Every time I make a quiche, every time, my mind goes to the restored kitchen of a bed and breakfast, like this one. The one we dream about running when we’re old and grey, when our kids are young but grown, when a 10-inch quiche is too much for our table of two. I’ll stockpile handmade pie dough in the freezer and blind bake the crust each night. We’ll fill it with the freshest eggs and whatever else is in season.

In the depths of January, it’ll taste like this Shaved Brussels Sprouts Quiche with sweet red onions, fresh thyme, buttery Roth Havarti, and crispy bacon. It’ll taste like bright citrus and lightly sweetened whole milk yogurt and homemade granola, like lightly dressed greens and sparkling water and freshly roasted coffee.



Now you know our retirement plan. It’s either that or a wood-fired pizzeria. Only time will tell which type of pie we’ll be slicing.

Let’s talk about quiche for a quick second. They only seem to come out of my oven on special occasions, mostly because the crust needs a little forethought if you’re not an early riser, which I’m not. In that case, skip the crust and make a frittata the morning of. Feel free to do that with this recipe. Bake the frittata in the same pan used to saute the onions and brussels sprouts. But, for special occasions, bake that crust the night before for a quicker prep in the morning and guaranteed insurance for a soggy-bottom-free crust.

Description

A delicious winter quiche recipe made with shaved brussels, sweet red onions, fresh thyme, buttery Roth Havarti, and crispy bacon. Roth Grand Cru would also be delicious here. The recipe is written for a 10-inch removable bottom tart pan with a 2-inch height. See additional notes below.







Ingredients
Crust

Favorite Single Crust Recipe


Filling

2–3 slices of your favorite bacon (about 1/4 c. once chopped)

2 tsp. olive oil

3/4 c. sliced red onion (about 1/4 of a red onion)

1 c. shaved brussels sprouts (about 5-6 small brussels)

1 tbsp. fresh thyme

1/2 tsp. kosher salt, divided

5 large eggs

1/2 c. whole milk

1/2 c. grated Roth Havarti

a couple cracks of pepper







Instructions

Make your favorite crust in advance. (You can find mine in The Minimalist Kitchen, page 242.) The night before, so you can sleep in, bake the crust. This is also known as blind baking and helps to prevent soggy bottom crust syndrome. On a lightly floured surface, roll out your single disk to 14-inches in diameter. Fold in quarters and transfer to a 10-inch removable bottom tart pan with a 2-inch height. Unfold and center within the pan, trimming excess only if needed. Place pan in the freezer to chill for 10 minutes. Meanwhile, preheat oven to 425°F. Before baking, prick the bottom and sides of the dough with a fork. Line the interior with crumpled parchment paper and fill with pie weights or dried beans to keep the crust from bubbling or shrinking. Place pan on a baking sheet and bake for 15 minutes. Remove the parchment and pie weights, and bake for 3 minutes more or until the bottom of the crust is cooked through. Remove from oven and allow to sit out overnight, uncovered.
The morning of, prepare the filling. Chop, shave, and prep the ingredients. Preheat oven to 350°F. In a cast iron skillet on low heat, cook bacon until crispy, flipping halfway through. Amount of time will vary depending on cut/thickness of the bacon. Remove to paper towels to absorb excess drippings, then roughly chop. Meanwhile, preheat a separate skillet over medium heat. Add the oil and onions and cook for about 5 minutes until slightly charred, stirring occasionally. Add in the brussels, thyme, and 1/4 teaspoon of the salt. Turn heat to medium-high and cook for 1-2 minutes to char. Remove from heat. 
In a large mixing bowl, whisk together the eggs, milk, remaining 1/4 teaspoon of salt, and a couple cracks of pepper until evenly combined. Stir in the bacon, charred vegetables, and cheese. Place the tart pan on a baking sheet if not already. Pour filling into the prebaked pie crust, being sure to evenly distribute. Bake for about 30 minutes or until the egg is cooked through. Let stand for 5 minutes before serving. To easily remove the sides of the tart pan, place the pan on bowl and allow the sides of the pan to gently fall. Carefully slide the quiche onto a cutting board and slice with a sharp serrated knife. I prefer to use a bread knife here. Happy brunching!








Notes

Do you really love bacon? Cook the bacon in the skillet first, then cook the onions and brussels in the leftover fat, removing all but about 2 teaspoons prior to sauteing. 


Dislike bacon? Skip it altogether or add in 1/4 cup roughly chopped smoked deli turkey or ham straight into the egg mixture. 


Short on time? Turn this into a frittata and skip the crust. In the recipe instructions, start with step 2.


Let’s talk Quiche pans. For years, I used the short, 11-inch removable bottom tart pan with the 1-inch lip, wrestling with problems like a shrinking crust and an overflowing filling. Then I got smart and went with the 10-inch removable bottom tart pan with the 2-inch lip. Those measurements are deceiving. The top width is a full 10 inches wide, while the bottom of the pan is 8.5 inches. If the crust shrinks a bit in this pan, I have room without having to worry about a filling overflow. With this pan, too, I’ve started letting my crust hang as high as they can, without trimming much. A rustic look. In fact, trimming seems to create more shrinkage in my kitchen. Think biscuits here. When you cut them, it helps them to rise. The same thing is happening with a frshly cut crust. Note: If you do not have this size tart pan, you’ll need to alter the baking time accordingly. A bigger pan will need less time to cook through, as the egg mixture depth will be thinner. A smaller pan will need a bit more time, as the egg mixture depth will be thicker.

