Ontario announces new restrictions affecting restaurants, bars, and food stores in response to Omicron COVID-19 variant

🕘 3 min read

On Friday, December 17, 202, the Ontario government announced new measures and restrictions in response to the spread of the Omicron COVID-19 variant.

“To further strengthen its response to Omicron and reduce opportunities for close contact as the province gets as many vaccines into arms as possible,” Ontario is introducing a 50 per cent capacity limit for select indoor settings such as salons, gyms and movie theatres. The lengthy roster also includes restaurants, bars, and other food/drink businesses, retailers including grocery stores, malls, meeting and event spaces, tour and guide services, fairs and festivals.

Additional protective measures are also being applied to further reduce the spread of COVID-19 and the Omicron variant at select indoor settings including bars, restaurants and other food/drink establishments. These include:

Establishments must close by 11pm. Takeout and delivery permitted after 11pm.

Alcohol sales permitted until 10pm. Consumption of alcohol in businesses or settings permitted until 11pm.

Limit of 10 guests per table.

Guests must remain seated.

Singing and dancing permitted only by workers or performers.

Food and/or drink prohibited at select venues including indoor sporting events, concert venues, casinos, and movie theatres. bingo halls and other gaming establishments; and horse racing tracks, car racing tracks and other similar venues.

These restrictions go into effect on 12:01am on Sunday, December 19, 2021.

“As the rapidly spreading Omicron variant becomes the dominant strain of COVID-19 in Ontario, it is necessary to apply additional public health and workplace safety measures to reduce transmission, protect our health system and save lives,” said Dr. Kieran Moore, Chief Medical Officer of Health. “We all have a role to play in keeping ourselves, friends, families, neighbours and communities safe this holiday season. Please follow all public measures and get vaccinated with your first, second or booster dose if you have not done so already. Omicron will not take a holiday.”

Stay tuned for updates.

OPEN/CLOSED: Toronto Restaurant News December 16-22, 2021

My iconic OPEN/CLOSED is THE most comprehensive resource of restaurant openings – virtual, brick-and-mortar, pop-ups, allll the things - and food/drink news in the city. No one does it bigger or better. Watch for the drop every Thursday. #ifyouknowyouknow

🕘  10 min read

This week’s 18 arrivals are from all over the GTA. That goes for cuisines too. Which is ideal for times like these when you crave something specific, yet still want a selection to choose from.

As the industry faces another difficult holiday season, whether you choose to dine out, pick up or order in, please support local establishments - both new and time-honoured - whenever possible. Your purchases can make the difference in keeping doors open another month.

Here’s the very latest:

OPEN

Need more birria in your life? Same. Good news: Kensington’s Birria Catrina’s (214 Augusta Ave.) newest development opens Saturday and is right downtown at Yonge & Dundas (World Food Market - 335 Yonge St.). Bonus: A mariachi band will perform 3-5pm.

I’ve been tracking the rapid expansion of Brasa Peruvian Kitchen since earlier this year. The latest spot to get your hands on healthy Peruvian bowls, salads and avo toast? In the heart of the Financial District at First Canadian Place (100 King St. W.).

Hot tip: Café Plenty just landed in Midtown between Eglinton and Davisville (1967 Yonge St.) with a mixture of prepared items and pantry essentials.

Chainsmoker, home of “authentic urban halal BBQ” just launched Carne Cartel (821 Brimley Rd.) in Scarborough. The new concept and menu is also halal.

Can’t stop, won’t stop. Chicken Plus + arrived in Scarborough this summer, followed by softly opening on December 1 in Mississauga (2560 Shepard Ave., Unit 4).

Uni-packed and chirashi stuffed boxes are just a few specialties at the new takeout only Cho San Sushi (8374 Woodbine Ave., Unit 7) in Markham.

Tomorrow’s grand opening celebrations of Cinnaholic in High Park (2190 Bloor St. W.) includes $1 Cinnamon Rolls from 10am to 2pm (one per customer). If that’s not fab enough, did you know their fresh baked goods are 100 per cent vegan and free of dairy, lactose egg and cholesterol?

Coach House Shortbread Co. is back! At least temporarily - where Gordons Pub Kitchen used to be. Fun fact; The Leslieville digs aren’t far from their old stomping grounds on Carlaw (235 Carlaw Ave.)

Daddy O’s Pasta (673 Spadina Ave.) might have concluded service after 15 years this fall, but it lives on in pop-up form Saturday night at 6pm onwards.

It’s been a banner year for the El Mocambo (464 Spadina Ave.). The revelry continues with their official store, in Yorkville (101 Yorkville Ave.) of all places.

Looking for fab holiday and entertaining gifts from local businesses? Christina and Jon bring farmers’ market feels to Cabbagetown with their shop The Great Mallard (503 Parliament St.) featuring local producers and purveyors.

‘Merica’s iconic fast food chain In-N-Out Burger popped-up at Toronto’s oldest bar, The Wheatsheaf Tavern (667 King St. W.) this afternoon. Of course the lineup was insane.

