The Best Air Fryer Recipes | What's for Dinner?

I hope you had a wonderful Mother's Day weekend! I'm sharing 4 excellent and easy air fryer recipes in today's What's for Dinner video.
I've grown to love my air fryer even more over time. The key with the air fryer is this: you need some good recipes in order to regularly use it. I've been experimenting with a lot this spring and am sharing four easy, yet delicious recipes for you in today's video. This is the air fryer I use. You can also find them in abundance on Williams Sonoma.
Air Fryer Coconut Shrimp with Apricot Cider Sauce
Coconut shrimp is one of my favorite things to order at restaurants. This air fryer version is healthier than the deep fried versions and the apricot cider sauce is so easy to make.

Fryer Coconut Shrimp with Apricot Cider Sauce","recipeIngredient":["1 lb uncooked large shrimp, peeled and deveined","1 cup sweetened shredded coconut","1/4 cup panko bread crumbs","2 large egg whites","pinch of salt and pepper","1/4 cup flour","1/3 cup apricot jam","1 Tbs cider vinegar","Dash crushed red pepper flakes"],"recipeInstructions":["Preheat air fryer to 375°. In a small bowl, mix together the apricot jam, cider vinegar, and red pepper flakes. Set aside.","Set up three shallow bowls. In the first one, place the flour. In the second bowl, place the egg whites, salt and pepper. In the third bowl, mix the coconut and bread crumbs. Dip each shrimp in flour, then egg white mixture, and finally in coconut mixture.","Place shrimp in a single layer on greased tray in air fryer basket. If your air fryer has a \"shrimp\" option, use that to cook the shrimp, flipping shrimp over half way through when the air fryer tells you to \"shake\" the basket. If not, cook the shrimp for 4 minutes, then turn over and continue cooking until coconut is lightly browned and shrimp turn pink, about 4 more minutes.","If you make 1 lb of shrimp you will need to cook them in two batches as most air fryers only take around 1/2 lb at a time.","Serve shrimp with dipping sauce. Place 1/4 cup meat mixture onto each biscuit circle and then sprinkle each with 1/4 cup cheese. Flatten remaining biscuits; place over filling and pinch edges to seal tightly. Question: Have you ever had to deal with picky eating in your home? Your meals look delicious and my goal is to meal plan and cook better for my family. But I'm struggling with being trapped into cooking separate meals altogether for my 5 year old son while my husband and I eat the healthy meal I cooked. (We also have a baby who is only on purees.) Further, I homeschool, so this goes for all 3 meals plus the constant battle against snacking. My son's food likes have gone from 100 to 10 over the last year and I have no idea why! Any tips on handling picky eating while trying to meal prep efficiently? I exhaust myself coming up with "creative" ways for him to eat better and it consumes so much of my day!"
Hi Katie, you are not alone! I know many parents who struggle with this problem. I always offer my children exactly what we adults are having. In addition to the meal offered, I also give them a few extra sides like mandarin oranges, toast with butter, sliced apple, cheese, or cucumber with salt. If they are unsure about the meal, they will always try a few bites at least and then eat some of the sides and feel full. Of course, I can't give nutrition advice, but that is how we have handled this issue when it comes up in the past. But I find that by persisting and offering the "adult meal" they become accustomed to that kind of food. I hope that helps!