Overnight Orange Cardamom Rolls


Like religion and politics and tradition, there comes a point in adulthood when you decide what to keep from childhood and what to revise and what to frame for a shelf. These questions go through rounds of editing when two become one and then three and almost four. The Coleman family Christmas traditions are a slurry of his, mine, and what is starting to become ours. But the overnight orange cardamom rolls and cutting down a tree and going on a carriage ride and decorating a gingerbread house and cookies, the new things, they all felt a little fraudulent at first, like trying on a romper when you’ve always worn jeans. Do they fit us right? Only time will tell.

We’re still trying on what to make for Christmas dinner. I’m not ready for another round of Thanksgiving until next Thanksgiving. And somehow, call it tradition (?), a plague passes through the house just before Santa. A Christmas without saltine crackers might not be a Christmas at all.


But this year, since Kev is always craving casseroles at the holidays and since casseroles are the only thing I’m craving this pregnancy, we’re making his grandma’s potato casserole, the kind with the buttery corn flakes crunched on top. They called it Kev’s casserole growing up. I called it Mom’s potato casserole. Turns out, we were all making the same recipe, 300 miles apart. His, mine, and, this year, ours.



The tree is up. The carriage ride rode. And the gingerbread house is going up tonight as Hal’s fever goes down. Oh, and the overnight orange cardamom rolls have been tested for the 5th time, promising warm rolls on Christmas morning and extra sleep for me. Ours, ours, and ours. These traditions are starting to feel less like a romper.



If you’d like to try on these overnight orange cardamom rolls too, there’s a couple of things to know first.


These Nordic-inspired rolls are not to be confused with fluffy, cream cheesy American cinnamon rolls, though they do have a classic cinnamon swirl filling. While they sit firmly in the roll family, they are almost a cross between a roll and a scone, slightly dense with a semi-soft interior and semi-crispy exterior brushed in a golden egg wash. These rolls are plenty sweet and perfectly spiced but far less sweet than American rolls. For all those reasons, the ingredient ratios and preparation of this recipe are different than a traditional American roll.



The dough itself is laced with cardamom, a peppery spice I fell in love with over Megan Gordon’s granola recipe. I love to pair cardamom with orange zest, so that’s just what I did, which also helps to accentuate the sweetness of the dough without adding more sugar. Note: orange zest is not common in these traditional rolls, but try it once, and you might also be hooked.



The shape of this roll begs for a tighter dough in order to maintain its triangular shape. It also requires a watchful rise time so that the rolls don’t overproof and bust open. Think tight triangular scone here over the busty American roll.

This recipe was developed specifically to be made overnight so that you can catch some extra zzz’s the morning of while also controlling the rise of these rolls. I started with the overnight roll recipe in my book, The Minimalist Kitchen (which I hear will be back on the shelf in the new year!). Since the rolls are baked individually and not all cozied up next to one another to steam and rise at the same time, I had to change the morning pre-bake steam method slightly. Good news though, this change-up didn’t add a ton of extra time, so please don’t wake up early on behalf of these.


Below, you’ll find a baking schedule and recipe. I’ll butt out and let the recipe start talking. Overnight Orange Cardamom Rolls Baking Schedule
day before

4-5 PM: Make the dough and allow to double in size in a warm, cozy spot, 1-4 hours.
7-9 PM: Assemble the rolls, and place in the fridge overnight to rest and halt the rise.

Day of

7 AM: Preheat the oven to 175°F.
7:10 AM: Turn oven off and allow rolls to wake up and take a quick, warm steam bath before baking, 15-20 minutes.
7:25 AM: Remove awakened rolls from oven. Heat oven to 350°F. Brush rolls with egg wash and sprinkle with pearl sugar.
7:30 AM: Return to preheating oven and bake for 20-25 minutes.
8:15 AM: Breakfast is served.

Use this schedule as a template, altering start times as needed.

Overnight Orange Cardamom Rolls

Description

These Nordic-Inspired Orange Cardamom Rolls were developed to be made overnight for a warm treat on Christmas morning, or any weekend morning, without losing any sleep. Begin making a day before serving, around 4 pm in the afternoon. (See schedule above.)







Ingredients
Cardamom Dough

1/4 c. (4 tbsp.) unsalted butter

2 1/2 c. all purpose unbleached flour

2 1/2 tsp. Saf instant yeast*

1 1/2 tsp. ground cardamom

1 tsp. kosher salt

1/2 c. whole milk, plus more if needed

1/3 c. pure cane sugar

1 large egg, room temperature

1 tbsp. orange zest (about 1 large orange)


Filling

2 tbsp. unsalted butter, room temperature

3 tbsp. pure cane sugar

2 tsp. ground cinnamon

1/8 tsp. (or a pinch) of kosher salt


Egg Wash

1 large egg

1 tsp. water

pearl sugar







Instructions

The day before serving, around 4 pm, make the cardamom dough. In a small saucepan, melt butter over low heat until half melted. Set aside and allow to cool and finish melting.