La Nectarine (1588 Dupont St.) has moved into Love Chix’s old spot in the Junction Triangle. The new French resto helmed by chef David Adjey - Food Network Canada host (recently The Opener series) and restaurateur (recently The Chickery) – offers the classics: Warm Mushroom Salad ($17), Duck Confit ($21), Coq Au Vin Rouge ($25), Steak Frites ($33).

Sam Osmow’s namesake Canadian chain featuring healthy-ish Mediterranean fare has branched out to Leslieville (861 Queen St. E.).

Mini Basque Cheesecakes and rotating daily specials are happening at Patco Cafe’s pop-up in Mississauga. Find them at Square One’s The District Kitchen (100 City Centre Dr.) until January 8.

Not long ago I uncovered the first TasteT House. The bubble tea shop concept inside The Basil Box can also be found at the Ryerson location (351 Yonge St.). Psst. Enjoy 25 per cent off all drinks from 11am-10pm during their soft opening.

Trap Mart (702 Queen St. W.) opened earlier this week, claiming to have “Toronto’s largest selection of rare & exotic snacks.” Is that accurate? There’s only one way to find out.

Pork bone soup (aka gamjatang) is just one of the many winter warm-ups on offer at Richmond Hill’s new 88 Palpal Gamjatang (420 Highway 7 E, Unit 26).

CLOSED

Chef Kareema the restaurant debuted at Dundas and Jarvis during the pandemic. Doors closed at the end of September, but Chef Kareeema the powerhouse is still cooking up a storm.

TR Newsletter subscribers were the first to know: Celebrity chef Mark McEwan's grocery store at Yonge & Bloor (1 Bloor St. E.) closed Saturday. Two locations remain open: TD Tower and Shops of Don Mills.

The CN Tower (290 Bremner Blvd.) is temporarily closed due to “falling debris.”

The Sweet Oven Beaches location (1911 Queen St. E.) may be done, but various locations across the province are ready to serve you.

Note: Select establishments in Toronto/GTA are choosing to temporarily close indoor dining or suspend all operations at this time.

NEWS

Finally. But is it enough?

As Omicron cases are on the rise, public health units in Ontario have added restrictions for restaurants including: Bars and restos in Windsor have to reduce capacity limits indoors again down to 50 per cent and Kingston limit hours for indoor dining. The Town of Kingsville in Windsor-Essex is asking the government to reconsider. One of the measures added in Peterborough: one table permitted at the buffet at a time.

Buckle up. Food prices are also going to increase.

Congrats to the winners of last week’s Canadian Brewers Choice Awards including Mary Beth Keefe of The Granite Brewery for winning ‘Brewer of the Year.’

Speaking of beer, Steam Whistle Brewing and Beau’s Brewing Co. are “stronger together.”

It turns out, 2022 will see its fair share of openings as well. The local chain with celebrity chef Matty Matheson is set to launch a spot at Bloor andDovercourt - 995 Bloor St. W., formerly home to the craziness that was Garfield Eats. You know what to do. After last week’s all-time record-breaking edition, you might expect a bit of a lull. Nope, as you can see by this week’s 22 arrivals

Pro tip: Read to the end for valuable news and FREE FRIES!

Here’s the very latest:

OPEN

Welcome back Adriano's Pizza (3329 Lakeshore Blvd.). The Etobicoke pizzeria reopened Tuesday after a fire broke out last week.

Seafood City Supermarket’s Scarborough outpost (20 Lebovic Ave,) debuted Bakers Avenue, their in-store panaderia boasting pan de sal, ensaymada, biscocho, and sans rival, on November 18.

Basil Box launched a ghost kitchen at Victoria Park and Danforth (3003 Danforth Ave., behind Metro) earlier this week offering menu items from both their Southeast Asian street food lineup as well as comforting fare from their sister concept Street Kitchen by Basil Box. Attn night owls and shift workers: this location’s open ‘til 3am.

Breaking: Toronto just got a secret vegan restaurant inside a formerly secret bar! Discover Classico Vegano & Bodega under the same roof as Classico Taqueria (423 College St.) that popped up in May. Tuck into vegan Mexican comfort fare by head chef/co-owner Abel Páez such as Mushroom Tinga ($6), Seitan Gordita ($8), Sopa de Milpa ($8), QuesaBirra ($18), and Churros ($9). Items are available virtually and indoors at Hush Hush Bar that relocated this summer after launching in 2019.

Twice as nice. Sunday's the grand opening for FK Dulce Bakery, where you'll find a selection of Filipino-inspired donuts (Ube, Bavarian Creme, Leche Flan, Butternut), cakes, other confections, and get this - flavoured fries. Bonus: The family-owned spot in North York is hidden inside new Tropa Filipino Variety Store & Takeout (3418 Bathurst St.) featuring Filipino groceries, street food, and hot food to go. p.s. TR Newsletter subscribers got the intel first. Don’t miss out: subscribe now.

Sandra Danso-Boadi, self-taught baker and competitor on Food Network Canada’s Spring Baking Championship Season 6, debuted a stunning brick-and-mortar Fruitilicious Cakes bakery and luxury café in Mississauga (1365 Mid-Way Blvd., Unit 13)  last month.