5 Ways to Take the High Road and Remain UNBOTHERED

In this modern media age, we have been exposed to all sorts of bad behavior: public altercations, online tantrums, Facebook fights, and in-person confrontations (just to name a few). It is a fact that we will at some point be triggered by someone in our life. How do we come out of this situation as better people? How can we grow from this? How can we take the high road and not stoop to their level? This is what classy and elegant people do. I hope you enjoy today's video.
To do so we must remain calm, classy, elegant, nonplussed
Calm- not showing or feeling nervousness, anger, or other strong emotions.Classy- stylish and sophisticated.Elegant- pleasingly graceful and stylish in appearance or manner.Nonplussed- unperturbed
Here are 5 ways to take the high road and remain unbothered. 1. Be too big to care. Be magnanimous. Magnanimous means to be "generous or forgiving, especially toward a rival or less powerful person". This is the essence of taking the high road. If you are dealing with someone who is using dirty tricks to try to upset you, you are dealing with a less powerful person because their consciousness is limited. Their maturity is lacking. Simply understand this and be magnanimous toward them. 2. Use this affirmation: None of these things move me. – Acts 20:24 I use this affirmation frequently throughout my day when things aren’t going how I want them to go. None of these things move me. I’ve even shared this with a good friend and she has found it very useful too. When you find yourself wrapped up in a situation that is producing anger for you, your vision is clouded and you feel like this experience is all there is. Get used to immediately saying “None of these things move me”. It’s the ultimate statement to remain UNBOTHERED.3. Don’t magnify the problem with your attention. “My experience is what I agree to attend to.” – William James What do you want to attend to? Is someone trying to drag you down to their level? Are you going to give that attention? Or are you going to take the high road and remain up high, no matter what they do? You are in control of the experience you have. 4. Remember that when you retaliate in anger, you only hurt yourself. “Heat not a furnace for your foe so hot that it do singe yourself”. Henry Vlll ShakespeareRemain nonplussed. When you act out in anger, you come off as the bad one. It doesn’t look good. They never see your side. You are the one who looks unhinged. You “singe yourself” as Shakespeare said. 5. Your ships come in over a calm sea. -Florence Scoval Shinn Remember: when you remain calm, you come out on top. Things start working in your favor. If you are dealing with someone who has a history of trying to push your buttons and get under your skin, they will eventually become bored with you and move on to someone else. “Your ships” represent what you want. I’m guessing what you want is peace. Your peace will come in over a calm sea. Think about it: if the sea is rough and turbulent in a storm, the ship cannot come into the harbor. Think of your reaction the same way. Whatever you want out of this situation will only come about once you are calm. Join me today for some dreamy homemaking… because every homemaker should dare to dream… Welcome back to the Daily Connoisseur. It’s true you can find a lot of practical homemaking videos not only on my channel, but all over YouTube. So today I thought I’d bring you something a little different. Something from a higher realm.

As homemakers we tend to burn out. Our to-do lists are so long. Years seem to go by where imagination is lacking, and our dreams are empty. Our waking dreams, our midnight dreams… where do they go? They wash out to sea with lots of other hopes. But I encourage you, no matter how messy things get. No matter how stressed you are. No matter what burdens are on your plate, to never give up your capacity to dream. To dream by day and dream by night. By doing this, you open yourself up to the realization that what you perceive is not necessarily all there is. In turn, you seek the Divine in everything you do.

Have you ever taken time to think about dreams? How strange they are? Have you ever woken up from a wild dream and wondered how on earth your subconscious came up with such a thing? The dream world is still one of mystery. Even for science. We can’t fully comprehend why these dreams happen… these detailed fantastical movies that play out in our minds every night when we go off to sleep. Louise Erdrich said, “When every inch of the world is known, sleep may be the only wilderness that we have left.”

We couldn’t explore dreams without daydreaming. I am chief of the day dreamers. I daydream All. Day. Long. Always have. I am always in some other realm in my mind. I'm not sure that’s a good thing, but I try to use it to my advantage. I did a poll on my channel the other day asking you if you daydream and the results were rather interesting. I found out I’m not the only one who lives in my head all day long. But I do find that daydreaming helps me enjoy homemaking more. It gives a dreamy quality to my surroundings, and I am able to seek out the whimsical in the everyday mundane…

J.K. Rowling said, “It does not do to dwell on dreams and forget to live.” That could be my reminder to not daydream too much while homemaking, but to also be fully present with the task at hand. So, what is dreamy homemaking? It will be different for every homemaker. It will be creating a dream-like atmosphere at home for some. For others it will be day dreaming in the mind and living in lofty realms while tackling the mundane. Whatever it means for you, I hope that your homemaking is dreamy and serene. I want to leave you with some of my favorite quotes on dreaming for you to ponder while you go about the house today:

Classic Homemaking | Cook with Me

I'm sharing 3 classic recipes in today's homemaking video.

Chicken Piccata","yield":"4","recipeIngredient":["4 - 6 chicken breasts in the thin cut","1/4 cup flour","1 Tbs garlic and herb seasoning (salt-free)","1/2 tsp salt and dash of pepper","2 Tbs olive oil","1 cup chicken broth","1/2 cup pimiento-stuffed green olives, sliced","1 lemon, juiced","Zest of one lemon","1 Tbs honey"],"recipeInstructions":["Place the thin-cut chicken breasts, flour, garlic and herb seasoning, salt and pepper in a zip up bag. Seal the bag and shake until the chicken is coated evenly. If you do not have the thin-cut chicken breast, pound the meat with a meat mallet until it is around 1/2 inch thick before adding flour and seasonings.","Heat the oil in a pan over medium hot heat. Add the coated chicken breast and cook until brown on each side, which will be around 3 minutes per side. Then add the chicken broth, olives, lemon juice, lemon zest, and honey. Simmer for another 5 minutes or until the chicken is fully cooked through and the sauce has thickened. Serve with your desired side dishes. Life-Changing Homemaking Secrets | Anne of Green Gables