In the bowl of a stand mixer, whisk together the flour, yeast (see notes if using something other than instant yeast), cardamom, and salt until evenly combined. Measure the milk in a liquid measuring cup. Whisk in the sugar and egg until evenly combined. Pour the milk mixture and the cooled melted butter into the flour mixture, and stir together with a spatula until very roughly combined.


Place bowl on the stand mixer. Using the dough hook attachment, knead on medium-low speed for 3 minutes or until the dough is evenly combined and smooth. The dough should be semi-soft to touch, slightly damp without sticking to your finger. If the dough is too dry, add a tablespoon more of milk and mix. If the dough is too wet, add a tablespoon more of flour (see note below). Finish kneading the dough in the bowl or on the counter for a minute to form a smooth ball. Place back in the mixing bowl and cover tightly with foil, plastic wrap, or a towel. Place in a warm spot (over the dryer, on a heat vent, etc.) and allow to double in size, about 1-4 hours (see note below). If using a towel, check to make sure that the dough is not drying out. Lightly spray with water if so.


Prepare the filling. Leave butter out at room temperature. In a small bowl or ramekin, stir together the sugar, cinnamon, and salt. Set aside. Once the dough has doubled, punch it down. On a lightly floured counter, roll the dough out to a 14″ x 12″ rectangle, no larger, trying to keep the thickness of the dough as even as possible. We don’t want to get this dough too thin. Gently and evenly spread the butter over the surface. Sprinkle with the sugar mixture, then lightly pat down to adhere. Begin rolling the long side of the rectangle tightly into a log, leaving you with a 14″ log.


Line two square cake pans or a casserole dish with parchment paper. Set aside. With the seam centered on the underneath side of the log, cut it into 7-8 equal triangles, leaving about 1/4″ width for the tip of the triangle (reference image above for guidance). The first and last cuts can be formed into tiny round rolls by tucking a piece of the end underneath to hold everything in place. Rock the rolls so that the narrow part is facing up, evenly spacing the rolls at least 2″ apart. Cover with foil and place in the fridge overnight. This will slow, if not stall, the rise process, while also infusing extra flavor. Sweet dreams to the both of you.


The morning of, preheat the oven to 175°F and turn off. Place the covered rolls in the oven for 15-20 minutes. Note: Initially, the rolls will look as tight and firm as they did when you placed them in the fridge the night before. This process is intended to take the chill off and slightly loosen to ready the rolls for a hot bake. They are ready when the dough looks slightly relaxed and a touch wet (see image above for reference). We don’t want to over rise the rolls in an effort to maintain their shape.


Meanwhile, make the egg wash. Whisk together the egg and water. Once the rolls are slightly puffed, remove from the oven. Preheat oven to 350°F. Remove the foil and lightly brush each of the rolls with the egg wash. Sprinkle with the pearl sugar. About 5 minutes into the preheat, return to the oven and cook for an additional 20-25 minutes or until rolls are golden.


Allow to cool for 10 minutes before serving warm. Rolls can also be served completely cooled. Store leftovers in an airtight container for up to a day.









Notes

Instant yeast needs no activation, meaning no warmed liquid to proof and dissolve the yeast required. You can add it straight into the mixture. If you do not have instant yeast and are using rapid rise, or something similar, warm the milk in a separate pan until warm (about 100-110°F) to proof the yeast first. You can read more about the differences here. I always keep Saf instant yeast stocked in the fridge.


Have you noticed? Most roll recipes say “allow your dough to double in size” without giving an exact time. There’s a good reason for that, and it has to do with the room temperature of your kitchen. Dough in a 68°F kitchen will rise more slowly than dough in a 72°F kitchen. In fact, my doughs tend to rise twice as fast in the summer for that reason. Dry vs. humid climates will also contribute to the texture of your dough. Dry climates (or seasons) tend to require more liquid in the dough, where as humid, wetter climates require more flour. These are some of the quiet variables contributing to the outcome of your rolls. Understanding these variables will help you to troubleshoot on the fly.

Pinch of Yum Office Reveal


Sometimes, my yes is fast. Maybe too fast? A couple weeks before they asked the question, Kev and I were sitting on the kitchen counter talking about what’s next. I had finished designing our home and was itching to keep designing. Not a week later did our friends ask if I’d be interested in helping design their new studio space. “Yes!” I said without hesitation.


I thanked my lucky stars that Kimberly, who works with me, was along for a new ride without a paved road. Somehow, we did it. (I couldn’t have pulled this off without her.) Or without IKEA, who partnered with us to furnish the space. Or without Bjork and Lindsay, who believed in me enough to ask. And without further adieu, I’d love to share my fast yes and slow execution with you; the Pinch of Yum Office reveal is below. Office 1


Here we are in Office 1, Lindsay’s office, the founder of Pinch of Yum. Her desk is a bit of an IKEA hack, but not as hacky as the one you’ll find in Office 4. We used IKEA desk bases and had a custom, very long desktop made. With this configuration, she has both an online and offline working space. My favorite part might be the picture of all three of her kids—Sage, the softest puppy, Afton, her son who is no longer earth-side etched onto her arm, and sweet Solvi, her daughter, in her other arm. The work we do (you, me, her) is called business. But we couldn’t do the work we do without our humanness. It’s never just business. For that reason, I’m a believer of integrating that humanness into the design of a space, even a professional space, from a family picture to something quirky to something slightly askew.