GoodGood (410 Adelaide St. W.) is a modern day convenience store. Think: local goods including coffee, beer and snacks available for pickup and/or “instant”delivery. The pop-up/commerce company founded by Robert Kim and Kris Linney recently raised 6.5M and will announce the opening of a series of café and wine bars in the 6ix early next year.

If you’ve been reading the OPEN/CLOSED lately, you’ll know Kensington’s been transforming this last while. Check out fab new butcher Kensington’s Caribbean Meat (147 Baldwin St.), with an array of meat, seafood and spices.

Chef John Placko's molecular techniques and creations have been on my radar for years (edible helium balloons, lipstick that looks good enough to eat, and is!). One of his signature chocolates, the aforementioned Strawberry Lipstick, along with Aussie sweets (Lamington Bon Bons!) and other unique delights (Chocolate Ice Cream Bomb: Milk chocolate shell, hot chocolate mix, freeze dried chocolate ice cream, mini marshmallows, topped with mini chocolate crispies) are available at his new KOCO Chocolate Company, popping up at Murphy's Ice Cream Parlour (9 Main St.) in Streetsville from December 14-23, in addition to online and other IRL locations including Good Behaviour.

Last week I uncovered the numerous ghost kitchens at 20 Lockport Ave. in Etobicoke. Add The Late Shift Diner (and Tut’s - see below) to the list. In addition to the usual suspects (hot dogs, burgers, and poutine) find Grilled Cheese on Rye ($4.95), Corn on the Cob ($2.95), and a half portion each of Fries and Onion Rings ($4.95) dubbed ‘My Girlfriend/Boyfriend is not Hungry’ on the menu.

Fun factL Yes there really is a Madame Saigon. Her name is Trang and she’s showcasing her and her family's recipes at her new restaurant at Kennedy and Sheppard.

It’s all about new concepts at Awai Hospitality Group (Avelo, Pizzeria Du, M!LK). Last week I let you in on M!LK’s recent changes. This week marks the arrival of Osteria Du (536 Queen St. W.), a plant based Italian concept offering a four-course prix fixe (currently: starter, pizza, pasta, dessert $60 weekends/$50 weekdays), available in the garden-themed dining room.

SOI Snacks at Kings Square Mall (9390 Woodbine Ave., Unit 1FC15, Food Court) in Markham is the latest iteration of SOI Thai Street Food (later, new concept Shanee) that was once on College in Little Italy. This time ‘round, you’ll find Thai snacks (fish balls, pork bone curry with vermicelli) and Toronto’s “first” Thai Pizza.

Lawrence Park’s STACK Restaurant softly opened a second Southern BBQ joint at Oakville Place (240 Leighland Ave., Entrance 3). Fun fact: Pearl Chinese opened there in October, followed by The Joy of Pho.

Chef Oyy is cooking up a storm at Etobicoke’s Thammada Thai Cuisine (2888 Lake Shore Blvd. W.), with halal, gluten-free and vegan options available.

After securing a spot at King and Portland in 2020, Tut’s Egyptian Street Food has taken the city by storm: Little Italy in October, a virtual kitchen in Etobicoke (20 Lockport Ave.) three weeks ago, followed by a brick-and-mortar eatery in Mississauga (755 The Queensway E.) earlier this week.

The downtown location of Meat & Pie Co. (212 King St. W.) is kaput, thanks to a 79-storey structure on the books. The Mississauga outpost (10 Kingsbridge Garden Cir.) remains open.

I came up through the ranks at Centro, Bistro & Bakery Thuet, Locanda Sandi, Osteria Murivecchi, Lucien, Woodlot, Ursa, and ProvisionsTO.  I also had a period of doing pop-ups between 2011-2013 that got my name out there as one of the first chefs doing contemporary Filipino cuisine in the city.

Favourite dish to make right now

Filipino spaghetti.  It’s a dish I used to do in my pop up days but haven’t cooked it in like 8 years till now. Traditionally it’s a very sweet tomato, ground meat and hot dog ragu over spaghetti. My version though is a bit more balanced.  I make caramel as the sweet base for a deeper flavour and season the beef and hot dog ragu with cane vinegar, hot smoked paprika and butter.  It’s topped with cheddar, scallion and a Cheez-It cracker crumb for texture.

Last cookbook purchase

Mastering Pasta: The Art and Practice of Handmade Pasta, Gnocchi, and Risotto by Marc Vetri

Have you read it/tried any recipes

Yes. I’ve read through most of  the sections on his methodology of pasta making. I don’t usually cook recipes from books unless it’s dessert/baking related. I do get inspired by techniques, methods and ingredients and can incorporate them to my dishes.

One dish or ingredient you’d like to see gone from menus

I can’t really think of anything right now that offends me like that.

And one dish or ingredient that you’re excited about right now and would like to see on more menus

Not a dish or ingredient, but I love seeing more cooks and chefs cooking what they love. Cooks learning in great restaurants then cooking the food of their culture or what they grew up on or passionate about usually creates delicious and original takes on dishes.

