Slow Cooker Fall Harvest Butter

fall-harvest-butter-670px

It seems like summer is hanging on with a vengeance. In spite of that I’m cooking soups, stews and pumpkin everything. I keep hoping if it smells like fall in my kitchen that it will bring the temperatures down and make the leaves change a little faster.

This butter is from The Vegan Slow Cooker and is a combo of pear, apple and pumpkin butter all cooked down in the slow cooker with spices to make a thick autumn spread. I use brown sugar and agave to sweeten mine, but you can use your favorite...

Savory Vegan Pumpkin Recipe Roundup

Slow Cooker Pumpkin White Bean Lasagna from The Vegan Slow Cooker by Kathy Hester

Slow Cooker Pumpkin White Bean Lasagnais one of my earliest recipes and it’s still one of my favorites. I’ve actually updated it for a short cooking time because all of my new 4 quart slow cookers run hotter than the ones I had years ago.

It’s great for a weekend dinner and you can even take a nap while it’s cooking!

Vegan Slow Cooker Pumpkin Chick’n Chowder

This Slow Cooker Vegan Chowderhas pumpkin puree hidden in the broth to thicken it up a bit and add some extra nutrition. Beyond Meat’s faux chicken strips would work well in this.

Harry Potter’s Curried Pumpkin Burger

Harry Potter's Pumpkin Oat Burger from HealthySlowCooking.com #vegan #pumpkin #fall

Hagrid takes Harry to get a burger at Diagon Alley in the first Harry Potter book, The Sorcerer’s Stone. In mind this is the veggie burger they would serve there.

I know Harry isn’t vegan, but I bet he’d come over to our side for one of these autumn patties!

Vegan Universal Studios | Diagon Alley | Healthy Slow Cooking | #vegan #harrypotter #halloween

My burger screams fall with pumpkin, rolled oats and white beans making up the body of the burger. Indian spices elevate it to something you want to eat on a bun, on top of sautéed veggies or even with a delicious dal.

In the meantime here a...

Autumn Phyllo Pie with Butternut Squash

Vegan Autumn Fillo Pie with Butternut Squash from Healthy Slow Cooking #CutcoFallHarvest #fallrecipe

I’m taking a tiny detour from pumpkin. Today’s recipe features butternut squash which some of you may argue is close enough. I promise that I’m looking forward to the root veggies ahead and will be giving you recipes for them before the year is out!

Cutco Cutlery sent me an awesome fall harvest basket that included the knife above. This was given to mefor free to use and review. Be sure to keep an eye out for#CutcoFallHarvest on Twitter and Facebook to see what other bloggers thought of Cutco’...

Sonoran Tacos from Vegan Tacos and a Giveaway!

Sonoran Tacos from Vegan Tacos

Sonoran Tacos from Vegan Tacos

When I was asked to review Vegan Tacos by Jason Wyrick I didn’t imagine that a book on tacos could be this extensive. It gives the history of tacos, teaches you to make your own tortillas, a variety of fillings, toppings, sides and drinks too.

Please note that the publisher did give me a copy of the book but all opinions are my own. There are affiliate links in this post which means if you buy through my link I will receive a small commission.

Whole Wheat Bourbon Banana Bread

Vegan Whole Wheat Bourbon Banana Bread by Kathy Hester

I’m on a fall kick and it won’t be too long before pumpkin gets me under its spell. But we all need to remember it’s not the only fall ingredient to get excited about.

Today I want to give pecans inthe spotlight. Don’t worry though, I’ll talk about apples, pears, sweet potatoes and all kinds of winter squash before fall is over.

Manyof you got your copy of OATrageous Oatmeals this week. If you’re in that number, it would be awesome if you would take a minute to leave a reviewon Amazon. I would...
