Hi. Welcome back to my Saturday Seven series! Aka someplace I can throw a bunch of recipe ideas at you. My mind explodes with goodies I want you to make every week! Like these, this cookie dough pie, and you should really make these for all your girlfriends and pig out tonight… because that’s what I’ll be doing after spin class.


As if these beer coozies weren’t enough, I went ahead and ordered custom cocktail napkins for the big day. I got them in both pink and ivory. It’s all about the details, right? And I’m a sucker for cute details like this.

I feel like I’m breaking a huge rule today. Pumpkin pancakes… in August?! Ok, ok while I hate saying goodbye to long summer days, warm summer nights, s’mores by the campfire, beach vacations, and actually having a tan – there is absolutely NOTHING compared to this September. ♥ So yeah. I can’t control my excitement anymore.


That being said, fall is coming early on SBA this year.

I’ll be quite busy a chaotic mess the few weeks before the wedding, so I decided to start baking fall recipes early this year. Though I have to admit, I made these pumpkin chocolate chip pancakes in June, twice in July, and finally shot them a couple weeks ago so I could share the recipe with you today. To me, pumpkin knows no seasons. Same with flip-flops and neon pink nail polish. I’m seasonally challenged.

Glowing Skin Smoothie.

This glowing skin smoothie is not only energy boosting and delicious, it has dramatically improved my skin tone. One of my favorite smoothie recipes, by far.

The goal is to have my skin looking its best on September 20th, so I’ve been doing all sorts of things like drinking my weight in water, getting enough sleep, SPF SPF SPF SPF, more SPF, and exercising regularly.


Oh hey, guess what. I’m already at 88 miles so far this month. (!!!)


I did a lot of research in the beginning of the summer about which foods can help improve my skin tone. There were obvious finds like salmon, broccoli, and almonds. But I also stumbled upon a whole list of foods I already enjoy, but don’t eat on the regular. So I bought a bunch, blended them up, and today’s smoothie was born.

I’ve been drinking this glowing skin smoothie everyday for the past month and have noticed a huge difference in not only my energy, but my skin has never looked better. And the best part? This green smoothie actually tastes good. Like, really really good. It’s now one of my favorites. And it’s the only green thing Kevin will drink!

Saturday Seven, 4.

Hi! Welcome back to my Saturday Seven series. A little sweet-tooth weekend tribute to a few favorite recipes.


I’ve been baking up a storm in my kitchen the past two weeks, making sure I have enough recipes and material for you during the few weeks before the wedding and when I’ll be on my honeymoon (Hawaii!). Let’s just say I’ve gone through about 10 cans of pumpkin, a dozen apples, 5 bags of chocolate chips, and more pounds of butter than I can count.


Grocery store workers must think I’m a psycho when I check out with 12 lbs of butter.


But before I get to all of those new recipes, let’s take a walk down memory lane. Some of the following recipes are ones I make on the regular, others are recipes I’m demanded to make on the regular, and the last recipe today comes with the label “if you haven’t made it yet, you haven’t lived.”

This jar. This peanut butter. This spoon. Nothing more, nothing less. Plopped on the couch, Friends DVD marathon, and last minute wedding chaos on Friday nights.


Could I BE more boring?


But no one is boring when cinnamon raisin swirl (!!) peanut butter is in hand.

I don’t know about you, but I have about 10 different jars of peanut butter open at any given time. Some in the refrigerator, some in the pantry, some flavored, some crunchy, creamy, natural, homemade, and everything in between. Since there is clearly a reason for yet another kind of peanut butter to cramp my kitchen, I made this homemade version.


And let me tell ya. It’s a doozy.

Pretzel Crusted Chicken Bites.

Chicken fingers are a food everyone seems to love. And we eat them in many different ways – baked (my favorite!), fried, chopped up in salads, lunch, dinner, with ketchup, BBQ, honey mustard, all the condiments.


I recently got in touch with Safeway for a little collaboration. Safeway asked me to make a couple recipes using some of my favorite products from their grocery aisles. Surely you know how much I love pretzels by now, so a recipe combining my beloved chicken fingers and my favorite snack food was an easy choice.


And these awesome pretzel crusted chicken bites blew my mind.

I used the same recipe as my Honey BBQ Chicken Fingers. It’s definitely the crunchy factor that makes them a reader favorite. We make the recipe on the regular and there was no need to alter it here. I simply swapped crushed pretzels for the Panko.


If you want an ultra crunchy coating for your baked chicken fingers – go with crushed pretzels. The crust stays crispy, while the chicken inside stays moist and tender. The texture is the BEST part about the recipe. We ate the whole plate in about 15 seconds flat.

Here is reason #19834 why I’m crazy…


On top of getting settled, wedding chaos (40 days WHAT), Kevin’s birthday, 100 mile goals, and managing this monster-sized blog, I remade and reshot two recipes over the weekend. Recipes from 2012 when I sort of knew how to work a camera, but not really.


The first recipe are these little cinnamon sugar pumpkin muffins. I make them all the time and finally felt like updating the photos. Maybe because it was 60 degrees outside that early morning and because I’m so excited for the fall (for obvious reasons).


And the second recipe is what you see today. Soft cinnamon-sugar loaded blondies. I decided to repost these because they should not go unnoticed!

Given my overdose of sugar this week, I’m sure you were expecting a healthy or savory recipe on my blog today. Well today is not that day. It’s s’mores week! And it’s Kevin’s birthday tomorrow. His last birthday before he marries me. Dun dun dun.


The happiest of birthdays to you, Kevin!!


Kevin and I have roasted s’mores together more times than I can count. In fact, he was with me the first time I ever went camping. And the only thing that saved me from losing my mind were s’mores. He likes to go heavy on the chocolate and I double up on the toasted marshmallows.