Filipino Spaghetti.

Biggest influences

Of the chefs that I’ve worked for it’s Marc Thuet (Bistro & Bakery Thuet), David Haman (Woodlot), and Scot Woods (Lucien).  Of course I’ve been influenced by the food growing up cooked by my mom and aunts and make dishes inspired by those memories.  The biggest influence on my style of Filipino cuisine is Romy Dorotan and Amy Besa of Purple Yam.  I ate at their former restaurant in NYC in the mid 2000s and that was the first time I saw Filipino dishes being plated a la carte and not in steam tables, so that was very inspiring. Then I bought a copy of their book Memories of A Philippine Kitchen and that was a game-changer for me.

If you could eat at any restaurant in the world

Asador Extebarri in Axpe, Spain. This was the best restaurant meal I’ve ever had and would love to go back.

Last thing you ate

Mushroom and Celeriac Arroz Caldo.  It’s my vegan dish on the menu. When one gets ordered I always cook a little bit extra to get a couple bites in - it’s pretty tasty.  Arroz caldo is the Filipino version of congee which is a real nostalgic dish for me and perfect for this weather.

Three must-have ingredients always in your fridge

Garlic, Onions, Sichuan Chilli Oil.

Guilty pleasure

Desserts of all kinds.

Top 3 favourite Toronto restaurants

Lake Inez - I will always love this place. Jay Moore took over from me and he’s serving some very delicious and creative plates.  Amazing and thoughtful service as well from Zac Schwartz and team.  Ask about the mystery patio tasting menu.

Mineral - Amazing takes on Filipino and Pan-Asian cuisine. Daniel Cancino is establishing himself as one of the best chef’s in the city.  The Grilled Pork Neck Lettuce Wrap is just one of the many tasty items here.

Hot Dip - Jonathon Lucas makes real delicious roast beef sandwiches here. My fave is the beef on a pretzel bun with a cheese dip. So good.

Top 3 favourite Toronto bars

Cold Tea, Seoulshakers, SariNotSari.

Arroz Caldo.

Go-to drink

Club soda with lime.

One habit you have in the kitchen that you should lose, but can’t seem to shake

Not keeping a record of my dishes and recipes.  I’ve been getting better these days but I’ve forgotten so many I’ve made over the years.  I’ve had to text former cooks to get an old recipe and jog my memory of dishes. Ha ha.

And one habit you have in the kitchen that will inspire young chefs

Really thinking out dishes.  Making sure it works on all levels like does it taste good? Does it have contrasting textures? Do all the components make sense?  Does the dish take too many steps and time to send out?  Then making adjustments to improve them.

Hidden talent

I’m pretty entertaining at karaoke. Entertaining, not good - ha ha.

Best career advice you ever received

To bring more of myself to work every day. That was from a restaurant critic’s review of my first chef gig.  At that time I didn’t have the juice yet to be given full creative control of a menu. That review gave me the confidence that there was an audience for my style out there and to work where I was given that opportunity. The best food comes from cooking with your heart.

Worst career advice you ever received

Nothing really, there’s something to learn from everything. Bad advice can light a fire under you.

Your advice for a young cook starting out in the business

There’s gonna be a lot of mistakes and growing pains from lack of experience.  Push through and continue to grow and learn.  Work at places where they are happy to teach you.  Always taste your dishes before sending it out. Eat out and travel to create a taste memory bank in your mind.  Read cookbooks.  Take care of your health. Create a work/life balance for yourself.

In order to support chefs during this time, the monthly At The Pass series is now WEEKLY. Know someone in Toronto or GTA who should be featured? Submit their name for consideration. And yes, you can nominate yourself.

OPEN/CLOSED: Toronto Restaurant News November 25-December 1, 2021

Photo courtesy of Four Brothers Pizza.

🕒 12.5 min read

With emergency orders extended until March, you’re going to need a lot of comfort fare this season. Luckily, you’ll find heaps in this week’s 25 arrivals. And this Sunday marks the beginning of Hanukkah. Peace and happiness to all.

In the meantime, here’s the very latest:

OPEN

Agha Turkish Restaurant & Café (1971 Lakeshore Rd. W.) in Mississauga offers a host of Turkish fare including appetizers, salads, kebabs, doner pide, pasta and casseroles.

Despite reports claiming Bao Sandwich Bar debuted in Mississauga a few weeks ago, doors opened Tuesday (4310 Sherwoodtowne Blvd., Unit 5) . Grand opening specials this week include 15 per cent off orders and $3 off any combos.

It’s been a quick and steady rise for bb.q Chicken. The ascent continues with an outpost at Yonge & where OJA (689 Yonge St.) stood until recently. Doors are set to open Saturday.

As BEAR Steak Sandwiches was operating out of a backyard this summer, moving indoors became imperative this season - hence a temporary pop-up at Chef’s Hall (111 Richmond St. W.) starting tomorrow. Find them in their new digs Fridays and Saturdays until the end of the year.

