Recipe from Home-Cooked Vegan Comfort Food and a Giveaway

Home-Cooked Vegan Comfort Food

No one knows comfort food like Joni and Celine. I just wish I lived on the west coast so I could “drop by” for dinner on a regular basis. (Well, at least until they got tired of me.)

This book is a re-design of their book Hearty Vegan Meals for Monster Appetites and contains the same recipes. If you have one you don’t need both. However, you definitely need one copy on hand at all times. Make sure to scroll down to the bottom of this post and enter the giveaway to win one of your own!

Easy Slow Cooker Date-Sweetened Apple Spice Creamer

Apple Cinnamon Creamer from HealthySlowCooking.com

Here’s another new vegan creamer to spice up your fall coffee or tea. It’s full of cinnamon and apple all wrapped up in a creamy So Delicious Coconut Milk. It’s cooked down thick and sweetened only with virtuous dates.

This was my first recipe with So Delicious’ new Culinary Coconut milk and I decided to try the lite since my last creamer used full fat coconut milk. I think it worked well and held together just as expected in my slow cooker.

Try this creamer in some plain black tea – that was w...

Gruesome Forbidden Rice Halloween Mousse

DSC_0691

This is not only a spooky dessert worthy of a campfire, it’s quite gruesome too.If you have kids (or grownups) that love gross things they will love this, because it’s meant to be a horror-worthy end to your Halloween meal!

Gruesome Forbidden Halloween Pudding or Mousse from HealthySlowCoooking.com

In all honesty it’s a simple and even wholesome chocolate dessert that’s simply made with chocolate chips, coconut milk, sweetener, vanilla and forbidden black rice. It cooks in your slow cooker and thickens up a ton in the fridge.

Mine was very runny before I put it into th...

Trio of Halloween Spooky Spreads

Trio of Vegan Halloween Spreads from HealthySlowCooking.com

I love Halloween and spend entirely too much time thinking about what I can add a spooky twist too. Last night when I looked into my fridge and took inventory of my leftovers I had an inspiration to make Halloween themed sandwich spreads.

Trio of Vegan Halloween Spreads from HealthySlowCooking.com made with beans and veggies!

One can of white beans makes all three spreads. Each taste completely different but are similar enough to make all three in minutes. The longest part was waiting for my little food processor to make each one smooth enough.

Pumpkin Spice Cashew Creamer

Pumpkin Spice Cashew Creamer from HealthySlowCooking.com

So by now you know the dirty little secret that most pumpkin spice lattes and syrups have dairy in them. But did you know most of them don’t have pumpkin at all?

The pumpkin spice refers to a blend of spices you use in pumpkin pie. My other pumpkin lattes include pumpkin in their ingredients, so I thought I needed to make one with no pumpkin too. Also if you are not a pumpkin-in-your-coffee kind of person you can still revel in pumpkin spice season!

Super-Scary Spicy Chili Stuffed Jack-O-Peppers

Today is the finale for Roland Foods week and I’m pulling out all the stops. It’s close enough to Halloween to give it a spooky twist! Even if Halloween’s not your holiday no one turns their back on a warm bowl of hearty chili when the temperatures drop. So enjoy it in a scary bell pepper, a plain bell pepper, or even by itself in a bowl.