Visual Aesthetic: Naturally Neutral—bright whites accented with blacks, greys, natural creamy creams, and warm wood tones.

When we started this project, I pestered them on how they imagined using this space for the everyday, down to the little minute things you’d typically omit from mentioning. Those are the things I like to design around. Lindsay mentioned wanting a visible calendar, so we came up with this glass board idea. I designed a calendar decal to affix to the backside of this board, making it completely wipeable month after month without destroying the decal. (I use a similar laminated paper calendar system for myself.) I had hoped to make this decal downloadable for you to create at home, but holy cow, applying a decal with very thin lines is so hard. It might be wise for you to buy something off the shelf.

When you walk into her office, there’s a little entry area, a hospitable little space for a guest or a bag or a coat. This is one of those areas that may or may not get a lot of daily usage, but it says welcome, which is a very good thing.

Lindsay’s office moonlights (or is it daylights?) as a photography studio. We had custom floating shelves installed to beautifully display her props while also keeping usability high and within arms reach. The top shelf stores the special occasion, if and when needed.

Tip: When designing a space, personal or professional, try starting with what you have as a source for inspiration. It helps to build a rich, human vignette, something you can’t find at the store.


Office 2


Here we are in Bjork’s office. Like Lindsay’s office, we used the same IKEA desk bases here, also used in their previous studio space. Since we kept the walls white, we added in a warm walnut butcher block desktop, which is actually a countertop. The butcher block is valuable long term, in that, should they ever move offices or redesign the space, it can be repurposed or sold. On the large open wall, we created a tiny library that doubles as decor. Reading and spending time offline, is a big part of this online company.

With books to read, you need a space to read, so we created a cozy reading nook. This nook also shares a wall with a large floating glass board, a board intended to capture thoughts while thinking out loud. It can also easily wipe clean again and again.

We’ve had a lot of dinners with Bjork, and he has a lot of sayings, many I’ve bookmarked in my head. In his office, I wanted to add personal artwork, maybe one of those sayings. He sent over the 1%∞ mantra. You can read more about this idea here. I created a simple poster for him, and somehow, in the last couple of weeks, his office just came together. It was the most unfinished space in the design renderings.

Because we’re in Minnesota, coat hooks in every office were a must. These single hook, two-prong beauties are so lovely I might get some for our house. And look, there’s a sneak peek into the dining room and the top of my back. (It’s hard to get out of the shot when you’re 6 months pregnant.)

Office 3, Jenna’s office, is a reflection of Bjork’s office, with more feminine touches and less shelving. It’s open and refreshing with a couple of pops of color.

I ended up adding a table to this vignette for additional storage, visual weight, and a place to work, after watching many a meeting gather in this little area while designing. Now there’s an extra spot to set things, like a coffee cup or a laptop.

We really got to IKEA-hacking away in Eman’s office, the office that needed to fit an extra person from time to time. Having had a previous studio space, the Pinch of Yum team already had a lot of furniture, many pieces that were from IKEA, like these long white desktops. I wanted to utilize as much of those items as possible, so I found a tall cabinet, nearly the same width as the desktops to puzzle-piece this idea together. Here’s how we did it. We added the IKEA cabinet to the middle of the wall, notching out the floor baseboard so it would fit flush against the wall. Then, we used two white IKEA desktops and had the length cut-to-size and mounted to the wall and cabinet, creating two semi-private workspaces. And by we, I mean, I came up with the idea, and we hired out the execution so those floating desks would actually float. This arrangement anchors and flanks the long wall nicely while offering a bit of personal space in a shared space, plus some welcomed storage.

In the last phase of design, I created an artwork selection guide. This guide was intended to help the team choose their own art from a curated selection that fits the aesthetic of the studio while also making these spaces feel like their spaces. You can see a slight shift in tastes throughout the offices without completely departing from the overall look.


Tip

With a neutral palette, try adding in a couple of unexpected pops of color to help the space to feel human and not overly designed or sterile. Also, consider pairing two unlikely pieces. For example, something sharp and graphic with something soft and natural, making sure there is some continuity of color/tones throughout the selections.

Pinch of Yum Kitchen and Dining Room Renderings


We’re really close to wrapping up the Pinch of Yum Studio design project, a project that started a whopping 6 months ago. A project that began with me asking a lot of personal and professional questions that seemed to keep running into each other, begging for answers. I took the one-word advice I’ve given to others with a pile of questions that need answering: Play. That’s just what I did. In this case, play looked like designing a space outside of my home, for a client other than myself and Kev, thankfully for friends. It’s been messy and amazing, fun and hard. I’ll tell you more about all this playing another day. A couple weeks ago, I shared the office design plans and the aesthetic for the studio. Later this week, I’ll share the final reveal of the office spaces (!). But today, I’m sharing the kitchen and dining room renderings.




A huge thanks to IKEA, who furnished a good chunk of the studio, from the offices to the kitchen, which was amazing as I was already using their products in the design. 
Kitchen Renderings

Below are the Photoshop renderings for the spaces. For each rendering, you’ll see the original image, the empty room, that the file was built on. The large image is the final rendering used to implement the design. Designing this way helps me to better understand how colors and textures will interact together in the final space. With both the kitchen and dining room, I also used the online IKEA Home Planner tool to design for scale, cabinetry, appliances, plumbing, and electrical.