Boxcar Social doesn’t waste any time: After unveiling a striking destination at The Waverley last month, another gem - this time in a laneway in Little Italy (298 Markham St.) - softly launches Saturday. It gets better: this location is employee owned and operated.

Spotted: A new Carlo’s Bakery ATM at CF Toronto Eaton Centre (220 Yonge St., Level 1, near Steve Madden).

Korean fried chicken (KFC) and soju is what’s up at Richmond Hill’s newest arrival, Chimax Canada (10620 Yonge St.).

TR Newsletter subscribers were the first in on the latest hidden spot in the 6ix. Find top Toronto coffee shop and roaster Sam James Coffee Bar inside the chic new Flower Shop By Wolf & Moon (1134 Yonge St.) in Rosedale. Also on offer: local faves including fresh scones by The Sovereign and cookies by Lindsey Bakes. Did you know? The new shop is located around the corner from the brand’s equally chic boutique Wolf & Moon that debuted last November.

Foodie Aisle features five vendors at Union Station (65 Front St. W., located off the Bay Go Concourse).: Butter Chicken Roti, Grand Tacos Taqueria by Manotas Organics & Latin Fine Foods, Mean Bao, Mikey's Smashburger, and Union Chicken. The concept currently open with an  official launch to follow Monday, is according to a spokesperson, around for the “long term.” Deep dive: Open Concept Hospitality (also known as OC Hospitality) a “full service restaurant group” behind Union Chicken - already operating as a large restaurant within Union Station, has Amano Italian Kitchen which opened in Union Station in 2017, and QSR (quick service restaurant) concept Mikey's Smashburger in its portfolio, not to mention The Queenston said to take over approximately 10,000 sq. ft., when it opens on the premises next year.

Four Brothers Pizza adds to its roster with a poppin' bottles debut in the Fashion District (540 King St. W.) on Saturday. The pizzeria known for stuffed pizza skulls and famous guest appearances (a contestant from The Bachelor, Scott Disick from Keeping Up with the Kardashians) has eateries in Mississauga and Oakville, with the King and Brant pop-up set to last at least a year.

ISO Hong Kong fare? Head to Huntingwood Square in Scarborough. The HKG Chinese Cuisine (2598 Birchmount Rd.) boasts a wide-ranging menu, featuring dishes such as Lobster in Garlic, Pea Sprouts with King Mushroom, Double Boiled Chicken with Chinese Herbs, and Braised Ox Tail in Hot Pot. Hot tip: TR Newsletter subscribers got the scoop earlier. Don’t get left behind, subscribe now.

The Etobicoke outpost of Holy Cannoli (1 Thirtieth St.) launched Friday.

Chef Faye and husband Chris of Filipino fusion food truck The Hungry Moon debut their first brick-and-mortar eatery in Scarborough (4190 Kingston Rd., Unit 6) this weekend. Grand opening celebrations for the space-themed resto take place Saturday. Enjoy 20 per cent off your order and discount codes for your next visit.

Mango Like Dessert, a café inspired by the sweet stone fruit, softly opened a third location at Square One (100 City Centre Dr.) on Monday.

Holiday-themed pop-up bar Miracle on Bloor St. (875 Bloor St. W.) kicks off today.

The name says it all: Port Credit Pizza e Dolci (252 Lakeshore Rd. E.).

Southwest cantina Rabbit! Rabbit! Rabbit! (461 King St. W.) popped up in patio format this summer, but has found a permanent home right next door, where The Green Wood once stood (before shutting down both locations earlier this year).

The first RC Coffee Robo Cafe landed at Bay and Bloor last September. Since then, there’s been a frenzy of “robot baristas” in the downtown core. Find the latest machine pumping out coffee 24/7 at Toronto General Hospital (200 Elizabeth St., Food Court).

Pancakes usual hog the spotlight, but it’s the thinner iteration stealing  the show thanks to Sava Crepes at Yonge and Blythwood (2674 Yonge St.) boasting sweet and savoury selections.

Tiki Christmas bar Sippin' Santa (866 Bloor St. W.), sibling to holiday watering hole Miracle on Bloor St. across the street, launches today.

Need a boba fix? Head to Suntea (29 St Joseph St.) at Bay & Wellesley.

CLOSED

Monday is the final day for burgers, fried chicken and poutine at Billy’s Burgers (99 Pape Ave.) in Leslieville

Bonafide, a “Mediterranean influenced” tapas and cocktail bar, has shuttered in Kensington (209 Augusta Ave.).

You’ve got until Tuesday to say farewell to everyone at Boutique Bar (506 Church St.), a fixture in the Village for 11 years.

Pho King Fabulous held a spot at Yonge & Eglinton (2409 Yonge St.) for seven years before calling it quits.

According to the folks behind Queen West’s 817 Sports Bar & Grill (817 Queen St. W.), the pandemic is to blame for the closure.

EVENTS

Celebrating American Thanksgiving this weekend? Hemingway’s and House on Parliament are serving up turkey with all the fixins.