Our Homemaking Series continues as I share10 Life-Changing Homemaking Secrets from Lucy Maud Montgomery's Anne of Green Gables in today's video.
1. Strive to be a Notable Homemaker Mrs. Rachel Lynde was described as a "notable housewife; her work was always done and well done". While Mrs. Lynde had other issues going on, no one could dispute that she ran her home notably and efficiently.
2. Cleanliness is next to Godliness… according to Marilla Cuthbert. When Anne first arrived at Green Gables she noticed that “The hall was fearsomely clean; the little gable chamber in which she presently found herself seemed still cleaner”. While Marilla might have gone a bit overboard keeping things too clean, one can find inspiration for her love of a clean home.
3. Untidy Habits Cannot be Tolerated Marilla tells Anne, “Now, Anne, I noticed last night that you threw your clothes all about the floor when you took them off. That is a very untidy habit, and I can’t allow it at all. As soon as you take off any article of clothing fold it nearly and place it on the chair. I haven’t any use at all for little girls who aren’t neat.” Marilla instantly addressed Anne's untidy behavior and nipped it in the bud. It's best to eliminate bad habits before they fully form.
4. Work is done first… then play Marilla says, “But remember this in all your planning, Anne. You’re not going to play all the time nor most of it. You’ll have your work to do and it’ll have to be done first”. This is a similar theme that ran all through the Little House on the Prairie and Farmer Boy series and is worth taking note. We should work first and then play if we want to get anything done and rest with satisfaction.
5. Always test the food and drink you are serving to your guests. Anne was ecstatic that she was going to have Diana over for tea while Matthew and Marilla were away. She wanted to use the fancy rosebud tea set (Marilla said no) and was imagining exactly how the afternoon would go. She gave Diana what she thought was raspberry cordial, but it was actually Marilla’s current wine. Diana got drunk off of three glasses of wine and things went downhill from there. That could have been avoided if Anne sampled the cordial for herself. She would have known it wasn’t Marilla’s cordial at all and the mishap would have been avoided… but then we wouldn’t have had that entertaining story. Ha!
6. Sometimes Homemaking must be put aside when more thrilling matters are present After Anne saves Minnie May’s life and Mrs. Barry forgives her for getting Diana drunk off the “raspberry cordial”, Anne is invited over to the Barry residence. Anne asks, “Oh, Marilla, can I go right now – without washing my dishes? I’ll wash them when I come back, but I cannot tie myself down to anything so unromantic as dish-washing at this thrilling moment.” Sometimes placing homemaking aside to deal with more exciting matters is totally acceptable.
7. Table Décor matters just as much as the food The minister and his wife are coming to tea and Anne is so excited. She wants to be in charge of the whole affair. “You’ll be using the best tea set, of course, Marilla,” she said. “Can I fix up the table with ferns and wild roses?” “I think that’s all nonsense,” sniffed Marilla. “In my opinion it’s the eatables that matter and not flummery decorations.” Anne then goes on to convince Marilla that table decor matters just as much as the food.
8. Always label every bottle properly. Anne’s table may have been pretty for Mrs. Allan, but the cake was inedible. She flavored the cake with anodyne liniment instead of vanilla but it wasn’t Anne’s fault. Marilla said, “I broke the liniment bottle last week and poured what was left into an old empty vanilla bottle.” We should always label bottles properly to avoid tragic mishaps like this one.
9. Look on the bright side with your current decor. Take heart in less than perfect décor as it leaves room for imagination. Anne and Diana visit Diana’s wealthy aunt, Miss Josephine Barry. Miss Barry’s house was furnished with “great magnificence,” as Anne told Marilla afterwards. “Velvet carpet,” sighed Anne luxuriously, “and silk curtains! I’ve dreamed of such things, Diana. But do you know I don’t believe I feel very comfortable with them after all. There are so many things in this room and all so splendid that there is no scope for imagination. That is one consolation when you are poor- there are so many more things you can imagine about.” I believe Anne truly did love Miss Barry’s décor, but she was employing positivity by looking on the bright side with what she did have.
10. Home is a consciousness Driving back from Miss Barry’s house “Anne and Diana found the drive home as pleasant as the drive in- pleasanter, indeed, since there was the delightful consciousness of home waiting at the end of it.” … “It’s good to be alive and going home,” breathed Anne. “I’ve had a splendid time, she concluded happily, “and I feel that it marks an epoch in my life. But the best of it all was the coming home.” Later in the book when she goes away to college, Anne is experiencing homesickness. It says “a horrible choke came into her throat as she thought of her own white room at Green Gables, where she would have the pleasant consciousness of a great green still outdoors, of sweet peas growing in the garden, and moonlight falling on the orchard, of the brook below the slope and the spruce boughs tossing in the night wind beyond it, a vast starry sky, and the light from Diana’s window shining out through the gap in the trees.” When we understand the home is more than a building or a shelter for us, that it is a consciousness we can appreciate it as homemakers and look after it with renewed inspiration.

