Red Curry Coconut Peanut Butter
I think I’m becoming a bit obsessed with nut butter. Once I made turtle butter I haven’t been able to turn back. This time I wanted to make a savory version. Cheryl brought some peanuts home and I promptly stole some of them to make this Red Curry Coconut Peanut Butter.

Maple Coconut Macaroons featuring Quinoa Flour!
I love macaroons and these are made with quinoa flour giving them a little boost in the nutrition department. They also happen to be gluten-free, soy-free, dairy-free, egg-free, and nut-free making them fit in almost every diet. These macaroons get a flavor boost from some cream skimmed off the top of a can of full-fat coconut milk and a little coconut extract in addition to the dried shredded coconut.

Review: Cheers to Vegan Sweets
Kelly Peloza’s newest book, Cheers to Vegan Sweets, is a concept I can get behind. It’s full of drink-inspired vegan desserts and you all know I love a good cocktail!
The Hazelnut, Black Tea, and Pear Muffins are fantastic! The hazelnuts add texture and a slightly dark flavor along with the black tea leaves that are also mixed into the batter. Apple Caramel Quinoa-Noodle Kugel
If you or one of your guests are avoiding gluten you can still have a sweet kugel with these homemade quinoa flour and flax noodles. The creaminess of the kugel comes from an easy-to-make cashew sour cream. The caramel is made from dates and vanilla, making this a healthy choice too.
