Mint Cookies & Dublin Crystal Bedside Night Carafe GIVEAWAY!!

Mint Cookies


You can’t have Saint Patrick’s day without green.  Here is a great green recipe that tastes good too.  If you prefer you can exchange the mint extract for vanilla and add peppermint chips.  You will still get the mint taste, but if you don’t have mint extract on hand this is a great alternative.  You could also just use the milk chocolate chips, but use the coloring to go with the holiday theme.  Happy St.  Patrick’s Day!!!—


MINT COOKIES


INGREDIENTS:


1 cup butter, softened


¾ cup brown sugar


1/2 cup granulated sugar


1 egg


1 teaspoon mint extract


2 ¼ cup all-purpose flour


1 teaspoon baking soda


1 package or 2 cups milk chocolate baking chips


Green food coloring, about 3 drops, or until you get the color you like.


 


DIRECTIONS:


Preheat oven 375 degrees


In a large mixing bowl cream the butter, sugars.


Add egg mix well.


Add mint mix to combine.


Add flour, baking soda, mix well, add food coloring mix to desired color.


Stir in chocolate chips.


Drop by spoonful onto cookie sheet.


Bake 7-10 minutes.

MINT TRUFFLES & Grasslands Road Celtic Shamrock Bowl

This week’s recipe from Rae is is MINT TRUFFLES! Keep stopping by on Mondays when we’ll have a new recipe and giveaway posted.


Mint Truffles


This is the first recipe I ever tried for making truffles, it is a delicious candy recipe.  Very smooth and a slight mint flavor.  For a more fancy candy you can also drizzle with melted green candy melts.  They make a great treat for Saint Patrick’s day, or even Christmas with the green sprinkles.


MINT TRUFFLES


INGREDIENTS


16 ounces semi sweet or milk chocolate chips, I USED MILK CHOCOLATE


1    14 ounce can sweetened condensed milk


3 drops peppermint extract


For coating:


8 ounces milk chocolate, used for coating the truffles


1 tablespoon shortening,


Sprinkles, optional


DIRECTIONS


Heat the 16 ounces of chocolate and condensed milk in a double boiler over low to medium heat until the chocolate is melted and the mixture is smooth.


Stir in the mint extract 3 drops, or more per your taste, I only used 3 drops.


Remove from heat and cover bowl, refrigerate for approx. 2 hours.


When the mix is chilled, roll into teaspoon sized balls. Place in fridge until next step is complete.


Put the 8 ounces milk chocolate and shortening in a microwave safe bowl, heat for 30 seconds, stir and repeat until melted.


Remove the truffles from fridge and coat in melted chocolate.  Use a fork and let excess chocolate drip off.


Optional: before the chocolate hardens add sprinkles.


Let sit until the chocolate hardens.

FASTNACHT KUECHELS (Fat Tuesday Donuts) & a Fleur De Lis Ornament GIVEAWAY!

LRJ REcipe - Fat Tuesday Donuts


This recipe is a Fat Tuesday tradition.  Fry up these tasty donuts and earn your beads!! 


FASTNACHT KUECHELS (Fat Tuesday Donuts)


3 TO 4 CUPS FLOUR


1 PACKAGE DRY YEAST


½ TEASPOON SALT


¼ CUP SUGAR


1 EGG


¼ CUP COMBINED SOLID SHORTNING (CRISCO) AND BUTTER


1 AND ¾ CUP MILK



MIX 1 ½ CUP FLOUR, DRY YEAST, SALT AND SUGAR IN A LARGE BOWL
HEAT MILK AND 1/8 CUP BUTTER AND 1/8 CUP CRISCO, IN A SAUCE PAN UNTIL LUKE WARM, IT IS NOT NECESSARY FOR CRISCO TO MELT, ADD TO DRY INGREDIENTS IN BOWL.
BEAT IN MIXER 2 MINUTES MEDIUM SPEED.
ADD EGG AND ½ CUP FLOUROR ENOUGH TO MAKE THICK BATTER
BEAT HIGH SPEED 2 MINUTES
STIR IN ENOUGH FLOUR TO MAKE A SOFT DOUGH
KNEAD LIGHTLY, ADD DOUGH TO BOWL COVER BOWL WITH KITCHEN TOWEL, LET RISE IN A WARM PLACE UNTIL DOUBLED IN BOWL, ABOUT 1 HOUR,
PLACE DOUGH ON LIGHTLY FLOURED SURFACE KNEAD LIGHTLY, ROOL TO ½ TO ¾ INCH THICKNESS
CUT INTO SQUARES, APPROX 3 INCHES SQUARE, LET DOUGH SIT A FEW MINUTES, ALWAYS KEEP DOUGH COVERED WITH KITCHEN TOWEL.
HEAT OIL TO 370 DEGREES,
FRY A FEW AT A TIME, BEFORE FRYING PULL THE DOUGH A BIT SO DOUGH IS THIN IN CENTER, BROWN AND THEN FLIP AND BROWN OTHER SIDE

DRAIN ON PAPER TOWEL, SPRINKLE WITH POWDERED SUGAR OR CINNAMON/GRANULATED SUGAR MIX, I PUT MINE IN A BAG AND SHAKE.

YUMMY CHERRY BREAD & a Flirty Apron Giveaway!

Yummy Cherry Bread


To finish the month, I have chosen a cherry bread.  The bread comes out to almost look like biscotti when cut, but it is moist and delicious.  I suppose you could use the green cherries to make this a March theme cake.  I have not tried it, so I can’t guarantee it would look or taste as good.  Hope you all had a great February and hope to see you back in March for some GREEN THEMED recipes!!  Remember to check out Lisa’s new book HIS SECRETS, it is a great read!!! 


YUMMY CHERRY BREAD


 INGREDIENTS:


10 ounce jar maraschino cherries, you need the cherries and juice, DO NOT THROW JUICE AWAY


1 cup granulated sugar


1 ¾ cup flour, plus 1 tablespoon, divided


2 teaspoons baking powder


2 eggs


1 teaspoon vanilla extract


1 teaspoon almond extract
½ cup oil, I used canola


GLAZE for bread


¼ cup cherry juice


1 teaspoon almond extract


1 cup confectioner sugar, more if you feel it is to runny.


 


DIRECTIONS:


Preheat oven to 350 degrees


Grease 2 loaf pans with cooking spray, set aside.


Drain cherry juice in a bowl, Remove ¼ cup of the juice and set the ¼ cup aside.


Chop cherries, put in a small bowl along with 1 tablespoon of flour, coat the cherries.  Set aside.


In a bowl combine eggs, oil, and the remaining cherry juice,(NOT THE ¼ CUP THAT YOU SET ASIDE), vanilla and almond extract and sugar, mix to combine.


Add flour and baking soda, stir to combine, but do not over mix, when combined fold in cherries.


Place ½ of the batter into each of the loaf pans.


Bake for 35-40 minutes, or until toothpick inserted comes out clean.


Let bread cool approx. 15 minutes then turn out onto a cooling rack, place it top side up.  Let it finish cooling on wire rack.


Make glaze, add ¼ cup cherry juice, almond extract and confectioner sugar.  Wisk together.  Top when you are ready to eat.
