.g. don’t assume that all couples are heterosexual or that the male is always the high libido partner. Dr. Fisher spoke to us today in neutral terms, but the workbook seems outdated.
While updating the workbook, I might suggest it be subtly reformatted to make it an even better reference. Just by adding a few pages, topics could be better separated and there’d be more room for note-taking.
These are small tweaks though. Overall, Amanda and I agreed: 5 stars.

Blast from the past || Review: Clifton 1 Reissue
Winter arrived early on the Colorado Front Range, pushing me out to the gravel multi-use trails and quiet county roads about a month earlier than usual. I wasn’t prepared for it: my inventory of road-worthy shoes consisted of just one pair of Hoka One One Clifton 5 (my review) with nearly 600 miles on them.
Before reaching out to my media contacts, I quickly scanned the online discount aisles for anything irresistible. I found the reissued Hoka One One Clifton 1 at Sierra, which I thought was reasonable for $80 with free shipping.

Review: Hoka One One Clifton 1 Reissue
The Clifton 1 was temporarily reissued last year, essentially in recognition that the modern Clifton is a fundamentally different shoe. The original was featherweight (7.7 oz) and had plush cushioning, making it ideal for long runs and tempos.
But with each successive iteration, the Clifton became heavier and firmer, making it more suitable for pure LSD outings (“long slow distance,” in the school of Coach Frank Mooney). When I reviewed the Clifton 4 and Clifton 5, they came off as reliable but ordinary road trainers.
Stock of the reissued Clifton 1 is dwindling. For men and women, try direct from Hoka. They’re currently marked at $100. Currently, Sierra is sold out in men’s, and has only size 6 in women’s.


Clifton 1 vs Clifton 2
When the Clifton was initially released in 2014, they didn’t make it on my radar. I did get the Clifton 2, however (my long-term review), and loved them. My hope was that the Clifton 1 would be similar.

The optimal application of the Clifton 1 and Clifton 2 is nearly identical. Today, for example, I wore them on an 18-miler, averaging 6:30 pace for the last six miles (versus a more cruiser 7:00-7:30 pace). They felt light and snappy.
The fit is different, though. The Clifton 1 is wider in the toebox and midfoot, which relegates them to straight-line running for my narrow feet. If you like the fit of the Clifton 4, 5, or 6, the original Clifton would probably serve you well.

110 testimonials from our 2019 guided trips
Since 2014 I’ve asked clients to complete an online trip evaluation at the conclusion of their trip. It gathers feedback about their satisfaction, goals, guides, preparedness, location, physical difficulty, and meals.
The results have helped me understand what we do best and how we could further improve, and to ensure that the quality of their experience is being at least maintained and hopefully improved.
From our 2019 trips, 144 out of 167 clients (86 percent) took the survey, so I have high confidence in the results.
Overall satisfaction
The single most important survey question is the first one:

I’ve asked this question since the beginning. On a 5-star scale, our results have been:

We’ve always run a high quality program, but I’m particularly delighted with our 2019 score. First, it’s our best performance ever. Second, this was the case despite growing 45 percent over 2018 and despite me guiding only 35 percent of the trips. In other words, our infrastructure is strong and our guide team rocks.

I had the good fortune to join an adventure trip in Yosemite NP, guided by Andrew and Dave Eitemiller. Both Andrew and Dave went above and beyond to make this trip a great experience for everyone, and I gained a lot of confidence in my own ability to travel off-trail in the High Sierra. There were the expected opportunities to learn various skills – e.g., trip planning, navigation with map and compass (and GPS), etc – but I think in retrospect many of these skills can be learned, with sufficient dedication to practice in the field, on your own. What was irreplaceable, however, was simply being around such experienced backcountry and high route travelers, learning some of the little things, practically through osmosis, about e.g., how to maximize recovery during down time, how to move efficiently in technical terrain, and most importantly, how to deal with the unexpected and often challenging circumstances that inevitably arise in such travel. Our trip was eventful to put it mildly, and through it all both Andrew and Dave, and indeed the rest of other clients, exemplified the advice of another famous backcountry traveler to accept and adapt (and eventually, hopefully, appreciate) whatever comes your way out there. Make no mistake, a week in which everything went perfectly to plan would have been splendid fun. But I believe that this experience was more valuable, and ultimately richer soil in which to grow my own abilities, and all the more so because of the example set by everyone involved. If you want a completely safe trip, with a virtual guarantee of Instagram friendly photo ops and comfortable, predictable travel, then these trips may not be for you. But if you want to be challenged, stretch your abilities and comfort zones, and jump start development of the skills and mindset required for your own exploration of the high country, either solo or leading a group of friends, I highly recommend taking an adventure trip with Andrew and Dave! — Ken J
Prior to Andrew’s trip, I considered myself an experienced day hiker and intermediate backpacker. But my backpacking trips were mostly highlighted by periods of misery: awful food and terribly sore muscles due to a backpack overloaded with fear and too much food. Now I can plan my own trips knowing I’ll have everything I need and I’ll still be comfortable hiking. The skills I learned have enabled me to enjoy backpacking instead of viewing it as an exercise in tolerating discomfort. Very long-term review: Samsung Chromebook || 90 percent of computing needs for $200-ish
Five years ago I bought the second-generation Samsung Chromebook 2 for business travel. Versus my primary machine — at the time, a conventional Windows laptop — the Chromebook was:

