Review: Vegan Ice Cream and a Recipe

Vegan Ice Cream by Jeff Rogers

Since I’ve been trying to keep up with Ice Cream Tuesdays, I was particularly excited about reviewing Vegan Ice Cream by Jeff Rogers. I was invited to be in a review group by the publisher and received this book for free. My opinions are my own and I was not paid or required to write this review.

Be sure to read to the end of this post and enter to win a copy of your own!

Spoiler: I loved the 2 ice creams I made and you can try the Chocolate Pecan for yourself since the publisher granted me per...

Chilled Summer Squash Soup

yellow squash

This year I was determined to grow some yellow squash and zucchini in my tiny garden. I have a ton of sun in my backyard but no good place to put an in-ground garden, soI havean Earthbox garden. It may be small but I have tomatoes, cucumbers, squash, pie pumpkins, eggplants and peppers planted this year plus a slew of herbs.

As long as I’ve had a garden I’ve had squash bugs. I always plant enough for the whole block and end up with barely enough for us. So far, this year, my yellow squash seem...

Hopefully you’ve already taken a peek inside my new book, OATrageous Oatmeals. In fact you can do that right this minute on its Amazon page – just click the photo of the book once you get there.

But included are recipes for Steel-cut Oat Sausage Crumbles, Oat Yogurt, Oat Dosas, creamy soups, stir-fry...

Refreshing Summer Watermelon Ricky Sweetened with Stevia

Refreshing Summer Watermelon Ricky

Watermelon is one of the bestparts of summer. If you’re at all like me you may get a little over zealous at times. If something is priced per piece, or perhaps per watermelon, I am going to find the biggest one in the store – even if I can barely lift it into my cart by myself. I’m just thrifty cheap that way.

Well, it’s only saving moneyif you use the whole thing. I may have over bought on watermelon in the past a time or two (or dozens). You know, those big ones that can’t possibly fit in th...

Eggplant Tapenade from Vegan Slow Cooking for Two

The hot, humid North Carolina summer weatherwears me out froma simple walk around my tiny garden or after a few hours working on the deck. The heat makes me feelless motivated and spend to much time thinking about taking naps.

This is the time of the year that slow cookers are made for.Make dinner while doing other, less heat producing, chores.

While I’m writing this I have 2 cooking away in the kitchen and it doesn’t heat the house up a bit.I’ll be posting more summer slow c...

Easy Vegan Avocado Lemon Basil Pesto

Easy Avocado Lemon Basil Pesto

The good part about this time of the year is walking out in the garden to grab some herbs for dinner or to even plan a meal around what veggie is ready to pick. But with the good there is always the dark side of summer – the heat.

The rising temperatures make me want to eat salad, vegan yogurt and fruit, but doesn’t get me excited about turning on the stove or oven. We do have a grill with a burner that I requested just for times like these, but I guess I forgot I would be standing out in the...