Life Updates: Homeschool, Channel News, Weight Loss

Today I'm giving an update on our homeschool routine as well as sharing channel news, and more. I hope you enjoy today's video.
Homeschool: We are in our 5th year of homeschooling and continue to love this versatile and joyful way of learning. Due to my changed work schedule, however, as well as adding a new student this year (my son is now in kindergarten), we decided to make some strategic changes. We have a private tutor helping us with the homeschooling which has lightened our load and also provided a wonderful challenge for the kids. Learn about all the details in today's video.
Channel news: We are so happy to have hit 200,000 subscribers! Thank you to our wonderful viewers! I feel that the Daily Connoisseur content is relevant now more than ever with the message to keep calm and remain classy. Spring Homemaking with Style

Homemaking with style... Let's explore that concept in today's video.
Spring is here and the bees and the flowers rejoice. I’d like to bring you out of the common drudgery associated with homemaking in today’s video. We’re going to explore homemaking with style.

I believe the first key to elevate yourself out of a feeling of drudgery is to not only get dressed every day, but express your style through your clothing. You might wonder what this has to do with homemaking? Well, you are the homemaker. And your well-being is imperative to running this ship. Expressing your creativity and joy through your everyday style is going to improve your everyday life. I like to wear presentable pajamas to bed every evening. And in the morning, I am still cheered when I awake. I like to prepare my skin (I use Paula's Choice skincare) and apply my makeup in front of the window for the best light. This is the makeup I have been using… some new spring colors from MERIT minimalist makeup…

And now to change into my clothes for the day. You might be thinking this outfit is rather plain… Don’t worry I’m going to liven it up in a moment. But first, let’s appreciate the bones. My new skirt came in and I love it! I enjoy wearing monochromatic looks… especially white and creams. They act as a perfect canvas for accessories and even look chic with just this leather handbag. I’m going to run errands today so let’s add a sophisticated touch with a voluminous scarf. Look how this scarf livens up this basic outfit. It looks great with the brown leather handbag and also with the blue croco handbag TBJennC30 for $30 off too. I’m ready to run errands now in style…
I’m back from running errands and now I must fold some laundry. My heart is always warmed by how cute little tiny clothes are. Do you ever feel that way? I fold a toddler shirt or a little pair of pants and my whole heart is warmed. Time for a small afternoon treat.

Sauté the shrimp in butter and add chopped parsley and smashed garlic. It's a glorious new day and I’m going to arrange some ranunculus flowers outside to the sound of the tinkling wind chimes.

Is there any flower more charming and more bursting with character than the ranunculus? I like to look up flower symbology and was not surprised at all to find that the ranunculi symbolizes charm. The name ranunculus actually means "little frog" in Latin. The Victorians would send ranunculus to the object of their affection because they symbolized charm and attractiveness. I say they add a whimsical style to the home and are perfect for the kitchen table.

Let’s prepare for teatime now. Every stylish homemaker has a good lemon loaf recipe. So, I’m going to share a great one with you today that makes a double batch! Loaf Cakes","description":"This recipe was adapted from the famous Ritz Carlson Lemon Pound Cake.","yield":"makes 2 loaves","recipeIngredient":["3 cups all-purpose flour","1 Tbsp baking powder","¾ tsp salt","3 cups sugar","1 cup unsalted butter, room temperature","½ cup shortening","5 large eggs","1 cup whole milk","6 Tbsp lemon juice","1 lemon, zested","Confectioner's sugar for dusting","Whipped cream and raspberries for serving (optional)"],"recipeInstructions":["Preheat oven to 350ºF. Grease and flour 2 loaf pans. Use a lemon loaf pan if you have it.","Mix flour, baking powder and salt into a bowl and set aside.","Cream butter, shortening and sugar in a stand mixer. Years ago, I was given this beautiful and sturdy lemon loaf pan. I try to use it every year. It makes the prettiest loaf cakes!

Homemaking with style is all about the little details. So I am placing this lemon loaf on the Victoria Magazine blue roses porcelain tray, dusting with powdered sugar, and adorning with lemon slices, fresh roses and rosemary.