It proved to be a fantastic purchase.
In fact, I’ve since bought two third-generation Samsung Chromebook 3’s — one last year for Amanda for $195, and a renewed model last week for $138 after water was sadly spilled on my Chromebook 2, frying the right-half of the keyboard. Otherwise, it was still running perfectly.

Long-term review: Samsung Chromebook
For someone like Amanda, who has a normal 9-5 job, the Samsung Chromebook 3 ($220) is probably the only computer they need at home. It’s ideal for email, basic documents and spreadsheets, social media, and web browsing (including videos). It’d be ideal for my retired parents and school-age nieces and nephews, too.
For someone like me, who runs a small business and works from home, the Chromebook is an inexpensive and travel-friendly supplement to a Windows or Apple desktop or laptop computer. While it addresses 90 percent of my needs, it can’t run vital programs like Quickbooks or Lightroom, due to incompatible software or inadequate computing power, or both. Moreover, it’s an inefficient workstation relative to a dedicated setup: its performance is sluggish; its screen is small; and it’s missing a numerical keypad.

On average, I use my Chromebook for an hour or two each day, mostly while working on the couch, at the dining table, or from the local library or coffee shop. It also goes with me to meetings, and I take it for both business and personal travel.

At just 2.5 pounds and 0.7 inches thin, it’s extremely lap-friendly and portable. (Last summer I actually carried it into the backcountry so that I could work on a guidebook at night.) It sips on the battery, getting up to 11 hours of life. It doesn’t overheat or have a fan like my old Windows laptop. And the HDMI, Bluetooth, and headphone jack give me enough connectivity options to make a slideshow presentation.
The Chromebook presents an excellent value. The base model Chromebook 3 retails for $220, though it’s now available for much less (about $150) since Samsung released the next-generation Chromebook 4 last month.

Limitations
For a $200-ish device, the Samsung Chromebook is simply awesome. But it’s still true that you get what you pay for.
A Chromebook is optimized for the Google ecosystem, and most operations need to be doable in the Chrome browser. If you aren’t willing to give your data to Google or to adopt its platforms (e.g. Gmail, Drive/Docs), maybe it’s not the device for you.
The Samsung Chromebook also doesn’t look, feel, or perform like a premium product.
It’s made mostly of plastic, and is boring black.The 11.6-inch screen is acceptable, but has less brightness and resolution than modern smartphone screens. It’s slow while running multiple browser tabs or loading memory-heavy pages like an involved CalTopo map or lengthy document. And,The built-in camera is very lackluster, especially in low light.
Some might disagree, but I like the keyboard and trackpad. In fact, 1.5 years ago when I bought an accessory keyboard for my desktop computer, I looked for one with a similar feel.
Higher performance Chromebooks are available. The flagship Google Pixelbook, for example, has a nicer construction, laptop/tablet conversion, touchscreen, and more computing power, RAM, and hard drive storage.

Chromebook 3 versus Chromebook 4
The Samsung Chromebook 4 was released in early-October 2019, and currently is available only from Samsung and Best Buy. Read the press release.
Changes appear to be evolutionary. The fourth-generation devices are similarly sized and priced, but come with a sleeker aesthetic, military-grade construction, and some improved hardware.
At $230 retail, the base Chromebook 4 is a great buy. And now at about $150, the base Chromebook 3 is even more attractive. Personally, I went for the latter, knowing that it’s perfectly sufficient for how I use it.
