SPICY COLD SOBA NOODLES

If you’re closing out your summer by hosting or attending a Labor Day celebration check out this recipe from Marilu Henner’s best selling cookbook, HEALTHY LIFE KITCHEN.  It’s meant to be served chilled or at room temperature so it’s a great make-ahead dish.  You can even make this in stages, preparing the sauce a day ahead of the noodles.  Perfect for your busy lifestyle.  Pair this with a green salad and you have a healthy satisfying meal.  We recommend doubling the recipe since you won’t be the only one digging in to this!


 


1/3 cup soy sauce


1 Tablespoon molasses


1/4 cup sesame oil


1/4 cup tahini


1 Tablespoon barley malt


1/4 cup chili oil (we strongly recommend adding this by the Tablespoon as 1/4 cup can be a LOT of heat)


3 Tablespoons balsamic or red wine vinegar


1/2 bunch scallions, white and green parts, thinly sliced


salt to taste


1/2 pound soba noodles (Japanese buckwheat noodles)

ALS in the News

You’ve all seen the ice bucket challenge; from your friends, to the “challenge gone wrong’ videos, to a wide range of  celebrity videos (how stinkin’ cute was Ben Affleck’s challenge with his little girl giggling in the background?)  There may be a few (very few) naysayers out there but we’re delighted to see people having fun with this and even more thrilled to know that donations are pouring in to the A.L.S.A.   There are few diseases more cruel.


 


Aside from donating and raising awareness of the need please pass on this information that helps raise awareness on protecting yourself.  There are no guarantees in this life but reducing your risk of disease is always a smart step.

Healthy Summer Hair

BUDGET FRIENDLY TIP:


Enjoy the water AND protect your hair from the damage chlorine can cause.  There’s no need for expensive clarifying shampoos.  Combine one pint of water and half a Tablespoon of baking soda.  Use it as you would shampoo after you’ve been in chlorinated water.

MANGO/CHIPOTLE BBQ SAUCE

Another holiday weekend is fast approaching.  This BBQ sauce is great on tofu, as a side for chicken or fish or as a dipping sauce for vegan ribs or nuggets.


 


1 and 1/2 cup chopped mango


3/4 cup cilantro


2 Tablespoons lemon juice


2 Tablespoons sherry vinegar


1 Tablespoon canola oil


4 cloves garlic


2 chipotle peppers in adobo plus 1 Tablespoon of the sauce


1 and 1/2 teaspoons salt (or to taste)


1/4 teaspoon pepper


 


Puree sauce until smooth.  Use half the sauce as a marinade and put the remainder on the stove to simmer for 15 minutes or until thickened and serve it on the side.

VEGAN PARM

COMBINE:


 


1/2 CUP WALNUTS


1 TABLESPOON NUTRITIONAL YEAST


1 TEASPOON OLIVE OIL


DASH SEA SALT


 


Grind walnuts in food processor until well pulverized (but stop before they become buttery).  Add other ingredients and pulse until combined.


 


Use this as a topping for summer pasta dishes, top  salads or use to make vegan mac and cheese.

Summer Produce

Enjoy the colors and flavors of summer while you can.  In many parts of the country local farms are still offering blueberries.  Of course blueberry muffins and pancakes are always a treat but why not enjoy them by the handful for maximum flavor and goodness.  Some excellent reasons include:


 


- Blueberries are rich in antioxidants that fight cancer and heart disease, boost memory and protect the health of your eyes.


 


- They are loaded with Vitamin C and have properties that inhibit tumor growth.


 


- They’re high in Vitamin K and manganese and help build strong bones.


 


- They’re the BEST PART  of any recipe that would include them !
