Take this to your next barbecue!

Hello Gorgeous!


It is June! Woo hoo!!!!


For me, June means picnics, parties and barbecues. All of which require (in my world, at least), healthy take-along foods that are economical, yummy and easy-to-make. That’s where today’s recipe comes along.


pumpkinSavory Pumpkin Dip may sound like an autumn recipe—and in truth, this souped-up hummus is great for Halloween or Thanksgiving—but it is one of my most-requested summer dishes. It is that delicious. Of course I love that it is filled with protein and beta carotene and antioxidants and is a cinch to make…..

SAVORY PUMPKIN DIP

Makes 1-1/4 cups


1 8-ounce tub prepared hummus

¼ cup pumpkin puree

¼ to ½ teaspoon pumpkin pie spice


1. Stir together all ingredients until well-blended.

The 7-Day Detox Starts Tomorrow!

How are you feeling these days? I hope fantastic!


Summer is just weeks away, and you, my gorgeous friend, are ready for this to be the most attractive, healthy season of your life!

YAY! WALNUTS!

1Each week in my online wellness group (hello Wellness Circle members!) we have a cooking clinic where we focus on a single superfood that can help make our life healthier, more fun, and more delicious! Last week’s cooking clinic featured the humble walnut.


Oh, this tree nut may not look like much, but it’s benefits are anything but small. A 1/4 –cup serving (about 30 grams, for our metric-loving friends) of walnuts offers a host of nutrients, including 113% of your daily requirement of omega 3 fatty acids (a very generous percentage!), 53% of your copper requirement, 51% of your manganese, 29% of your molybdenum and 19% of your biotin. Plus plenty of protein and fiber. All at only 196 calories. Plus, studies have shown them to help regulate blood sugar, help ward off dementia, improve cardiovascular help and help clear up skin conditions such as eczema and psoriasis.


True, walnuts aren’t as buttery as macadamia nuts or as sweet as cashews or as addictive as pistachios, but they should have a place in your weekly diet. To help you get in at least one serving a week of this wonderful nut, here’s a great recipe for Walnut-Apricot Spread to start you out. (Email me your own fun ways to use walnuts! I love receiving recipes from you!)


WALNUT-APRICOT SPREAD

Makes about 1 cup


1/2 cup dried apricots (I use dried apricots from California)

1 cup California Walnuts

2 or 3 tablespoons honey or coconut nectar

1 or 2 tablespoons lemon juice


1. Place apricots in a food processor and pulse to chop.

2. Add remaining ingredients and pulse again until finely chopped. Store tightly covered in the refrigerator for up to 1 week.

3. Serve on apple slices, toast or crackers or in place of peanut butter and jelly in the kids’ sandwiches.

A BETTER SNACK FOOD


Snacking fascinates me. You’re right, it’s a strange thing to be interested in, but as a nutritionist and health writer, I spend a lot of time talking and writing about snacking—the pros and cons—what makes a healthful snack, what snacking does to or for your health, and on and on. And while I am not enthusiastically pro-snacking, life can be a hungry business, so I support the desire to graze. As long as you choose foods that help you and not hurt you. I know that you exactly what I mean.


In the spirit of healthy nibbling, here is a yummy recipe from my new book, 7-Day Superfood Cleanse, that is easy to make and rich in protein, fiber, antioxidants, vitamins, minerals and other good things (such as Omega 3 fatty acids) to support your immune system, brain function, cardiovascular health, healthy blood sugar levels, skin and energy levels. Feel free to try different nuts and seeds than the ones I’ve listed!


Protein Power Trail Mix

Makes about 10 servings

I am always looking for great low-sugar recipes that are high in both protein and kid appeal. This munchy, crunchy snack is a go-to staple in my house. The added bonus: The walnuts and pumpkin seeds are outrageously rich in omega 3 fatty acids, contributing to a cardiovascular, nervous and immune system health.


Ingredients


2 cups raw almonds.

1 cup raw pecans.

2 cups raw walnuts.

2 cups pepitas (hulled pumpkin seeds) .

2 cups unsweetened dried cranberries, goji berries or a mix of dried berries.

1 tablespoon coconut oil.