PS—I’ve used their user-friendly online planning tool before in our laundry room. The in-store IKEA staff are also super knowledgeable at helping answer any questions. I took full advantage of this with the kitchen. They made a couple of genius, last-minute tweaks to my kitchen design before ordering. (Thank you Eva, if you ever happen to read this!)



Pinch of Yum, as you probably know, is a food blog, a very delicious one. May I suggest their Chicken Pot Pie with Biscuits and Magic Green Sauce? (Not at the same time.)


This kitchen needed to be more than just a heat-up-your-lunch studio kitchen. It needed to be a test kitchen. Design-wise, they wanted to keep the studio minimal and open. The kitchen is surrounded by white walls, black glass doors, and black interior windows with offices on the outside. In order to balance these dark, heavy elements lining one side of the open space, I recommended going dark in the kitchen. They agreed, so we went with these beautiful matte black IKEA Kungsbacka cabinets made from plastic bottles (so cool) and kept things light and airy up top with open shelving. With their previous studio only having lower cabinets, and far fewer than this, this arrangement gives them plenty of storage space.



They went with a freestanding island to keep the space nimble and transient. Not having worked in the space beforehand, it’s hard to predict all the specific needs. For that reason, we kept the island flexible, with the ability to be altered in the future as needs arise. (Note: all sources will be listed and linked in the final reveal post.) Dining Room Rendering

When entering the studio through the original wood door, the dining room is the first room you walk in to. It’s a narrow space with just enough room for a slender table. To the left is the kitchen. The dining room needed to double as an eating area and a meeting space. And, with no formal entry space, it also needed a touch of hospitality in the execution of the design.


We lined the space with hooks and painted the bottom half of the wall a muted dark blue, after seeing a similar idea at IKEA. The hooks could be both functional for leaning artwork and hospitable for hanging coats of guests. We’re in Minnesota after all. There will be coats. I found a slender, sturdy table for everyday usage with the ability expand for special occasions, floating a large but airy light fixture above.



Below is the floor plan and 3D view of the dining room created in the IKEA Home Planner. While this tool is extremely beneficial for understanding the capabilities of a space, it lacks in color and texture accuracy, as most interior design programs do. I’ve said it once and I’ll say it again: Photoshop to the rescue.



I can’t wait to share these final spaces with you, a culmination of 6 months of work. The stone counters went in last week, and the open shelving goes in tomorrow. And, if all goes as planned, I’ll scarf down my final meal in the dining room while styling and shooting it later this week, just before signing off for the holiday break.

We can do big, hard things. This is sort of becoming a mantra at our house. Though most of our big things are small things and our hard things are not-so-hard things, but they are for us. You know, things like saying good-bye to mom before getting on the bus to school, or planning ahead and using a calendar, or saying no instead of overcommitting. And then there are other big-hard things like making a cheese board for a party. Ask me to design a whole house, and I’ll leap with glee. But ask me to create a winter cheese board, and I’ll sweat faster than a cold block of cheese in a warm room.


This post was created in an ongoing partnership with Roth Cheese, makers of handcrafted alpine-style cheeses made in Wisconsin. This month I’m playing with their Grand Cru, Gouda, and Prairie Sunset to make mingling and cheese boards doable and beautiful. 

Cheese boards intimidate me—from flavor pairings to the final assembly. There are so many decisions involved, decisions I feel ill-equipped to make. But after realizing that everything is at-the-ready at the grocery store, after realizing these are the biggest crowd-pleasers that come together super fast, after realizing I can use the same design principles that I use in a room on a board, I’m wrapping my head around creating a Simple Winter Cheese Board and sharing it too. Just in case it’s on your big-hard list.

How to Create a Simple Winter Cheese Board
4 key components to keep in mind: flavor profile, color palette, repetition, and variety

1. Choose a starting place: cheese, produce, herbs, meat, or nuts. There’s no right starting place, it’s just important to start somewhere (which can be the hardest part). Think of this starting place as the inspiration piece for designing your living room, I mean cheese board. It will help to guide the rest of your decision making. 


2. I’m starting with the cheese, using Roth Grand Cru Reserve, Roth 3 Chile Pepper Gouda, and Roth Prairie Sunset. Don’t think too hard here. Just pick your favorites. Also consider varying the texture of the cheeses you choose: hard, crumbly, soft, etc. Note: Roth cheese can be purchased in the deli area, either prepackaged or in wheels cut-to-size and wrapped on site. 


3. Next, choose a flavor profile based off your starting point: sweet, spicy, savory, sour, nutty, etc. Since I started with cheese, my flavor profile for the board was dictated by the cheese. One of my favorite things about Roth Cheese is that they list flavor profiles and pairings on their packaging. No more ignorantly sweating at the cheese case. I grabbed spicy from the gouda, nutty from the Grand Cru, and sweet from the Prairie Sunset. Spicy, sweet, and nutty. 


4. Now head to the produce aisle, making selections based on what’s in season. During winter months, vegetables need a bit of work and cooking to serve. Let’s keep this simple and buy preserved vegetables instead. As for fruit, grab for pears, citrus, or pomegranates. Let those colors begin to dictate the color palette of the board. Now we have a flavor profile and a color palette nailed down. Whew! 


