SPONGE CANDY & Copycat Candy Bars Recipe Book GIVEAWAY

This week’s recipe from Rae is Sponge Candy! Keep stopping by on Monday’s when we’ll have a new recipe and giveaway posted!


Sponge Candy


If you live in Western NY, then you know what sponge candy is, if not, you don’t know what you are missing.  The candy dipped in milk chocolate is absolutely delicious.  The ingredients are very simple to get and I usually have all of the items on hand in my pantry.  Sponge candy runs $18.00 a pound, so this is much cheaper.  This is a cold fall or winter recipe.  Humidity will ruin this recipe.  That is why it is a NY winter favorite.  We can’t get this yummy goodness in summer so you have to enjoy it while we can.


SPONGE CANDY


Ingredients:



1 cup granulated sugar
1 cup dark corn syrup
1 tablespoon white vinegar
1 tablespoon baking soda

Preparation:


In a medium saucepan, combine sugar, syrup, and vinegar; cook over medium heat, stirring until sugar melts.


Cook without stirring until mixture is very brittle when placed in cold water, about 300° on a candy thermometer.


Remove from heat and add the baking soda. Mixture will foam. Pour into a well-buttered pan.


When hard, break into pieces. If desired, dip in melted dipping chocolate. 


Tips:



Once the temp hit 300, immediately take off the heat add baking soda stir fast & pour into pan  fast.  The faster the better, but be sure you are careful, it is 300 degrees.  This is one of the few times I make the kiddos leave the kitchen. 
 Grease everything before you pour; let it spread itself; cut in desired pieces when it is set (about 1/2 hour).
 Melt chocolate in microwave, cook 30 seconds then mix, repeat until melted, you can also add 1 teaspoon shortening to make it smoother.  Dip the candy in chocolate, let set and eat.

Microwave Caramels & a Pyrex Giveaway!

Woohoo!! Recipes are back! This week we have a delicious Microwave Caramels recipe from Rae! Keep stopping by on Monday’s when we’ll have a new recipe and giveaway posted!


Caramel


MICROWAVE CARAMELS


INGREDIENTS


¼ CUP BUTTER


½ CUP GRANULATED SUGAR


½ CUP BROWN SUGAR


½ CUP LIGHT KARO SYRUP


½ CUP SWEETENED CONDENSED MILK


DIRECTIONS:


First, prep an 8×8 pan, by spraying with cooking spray, I use a glass pan.


Combine all ingredients in a microwave safe bowl, use a larger bowl the mixture bubbles up at the end.


Cook in microwave 6 minutes, stopping every 2 minutes to stir.


Stir at 6 minutes to combine, then pour into a greased 8X8 pan.


Let cool.


Cut and wrap in wax paper


Store in an air tight container.


TIP, AFTER COOLED, I DIPPED IN MELTED CHOCOLATE LET COOL AND SERVED ON PAPER LINERS.


TO MELT CHOCOLATE, PLACE A 12 OUNCE BAG OF CHOCOLATE CHIPS AND ½ TABLESPOON VEGETABLE SHORTNING IN A MICROWAVE SAFE BOWL.  PLACE IN MICROWAVE 30 SECONDS AT A TIME MIX AND REPEAT UNTIL MELTED, PLACE COOLED CARAMEL IN MELTED CHOCOLATE AND SHAKE OFF EXCESS.  Place on wax paper until chocolate hardens.