Directions



In a bowl mix together almonds, pecans, walnuts and seeds. Cover with water and soak overnight. (Note: You can skip this step altogether if you’d like; the overnight soaking makes nuts and seeds a bit more digestible for people, though it isn’t necessary.)
Preheat oven to 300 F degrees.
Rinse and discard soaking water.
Add cranberries and add coconut oil. Toss until everything is coated well.
Spread the mixture out evenly on baking sheet and place in the oven for about 15 minutes or until you can smell the roasting nuts and they start to turn a lot.
Cool and store in air tight glass container.

Dear Gorgeous Friend,


Once upon a time I was a younger nutritionist and health writer. Then I grew older. My needs changed. My interests changed. My body—and what it was experiencing—certainly changed. As did my emotional life. My social life. My interests. And even my relationship with my husband.


As I grew, I continued to see my beloved clients of all ages, but I found myself becoming more and more excited to spend time with those clients who were in my age group. Who were going through the same things I was: Hormonal shifts, thyroid and adrenal issues, the scariness of mortality and wondering how to get healthier so we can enjoy our time on the planet, navigating busy lives with busy older children and perhaps aging parents, dealing with once romantic relationships that maybe weren’t so romantic anymore (or craving a romantic relationship after the ending of a previous union), sleep issues, work and money stress, lowered physical fitness, middle-age spread (muffing top and bra bulges anyone?), an increased interest in spirituality and using healthy living as a way to tap into our own precious divinity, regret at things not done, frustration with a body that is no longer 27—as well as a beautiful celebration of all the things that middle-age has brought us, including calm, wisdom, comfort in our skin, a kind of delicious irreverent humor and a deep knowing that we’re here for a reason which is coupled with an equally deep desire to seize the day and make the most of every minute of our time here.


Which means getting and staying healthy. Not in the crazy, time-consuming way that we may have used in our 20s and early 30s (there is no way I am going to spend 2 hours each day in a gym!), but in a wise way that honors our current commitments and desires. A deeply pleasurable way that must work for where we are now.


Which is why I created The Wellness Circle, an online health group for women in their 40s through 90s. This is the group I spent hears dreaming of and this last winter, I launched my first Wellness Circle! Now it’s time to launch my second Wellness Circle!


I am so excited to share The Wellness Circle with you!

Twenty women, ages 45 to 65 joined our first go-round. And every single one of them, I am so proud to say, lost weight, dropped dress sizes and healed health conditions ranging from eczema to chronic joint pain. Every single one of them also created enormous healthy changes in their lives, from dealing with their husbands’ erectile dysfunction issues to working up the courage to change their stressful work lives to making decisions on plastic surgery, divorce, religion and more. All while sharing with and getting support from women just like you. In fact, we had women from the UK to California in the last group, many of whom have grown so close that they have made plans to meet in person this summer!


So let me give you the specifics:


* The Wellness Circle runs from May 1 through August 21, 2015.


* We meet online, using an online classroom where we meet and get weekly assignments and daily support, access the audios and videos and download recipes (each week we have a “cooking clinic”), as well as other fun assignments.


* I am always “in” the classroom, waiting for you! Ask me whatever health question you would like. Anything from questions about your daughters’ protein intake to advice on ways to use nutrition to fade melisma. I not only will answer your questions about the assignments, I am here to teach you how to heal yourself with food and healthful lifestyle choices.


* Each week, we have one optional phone call and another optional Skype call (many of our friends in Europe prefer Skype!) each week where I go deep about the week’s lessons and activities before opening up the lines for your questions (again, ask me anything!). But these calls are optional. They are recorded so you can listen to them on your own time.


* You’ll receive free tickets to my live events (should you desire to connect more in person), as well as free entry into my 7-Day spring detox and my late summer/fall detox (which actually cost more than The Wellness Circle does!).

doctorcoconutBack when my oldest sons were young, I aspired to be Martha Stewart. I hosted huge themed children’s parties in my apartment, with beautiful Martha-esque crafts, miniature cupcakes and whimsical handcrafted decorations. But my favorite part of these get-togethers wasn’t the art projects nor was it the decorating—it was the food. Making it, but more specifically, choosing recipes that were just different enough to intrigue people, but healthy enough for me to feel good about serving them. I especially loved finding fun dips to pair with unusual veggies and other dippers. As a lover of Indian and West Indian foods, I relied heavily on chutneys. This Coconut Chutney, featured in Coconut: A Complete Guide to the World’s Most Versatile Superfood, was a real favorite! It tastes amazing—complex and fresh. It’s easy to make. And, it’s loaded with coconut for brain, heart, skin and immune system health. Try it! I love it with jicama slices or with roasted potatoes. My husband likes it with eggs. But really, it’s good on just about anything. (I’ve even tucked it into a peanut butter sandwich with yummy results.)