5. Choose an herb to highlight. When choosing an herb, think of it like the herby garnish on a cocktail. It’s a minor flavor component that often adds more aroma than flavor. But it also makes things taste and look alive. It’s like adding a plant to a room. I chose rosemary and accented with sage for texture. Try repeating this herb in other elements throughout the board. 


6. Head to the preserved vegetable aisle. Make selections based on flavor and/or color palette. I went with black olives wrapped in a deep purple hue to add a bit of contrast to the board.  


7. Choose a nut or seed with a pop of flavor. Because I’m using rosemary on the board, I wanted to repeat it here, so I used a salted rosemary Marcona almond. If you can’t find what you’re looking for at-the-ready, you can always lightly heat your nut or seed of choice on a skillet and coat with a little oil, salt, and herb.


8. Choose a cracker. Try repeating a flavor in this selection too. I went with something nutty and sweet, a rosemary (there it is again) raisin pecan cracker. And, to add visual contrast to the board, I preferred a darker cracker. Imagine what the board would look like if the cracker were the same color as the cheese or the pears. 


9. Choose a deli meat (optional). Look for something requiring minimal prep to add to the board that will also last an hour or two out at room temperature. I chose a beautifully cured pepperoni, which picks up the color of the pear and adds a nice salty contrast to the sweet components.  



10. Prep the board. Cut the cheeses and produce just before serving. When cutting, think about how you might easily eat or assemble a bite. I generally tend towards thin slices of everything, which also lays beautifully on a board. For cheese, try a variety of cuts, from thin wedges to small cubes to large wedges that can easily be cut with a knife or broken with hands. Use tiny bowls to compartmentalize items on the board and house wet ingredients, like olives. Note: for the best flavor, let cheeses sit at room temperature for 30 minutes before serving.


11. Assemble the board. You’ve made all the hard decisions. Now to assemble them. Lean heavily on repetition and movement here. Start by adding any small bowls to the board. Next, choose one color to start with and repeat it around the board. Notice the pops of reds that I started with, zig-zagging them around the board.


Layer in the additional colors, repeating them around the board as well. Vary the placement of ingredients by adding the same ingredient to multiple places. To add movement, make the ingredients dance, bend, stack, and curve around each other. Lastly, tuck in the herbs and sprinkle a bit little here and liven things up. Don’t be afraid to add whole fruit or a large hunk of the remainder of an ingredient to vary the visual scale of things. You can always cut into it if needed.


12. Pair with a slightly sweet white wine and then drink some for me. Spicy, sweet, nutty, delicious, and beautiful. We did it.

DIY Nordic Wooden Ornaments

We’ve always kept our Christmas tree simple with colorful ball ornaments. They appease my need for simplicity, Hal’s need for color, and Kev’s need, well, he doesn’t have many needs in regards to all this hubbub. While the jingles jingle over the speakers, we decorate the whole house within a couple hours. It all comes down just as easily. There’s a lightness and a brightness to the look of it all, to the ease of it all. Of course, that stands in stark contrast to the very hard parts about this season, which is why I try to keep this side of things simple. Simple like these DIY Nordic Wooden Ornaments we added to the tree this year.

These wooden balls were left over from a year-long parenting experiment that went quite well. I planned on sharing our experience with the experiment, but anything too parent-y on the internet has a way of going sideways. Maybe one day I’ll tell you about it. In the meantime, I want to tell you about these DIY Nordic Wooden Ornaments for your tree, for a gift topper, or for a snowy, crafty afternoon.


How to make DIY Wooden Nordic Ornaments
What you’ll need

Multi-size wooden beads
Thick cooking twine (like the kind you use to truss a chicken)
Large eye thick sewing needle

Step 1

Cut a 13-inch long piece of twine. Thread it through the needle head. Gather 3 beads: a small, medium, and large. Start by stringing through the large bead first, then medium, then small. You’ll be left with a piece of twine threaded through the beads.

Step 2

Next, remove the needle and rethread it through the other end of the twine, on the side with the large bead. String it back through the beads, starting with the large bead, to create a loop. Keep a finger or pencil in the loop to keep it from slipping through the beads.

Step 3

Holding both cut ends of the string, tie a knot with enough room for a slight fringe at the bottom, being careful to keep the beads from falling off the loop end. A single knot is sufficient unless you’re working with thinner twine. Double knot as needed. Then tie a double knot on the end with the loop, nudging the knot as close to the large bead as possible. If your beads are larger or smaller than the ones listed, you’ll need to adjust the length of your twine accordingly. Hang your DIY Wooden Nordic Ornaments on your tree, on a present, or over a bottle of wine.

Minimal Winter Maternity Wardrobe


I’m short. And now I’m short and pregnant. Finding comfortable clothes when I’m not pregnant is difficult. It’s especially difficult in the winter when I have to also consider pant length or find a tailor to lop off the bottom half. (I really should learn how to hem.) Now I’m short and pregnant during the entirety of winter. I was pregnant with Hallie during the summer months, when you can skip pants for flowy, stretchy dresses and stretchy workout shorts with Kev’s big shirts. I only bought a couple of items that pregnancy. When this bump popped (and it popped fast this time around), I had nothing to wear. I proceeded to buy and return a lot of items in an effort to create a Minimal Winter Maternity Wardrobe. 


