It's not a diatribe against corporations, or even food corporations! So far, Moss looks at the optimization tools that food scientists use to maximize flavor and minimize cost, the long-range tactics they used to replace highschool Home Economics classes with ads for pre-packaged dinners, and the awareness everyone in the industry seems to have of every product's delicate balance of salts, fats, and sweeteners.