Coconut Chutney

Makes about 1 cup

I have a confession: I am a sucker for chutney. I love the blend of sweet and savory and tangy. I love chutney with Indian food, but I also love it on sandwiches, as a relish for pork, as a dip with veggie slices or crackers, as a burger topping, and mixed into grains.

This lovely version features our beloved coconut.


1 cup unsweetened shredded dried or fresh-grated coconut

3 tablespoons dry roasted cashews or peanuts (or a combination)

1 teaspoon grated fresh ginger (you can use a box grater or microplane grater for this)

2 fresh small mild Serrano or jalapeno chilies, roughly chopped

1/4 cup chopped cilantro leaves

1 teaspoon salt

1/4 teaspoon coconut sugar

Optional: 1/2 teaspoon apple cider vinegar (if you like a tangy chutney)

1/3 coconut water or water

1 tablespoon liquid coconut oil

1 teaspoon black mustard seeds



In a blender or food processor, processes the coconut, nuts, ginger, chilies, cilantro, salt, coconut sugar and optional vinegar. Process to a paste, adding water a little at a time for a smooth consistency. Transfer to a small mixing bowl and set aside.
Heat the coconut oil in a small skillet over medium heat. Add the mustard seeds and cook just until they begin to pop. Remove the pan from the heat and stir the seeds and oil into the chutney.
Store for a week in the refrigerator in a covered container.

COCONUT SPA GIFTS TO MAKE FOR MOTHER’S DAY!


(Or make them for yourself! You deserve some pampering!)


RelaxCoconutI talk a lot about the nutrition benefits of coconut, both in my newsletter and in my book, Coconut: The Complete Guide to the World’s Most Versatile Superfood (Sterling Publishers). But I am also a big fan of using coconut to look and feel pretty and pampered. That’s why this week, in honor of Mother’s Day (which is on May 10 in the States, Australia and Canada), I want to share with you some of my favorite spa recipes—all of which happen to use coconut! Enjoy!


Whipped Coconut Moisturizer

Makes about 1/3 cup

I love this recipe. It’s so luxurious and so easy and such a fun recipe to make. It also makes an impressive gift! You’ll need a stand mixer (or even a hand mixer) with a whisk attachment for this. And a small, sealable pot to keep the cream in. You can get these at any pharmacy (use the little empty pots that are sold with the travel-sized toiletries) or a craft store. This also makes a wonderful body moisturizer—simply increase the amount of coconut oil you use and up the essential oils.


¼ cup coconut oil

5 drops your favorite essential oil



In the bowl of a mixer, using the whisk attachment, whip coconut oil until light and fluffy.
Keep the mixer running and drop in essential oil.
Scrape moisturizer into a cosmetic pot (or pots) and keep in a cool, dark place.

Solid Perfume

Makes one small pot

When I was little, my mother used to buy my sister and me “perfume pins” from her Avon lady each year for Easter. These would have secret compartments filled with solid perfume. We adored them! Solid perfume is so handy—it’s portable, easy-to-apply and mess-free. This particular version, based on coconut oil, is also safe and natural. And, customizable. Use any blend of oils you’d like to create your fragrance.


1 tablespoon grated beeswax

½ tablespoon coconut oil

½ tablespoon jojoba oil

Jojoba oil (or other carrier oil, such as sweet almond or vitamin E)

30 to 50 drops essential oil or oils of your choice



In a double boiler over low heat, melt beeswax.
Add coconut oil and jojoba oil to beeswax and stir until smooth.
Remove from heat.
Stir in essential oils
Quickly pour mixture into a sealable container.
Perfume begins solidifying within 10 to 25 minutes, depending upon room’s temperature.

Beach Body Polish Recipe

Makes 1 cup

I adore body scrubs. I like to use them on my hands, my feet, my body and even my face. This lovely version is made with salts, leaving skin looking invigorated with a gorgeous glow. Scrape into a pretty glass jar and give as a gift.


1/2 cup liquid coconut oil

10 drops of your favorite essential oil or oils

1/4 cup sea salt

1/4 cup Epsom salts


1. In a large bowl, whisk together coconut oil and essential oil.

2. Add sea salt and Epsom salt and stir until thoroughly combined.

3. Scrape into a sealable container and keep in a cool, dry place.