Thankfully, I’m only buying maternity clothes for one season. Winter. And thankfully, finding clothes that fit is a very minor maternity problem, even if it feels like a big one some days. And thankfully, after buying and returning what feels like the entire maternity line available to the world, I hopefully have a couple tips to pass on to you. For non-maternity minimalist wardrobe tips, head this way.



How to Create a Minimal Winter Maternity Wardrobe

List the occasions you need clothes for: everyday, work, working out, special occasions, lounging, etc. This will help to determine the types of clothes you need as well as the amount per category. You’re basically building an entirely new wardrobe.
Consider how often you do laundry: once a week, twice a week, every other week? This will also help to determine the number of clothes you need.
Consider your style. Do you want to look like you always do? Or do you want to branch out for 9 months? I did a little bit of both, making sure I had my staple pieces that I always wear.
Buy with the end in mind. Will this fit week 33? Do you plan on having more kids? The answers to these questions will help you decide what to buy as well as the quality of what to buy. Whatever I bought at the beginning, I wanted it to fit in the end, so things looked a little baggy at first. I also bought knowing that this is my last pregnancy.
What type of panel do you prefer? Full panel, demi, or side-panel/inset? Who makes your favorite panel? After trying all panel styles and several panels from different places, I prefer a full panel since I’m so short and carry so low, a panel without an elastic bands sewn into the top. The other two styles hit my bump at uncomfortable spots. Loft makes my favorite full panel that stays put without feeling too constricting. (They also sell petite maternity.) With that said, I’ve limited my pant search to the Loft.
Scour your closet for items that can still be worn, like open-front sweaters, cardigans, vests, and tunics. It’s so nice to be able to wear items you already own. They make me feel a little like my old self.
Most maternity clothes are sold online only. Look for stores with a free return shipping policy. With some stores, you have to pay return shipping fees, which can quickly add up to a new pair of jeans. Also, look for stores that you can return to a nearby store. Limit your purchases to these places for ease.
Buy multiple sizes when ordering. I made this mistake so many times, which led to unnecessary orders, returns, and trips to the post office. At some stores, I’m a size smaller in pants and at others, I’m two sizes larger.
It’s hard to watch your body change shape (at least it is for me). Try scarves or straight, open-front sweaters to cut the curvy lines and accentuate your sweet bump. It’s a trick I use to feel a little more comfortable in my growing skin. These items are also great for adding variety to your minimal wardrobe.


My Minimal Winter Maternity Wardrobe Template
Color palette: black, white, chambray, and grey + a pop of plaid
EVERYDAY

1-2 pairs of blue jeans (full panel, dark rinse, skinny)

1 other pair of jeans (I like these white jeans OK. Loft is out of my size. Size up.)

2 fitted long-sleeved tees, same color

2-3 button-downs or popovers

1-2 white camisoles, 1 black (love these long camis for maternity or not)

2 non-maternity cozy open-front sweaters

1 non-maternity vest

1-2 scarves (PS—men’s plaid patterns are always better than women’s)

1 maternity jacket or jacket extender


For the most part, my everyday maternity wardrobe heavily resembles my non-maternity winter wardrobe. I didn’t buy as many duplicates as I typically would since I’ll only be wearing these clothes for 9 months. For that same reason, I thought I’d add a little more pattern to this wardrobe and buy a coat with color, too.


Workout

2 maternity workout shirts, same color

1-2 pairs of yoga pants, same color


These non-maternity Lululemon Align yoga pants fit better than any maternity yoga pants I bought. And I bought and returned them all, even the highest-rated ones. This particular pant came highly recommended by my friend who works for Lululemon, who wore them through her entire pregnancy, as well as the at-home prenatal workout program I’m following called Studio Bloom. Note: I sized up. The Align pant comes in two series. I prefer the original Align pant as they come in a variety of lengths. I bought 23″ crop (pictured above). The Align II pant has an additional seam up the sides of the legs.
Special Occasion

1 pair of black pants


I wear these pants with a shirt from above, plus a necklace, and that’s as fancy as I’m going to get right now.
Lounge

1 sweatshirt

1 pair of ultra-comfortable pants


By night time, I feel huge and uncomfortable, even in my favorite pants. I change into a huge sweatshirt and some super non-constricting leggings I bought while pregnant with Hal. Having these items has really improved my evening mood. (I get grumpy when my clothes feel tight.)

Pinch of Yum Office Renderings


It’s finally come time to start sharing the Pinch of Yum Studio design (!!). If you’re wondering what I’m talking about, you can catch up with this post from August. Design is a whole lot of talking about design, like months of it, and all of a sudden it just takes shape overnight, which is what is happening right now. As I type, the drills are drilling along to Michael Bublé and Adele in the background. The IKEA kitchen is going in. (Not by my hands, though I’ve put together my fair share of IKEA projects for the studio, a favorite pastime of mine.) I’m excited to share the final reveal next month. I first started doing these Photoshop renderings for Kev, 5+ years ago for our house, when he couldn’t see the vision inside my head. I hated doing them until I realized I made far fewer design mistakes with this method. So I’ve taken this skillset to the streets, to the Pinch of Yum studio.


