In case you haven't come across Terry Pratchett yet, I think he sets the standard for satirical fantasy. Solid world, solid plots, and fantastic humor. His Discworld books can mostly be read in any order. I recommend this one because I think the very first Discworld book (The Color of Magic) really isn't a great introduction to the series. This one is one of my favorites, and I think it works as a good introduction to the world and Pratchett's style.