New York City is one helluva big town. So when I discovered my weekly findings came in way over their arrivals last week, it was a shock. I don’t know if it’s a frequent occurrence or not, but it proves what I’ve been saying all along: there’s been a seismic shift in the landscape here in Toronto and GTA, resulting in an explosion of new launches and expansions. And this week is no exception: Behold 21 arrivals.

Stay tuned: more news coming your way in The Tip Off, exclusively available in the TR Newsletter. In the meantime, here’s the very latest:

OPEN

TR Newsletter subscribers heard it first a few weeks back: Celebrity chefs Matty Matheson and Rang Nguyen are opening Cà Phê Rang (147 Spadina Ave., Unit 109), a bánh mì destination where Birria Balam (predecessor to Fonda Balam) perched until mid-August. Their friendship goes waaay back: Red Seal Chef Rang trained the prolific restaurateur and Just a Dash host at Le Sélect Bistro (now shuttered) 19 years ago. Update: Doors officially opened Tuesday, with the talented Coulson Armstrong at the stove.

When one Thai restaurant closes, another opens - at least that’s the case with Chiang Mai Thai Kitchen + Bar (353 Danforth Ave.) near Chester Station. However, don’t mistake the eateries for one another - their approach and menus are quite different.

Today marks the official opening of Dear Grain (48 Ossington Ave.), though the soft launched occurred over the weekend. The “sourdough studio” and first standalone retail location in the 6ix is your HQ for all things sour and tangy, including their signature loaves and seasonal pastries. Want to make your own? Pick up ingredients and equipment while you shop. Pro tip: Get there early. It’s sure to be one of the busiest spots on the strip.

El Prince Shawarma & Bakery softly opened in Mississauga (3050 Artesian Dr.), with grand opening celebrations to follow.

A health-centric market just landed at Jarvis and Dundas. Sibling-owned Esra’s (237 Dundas St. E.) specializes in “organic, local, fair-trade and zero waste” products, sourcing “everything from Ontario farmers,” in addition to ethically sourced imported goods. Shop produce, pantry items, spices, cold press juices, smoothies, fair-trade coffee and other good stuff under one roof.

Fussion Sushi (160 Baldwin St., Unit 74) debuted in Kensington on Thursday with a lineup of rolls featuring unique sauces, such as Passion Fruit (shrimp, cream cheese, and cucumber topped with passion fruit sauce - $14/10pcs) and Crunchy (deep-fried shrimp and avocado roll, finished with creamy oregano sauce $15/10pcs).

Giovane Caffè, a concept out of Vancouver “inspired by the modern Italian caffè,” debuted at Shangri-la Hotel Toronto (188 University Ave.) earlier this week.

TR Newsletter subscribers are already in the know, but for those out of the loop, here’s a quick recap: Nashville Hot Chicken has been a hot commodity both globally and locally for some time now and the spicy chicken trend shows no signs of slowing anytime soon. The newest entry, Hanleys Nashville Hot Chicken, just launched a virtual kitchen inside La Carnita in Leslieville. Did you know? Just down the street: Dave's Hot Chicken that replaced neighbourhood fixture Stratengers on October 1.

I've been chronicling the debut and swift expansion of Hazukido for a year now, and the excitement continues: The popular croissanterie  introduces their latest shop in North York (5315 Yonge St.) this weekend. Doors open Friday and  Saturday at 10am. Psst. The first 30 customers receive a box of three croissants (custard, honeycomb, truffle crab) and the next 50 customers enjoy a BOGO croissant offer (up to one free croissant of less or equal value). *All promotions are limited to one per customer.

North of Brooklyn Pizzeria’s outpost at the corner of Greenwood and Danforth (663 Greenwood Ave.) has been in the works for some time. Psst east enders: You can get your hands on their New York-style ‘za  now.

Bloordale’s newest occupant does modern Korean fare alongside an array organic and natural wines and other libations. Find Orote Restaurant (276 Havelock St.) near Dufferin right off Bloor.

Pastucci’s - aka “Canada's first build-your-own-pasta bar” - softly opened eatery number three on St. Clair (55 St. Clair Ave. W.) between Yonge and Avenue Road.

Saturday’s grand opening for the third Poke Guys in the GTA (2904 Highway 7, Unit 107, Vaughan) includes a BOGO offer on any food item.

Sweetie Pie has be busy building an empire, particularly in 2021. The momentum continues with a destination in the Distillery (6 Case Goods Lane), just in time for the holidays.

Takoyaki6ixs founder, Chef Kaori Hisada cooked in restos downtown (Hothouse, The Sultant’s Tent & Cafe Moroc, Konnichiwa, Toshi Sushi) before launching a takoyaki stand featuring the popular Japanese street food. Popping up in and outside various spots in Kensington last year, the eatery finally has a permanent place to serve the and call home (160 Baldwin St., Unit 5), though is currently operating out in front until the interior is complete.

The Thirsty Elf, Fairmont Royal York’s annual holiday pop-up (100 Front St. W., Avenues Level) kicks off tomorrow. The kitschy bar event is on until December 18.

