So Delicious Gingerbread Cookie Coconut Shake
It’s really starting to feel like the holidays. Bright red berries are popping up on the holly bushes around my house and my Christmas cactus is booming. That makes me get a taste for some traditional flavors – even if they are served in not-so-traditionalforms.
This thick shake made with ground up ginger cookies and vanilla coconut milk ice “cream” makes a great dessert or just a treat to make before you watch Rudolf the Red-Nosed Reindeer for the umpteenth time.

I love Julie Hasson’s new book, Vegan Pizza. In fact I contacted her pr person to get a review copy and since it arrived we’ve been having pizza in our house every week – sometimes even twice. Pear and Apple Cardamom Ginger Muffins
Muffins are a great way to use up bits and pieces of fruit. Heck, even if you don’t have any fresh fruit at all you can add in nuts and dried fruit instead.

Pumpkin Coconut Caramel Sauce
Happy December! It’s gotten really chilly here in North Carolina and even though it’s warming up during the day it makes me want to snuggle up in bed a little longer.
