Slow Cooker Fall Harvest Butter
It seems like summer is hanging on with a vengeance. In spite of that I’m cooking soups, stews and pumpkin everything. I keep hoping if it smells like fall in my kitchen that it will bring the temperatures down and make the leaves change a little faster.

Savory Vegan Pumpkin Recipe Roundup
Slow Cooker Pumpkin White Bean Lasagnais one of my earliest recipes and it’s still one of my favorites. I’ve actually updated it for a short cooking time because all of my new 4 quart slow cookers run hotter than the ones I had years ago.
It’s great for a weekend dinner and you can even take a nap while it’s cooking!
This Slow Cooker Vegan Chowderhas pumpkin puree hidden in the broth to thicken it up a bit and add some extra nutrition. Beyond Meat’s faux chicken strips would work well in this.

Harry Potter’s Curried Pumpkin Burger
Hagrid takes Harry to get a burger at Diagon Alley in the first Harry Potter book, The Sorcerer’s Stone. In mind this is the veggie burger they would serve there.
I know Harry isn’t vegan, but I bet he’d come over to our side for one of these autumn patties!
My burger screams fall with pumpkin, rolled oats and white beans making up the body of the burger. Indian spices elevate it to something you want to eat on a bun, on top of sautéed veggies or even with a delicious dal.