This is definitely a first: Hidden away in food court in a home improvement mall* in Vaughan lies a new Peruvian resto-bar. Tupak Restaurant (Improve, 7250 Keele St., Unit 407, Entrance B) debuted a few weeks ago with a selection of appetizers (Anticuchos - grilled beef heart kebobs marinated in Peruvian spices, served with potatoes $15), ceviches ($16-$27), mains ($23-$27), and lunch specials (Asado en Pure de Espinacas - Peruvian style roast beef accompanied by green mashed potatoes and house sauce $19). Redoing the kitchen just got a little easier. * Apparently not only is it a thing (who knew?), it’s “Canada's largest home improvement centre.”

Venom Coffee (91 Lewis St.) has set up shop in Riverside with a host of goodies including scones, danishes, croissants, and bomboloni.

It’s been less than two months since Vivo Pizza+Pasta added to its roster , but it’s full speed ahead for the Italian chain. The stellar digs at College and Bay (832 Bay St.) welcomed customer earlier this week. The official opening party – open to the public – takes place tomorrow. (Remember when the expansive space with 30+ ft. ceilings and sky high windows was home to another pizzeria back in the day, Via Vai?)

In the mood for braised chicken pot and Chinese rice noodles? You’re in luck: Yunshang Rice Noodle and Yang's Braised Chicken Rice have opened together at New Kennedy Square (8380 Kennedy Rd., Unit C2-C4) in Markham. Win-win.

EVENTS

The Distillery Winter Village opens today, running until December 31.

Bar Neon’s Winter Market launches Sunday at 6pm with a tree lighting ceremony.

Tickets are on sale for Holiday Street Market taking place at Scarborough Town Centre every weekend in December.

Patachou Patisserie, Nadège Patisserie, Buca Yorkville, CXBO Chocolates

Favourite dish to make right now

Ha. I’m not much of a cook at all,  but I think I’ve nailed my steamed spareribs with black bean sauce! Pastry wise, hand laminating croissants at home. That got me through the entire COVID-19 lockdown.

Last cookbook purchase

Baking At République: Masterful Techniques And Recipes by Margarita Manzke and Betty Hallock

Have you read it/tried any recipes

Yes, but no. This just reminded me I have bookmarked some recipes I wanted to try.

One dish or ingredient you’d like to see gone from menus

I personally don’t like anything that tastes bitter or mustardy… so I’ll have to say mustard or wasabi. Maybe both, ha ha.

Disco Egg at CXBO. Hand painted with coloured cocoa butter and casted with dark chocolate, lined with ancho chilies, ground coffee and dried apricots, then filled with aerated milk and white chocolate.

And one dish or ingredient that you’re excited about right now and would like to see on more menus

Yuzu inspiration from Valrhona.

Biggest influences

Antonio Bachour, Cedric Grolet, Dominique Ansel.

If you could eat at any restaurant in the world

So many for obvious reasons. But I really like street food and asking locals about their favourite spots when I’m travelling. I’ve had the tastiest bowl of pho from a street vendor while sitting on a stool on the sidewalk in Vietnam! I love experiences like that.

Last thing you ate

Beef patty from Randy’s.

Three  must-have ingredients always in your fridge

Eggs, Butter, Sriracha.

Guilty pleasure

Ruffles Sour Cream & Onion Chips! Oh and Spicy Big Crunch Sandwich from KFC.

Top 3 favourite Toronto restaurants

Bar Isabel, Pho Linh, Shoushin

Top 3 favourite Toronto bars

Done Right Inn - My boyfriend and I love going there for cheap beers and dive bar vibes! Nice Nice, Cold Tea

Crossiant. Hand laminated and baked at home during lockdown. Experiment with Prairie Hard Red Flour from Brodflour  and used Cows Creamery Butter with 84 per cent fat.

Go-to drink

White or Rosé.

One habit you have in the kitchen that you should lose, but can’t seem to shake

Not eating enough proper meals or forgetting to drink water!

And one habit you have in the kitchen that will inspire young chefs

I’m generally very tidy and organized. “Clear space = clear mind.” was said to me by Dawn Nita back at CXBO and I couldn’t agree more! Especially in a kitchen.

Hidden talent

I can pipe words as neat as my handwriting. Does that count? [Editor’s note: Absolutely!]

Best career advice you ever received

“You don’t learn by doing everything right.” - chef from my first pastry job.

Worst career advice you ever received

“You need to be more aggressive and intimidating as a leader.”

Your advice for a young cook starting out in the business

Be humble. Observe and listen to instructions before getting ahead of yourself. Always work clean and tidy. Fold your towels. Stay organized by writing/planning out your prep list to be the most efficient. Also to never be so hard on yourself! Mistakes becomes improvement and always keep an open mind. There’s always something new to learn from someone and everyone.

In order to support chefs during this time, the monthly At The Pass series is now WEEKLY. Know someone in Toronto or GTA who should be featured? Submit their name for consideration. And yes, you can nominate yourself.

