So Delicious Gingerbread Cookie Coconut Shake

Gingerbread Cookie Coconut Shake from HealthySlowCooking.com

It’s really starting to feel like the holidays. Bright red berries are popping up on the holly bushes around my house and my Christmas cactus is booming. That makes me get a taste for some traditional flavors – even if they are served in not-so-traditionalforms.

This thick shake made with ground up ginger cookies and vanilla coconut milk ice “cream” makes a great dessert or just a treat to make before you watch Rudolf the Red-Nosed Reindeer for the umpteenth time.

Happy holidays!

Pear and Apple Cardamom Ginger Muffins

DSC_0306

Muffins are a great way to use up bits and pieces of fruit. Heck, even if you don’t have any fresh fruit at all you can add in nuts and dried fruit instead.

Plus there’s not an easier breakfast than grabbing a muffin on your way out of the door. Make these on a Sunday night and you have breakfast taken care of all week! Plus muffins are the perfect way to use up the leftover fruit in your fruit bowl.

I love the way muffins come together in minutes and can feed you breakfast, or even dessert, al...

Pumpkin Coconut Caramel Sauce

Pumpkin Coconut Carmel Sauce

Happy December! It’s gotten really chilly here in North Carolina and even though it’s warming up during the day it makes me want to snuggle up in bed a little longer. Plus I can’t get enough hot tea or coffee. Even Max, one of our dogs, is sneaking closer and closer to the fireplace to insure he’s toasty warm. (Don’t worry – he’s not so close he could get burned!)

I hope you’ll join me in a steaming pumpkin spice latte. Today’s recipe blends some of the best flavors of fall into a rich sauce t...

Having a dinner with no leftovers means not spending as much time or money to get it on the table. It simply couldn’t be easier and you make it in your little slow cooker.

In this all in one dinner there is...
