Chilled soup and salads are what my stomach wants as the temperature rises. Some days are so hot it seems that they only way to cool down is from the inside out.

Super Quick Thai Red Curry


The next time you get a craving for a Thai red curry make this unbelievably easy recipe in less time then it would take to drive to your favorite Thai restaurant.


All you need is a can of coconut milk, Thai red curry paste, some fresh or frozen veggies and some tofu. Really, you don’t even need tofu specifically. Kidney beans, tempeh or rehydrated soy curls would fit in nicely too – each one will hearty up the dish a bit.

It’s almost summer and that means daily smoothies for breakfast at my house. This year Cheryl is having them too and it’s a painless way to get more greens in her everyday!