In this week’s 31 discoveries, you’ll find mostly mall openings, pop-ups, and expansions - something you're going to see a lot more of in the coming weeks and months. And heaps of caffeine and comfort food - which you’re going to need lots of, thanks to Daylight Savings Time.

Here’s the very latest:

OPEN

Another Wing - a collab by American Grammy-winning artist and producer DJ Khaled and REEF, the “largest operator of parking real estate and delivery restaurants in North America” with 5,000 locations. Last week, the virtual resto launched over 150 locations across three continents simultaneously, including UAE, U.K., France, United States, and Canada (Toronto boasts 12 locations to order from), making it the “biggest restaurant launch in history” according to REEF. Despite an ongoing chicken shortage in the States, the chain offers chicken wings alongside boneless varieties, sides and sauces. #BlessUp #AnotherOne #WheresTheChicken

Primose Bagel Co. (317A Oakwood Ave.) expands with The Bagel Hole (1265 Dundas St. W. - entrance on Dovercourt next to Extra Burger) with an array of sammies, soups, snacks and drinks.

Authentic Texas BBQ joint Beach Hill Smokehouse found a desirable spot in the High Park nabe (2190C Bloor Street W.) Doors open Saturday at noon for the first westside (third in Toronto) outpost. Pro tip: Get there early – the first 100 customers get one free brisket sando.

Thick, crunchy, cheesy, Motor City style pan pizzas are the name of the game at Big 3 Detroit Style Pizza (555 Church St.).

Burgers are the focus at Scarborough’s halal Burger X (1760 Lawrence Ave . E.) , but you’ll also find chicken, a cheesesteak, and hotdog.

CoCo Fresh Tea & Juice is celebrating the new Markham location (5221 Hwy 7, Unit 100) . Enjoy 15 per cent off all drinks until November 30. (Available only at this location.)

Got plans tomorrow at 10am? You do now. Head to Yorkdale for the grand opening of Craig's Cookies - the fifth of Craig Pike’s eponymous shop to launch in two years, almost all of them during the pandemic. Next stop: Newfoundland!

Dineen Coffee Co. moved into York Mills Shopping Centre at Bayview and York Mills (311 York Mills Rd.). This marks the fourth venue for the ‘grammable boutique coffee house from the 6ix.

The sixth Fuwa Fuwa Pancakes officially opens Saturday in Mississauga  (The Golden Square Centre - 1177 Central Pkwy. W., Unit 7). The Japanese soufflé pancake chain’s last expansion took place in August. Grand opening special: Saturday and Sunday from 12pm-5pm, purchase a Signature Soufflé Pancake and receive an additional dessert for free.

Hale Coffee has been super busy the last few months. Psst. The excitement continues with a new shop in Mississauga’s Square One (100 City Centre Dr.).

Halibut & Tea House (3238 Yonge St.) serves up a real hodgepodge – fish and chips, fried chicken, egg waffles, Thai ice cream rolls, bubble tea - in Gamberoni’s old digs. Fun fact: The Italian resto moved across the street last year.

Hi Yogurt debuted their farm-style cold-brew yogurt drinks in Mississauga a few weeks ago. Now it’s Yonge and Finch’s turn (5440 Yonge St. Unit 2).

Speaking of dairy drinks, Holy Shakes touched down in Vaughan (5100 Rutherford Rd., Unit 13) with“nostalgic and sexy” milkshakes. Discover 100 gourmet fusion milkshakes in retro glass milk bottles and FreakShakes, cake jars, cake slices, dessert boxes, and more. That’s not all. “Indian mash-up” T.O.'s Kathi Roll Eatery is also on-site with Punjabi Tacos, Butter Chicken Baos, “roadside” burgers, fried burrito , Chili Momos on cheesy Tandoori noodles, and other fusion fare.

The third Latin World just opened (1262 Bloor St. W.), conveniently across the street from their Bloordale outpost near Landsdowne.

In addition to 18 signature pizzas, you’ll find a smattering of salads, entrees and desserts at Pizza Nest (152 Lakeshore Rd. E.) in Oakville.

From the folks behind Yonge & Eglinton’s Sip Wine Bar (2 Broadway Ave.) comes Saporito Caffe, an Italian-style bar and cafe located just around the corner (2389 Yonge St.).

Keep the Diwali festivities going with traditional Indian treats from Toronto Sweets & Snacks (7885 Tranmere Dr.) at Dixie and Derry Road in Mississauga.

The windows of Chamsine (537 St Clair Ave. W.) at St. Clair and Bathurst are papered up.

You’ll be hard-pressed to find somewhere that serves  “The Ultimate All You Can Eat Breakfast” now that Mississauga’s Muddy Duck (2200 Dundas St. E.) gone. The eatery permanently closed Sunday after 43 years.

Oja Noodles House (689 Yonge St.) has been a fixture at Yonge and Bloor for what seems like forever. Guess who’s moving in? bb.q Chicken, continuing a rapid expansion downtown this fall.

Shish Kabab Express (112 Dundas St. W.) held steady at Dundas and Bay for years before being replaced by big surprise, a cannabis shop.