Visual Direction

Let’s rewind back to the visual direction conversation for the studio. You may remember, I presented three mood boards or visual directions: Minnesota Cozy Cabin, Bright Scandinavian, and Naturally Neutral. You can see them here. Each had a bright, minimal aesthetic, with a slightly different bent. This process helped me to visually clarify what they meant by “bright and minimal.” It can mean a lot of different things. They ended up going the Naturally Neutral direction: Bright whites accented with blacks, greys, natural creamy creams, and warm wood tones.


This initial visual decision set the stage for all future design choices. One difficulty in design is having a whole lot of pretty choices at your fingertips. You can do anything. Choosing a specific visual direction gives you permission to say: I love this chair, for example, but it doesn’t fit with this particular aesthetic. Parameters in creativity are a beautiful thing. And we built in a lot, right from the beginning.

Office Renderings

Below are the Photoshop renderings for each office space. You’ll see the original image the Photoshop file was built on and then the final rendering. What you’re not seeing are the rounds of revisions. (I’m saving those ideas for another project.) As we started each space, we considered the function of each room. How do you need this space to perform for you? I’d ask. Often times, a space needs to perform many different functions besides the obvious, and design is a great problem-solving tool for beautifully incorporating multiple functions. From there, we layered in the form, the pretty stuff, what you think of when you hear the word “design.” We then took these final renderings, which you’ll see below, to hire contractors and execute the design.


Office 1


This is Lindsay’s office, the head creative director and founder of Pinch of Yum, a food blog with super doable and delicious recipes. She oversees recipe development, post writing, and photography (and a lot of other things). Her office space needed to efficiently perform each of these functions within a given day and/or week.



So, we separated her office into three zones: computer work, offline work, and photography studio. We added a huge desk to flank the work wall, weighting it with a coat of black paint, giving her multiple workspaces within one, an online and offline space. We gave her a small seating area for two-person meetings or occasional offline reading. On the other side of her office, we flanked the wall with shelving, to add both balance and storage. The open shelving was designed to house all her styling props while also standing in as decor. By the windows, she has a shooting cart for photography.



Office 2


Welcome to Bjork’s office. Bjork manages the backend of Pinch of Yum, runs Food Blogger Pro, a comprehensive resource website and podcast for starting a blog, manages the plugins WP Tasty (the recipe plugin I use) and Nutrtifox, among other ventures. He wanted an online and offline working space, a space to read, and a space to think out loud.



So we separated his office into two zones—online and offline zones, a space for computer work and a space for non-computer work. We flanked a wall with a long desk, similar to Office 1, adding bookshelves to house the books he’d be reading in his offline space, which would also stand in as decor. On the other side of the room, we added a cozy reading area. We also added a large glass board where he can think out loud and capture his thoughts.



Bjork’s office came with an extra set of design stipulations in that it’s positioned in the middle of the studio, with an office mirrored on the other side of his wall. This is relevant information in that both offices have a huge interior window to allow light from the exterior windows to pass through. This meant we had to consider the design of both offices when designing his, since you can see into both at the same time. What we did in his office needed to be able to work in the next office over, with some slight modifications.


Office 3


This is Jenna’s office. Jenna is the communications manager and has worked on the team since I helped design their previous studio space several years ago. The bulk of Jenna’s day is online, at the computer, working on brand partnerships, internal and external communications, and social media support. For that reason, we prioritized her online workspace. Jenna’s office is a mirror to Office 2, Bjork’s office. To pick up the design of that office while matching the function of her space, we flanked the wall with the same long desk, went with a single shelf over her desk for decor, and added a meeting/seating area on the opposite side of the room.



Office 4


This is Eman’s office. Eman occupies this office full-time, working part-time with Pinch of Yum and part-time with Food Blogger Pro, with the majority of her work online. However, they needed this office to also be fluid, with the ability to accommodate an extra office space as needed. I came up with a simple solution to add storage and privacy at the same time. There’s also decent space on the other side of her office that we’re purposely leaving under-designed for now. Not having worked in this space prior to moving in, it’s hard to anticipate all the ways in which they’ll need the space to function. This extra space will be available when the specific need arises.

And I got grumpy that my pants were tight. So, I cooled it on all the baking and turned my attention to dinnertime, which was a gaping hole at our house, that and designing our home, which made me really happy. But now that all my pants are all fitted with a stretchy elastic band and the doctor says to eat 300 extra calories a day, I’m bringing back vintage Faux Martha for a second, turning this place into a bakeshop. I used to make beer bread a really long time ago, circa 2009, when leftover beer would remain in the fridge from a dinner party. Neither of us were beer drinkers then, but we had no problem finishing off a loaf of that yeasty, from the beer, quick bread. I took my slice with a shmear of butter and a heavy hand of black raspberry jam, a treat from our local farmers market. Oh, that slice. It tasted like the sweetness of early marriage and the abrupt launch into adulthood, like learning to cook and overcooked smooshy summer squash, like our teeny tiny apartment and our very empty bank accounts. It tasted like vintage Kev and Mel.

With all the good memories, beer bread comes with a couple of unsavory ones too. Like its hallmark tough, tug-a-war crust, the overly dense texture, the bitter ending, and hearing the neighbor’s arguing in the apartment 5 feet across the alley. They probably heard our tiffs too, like the one about painting the kitchen for a third time. Sorry, Kev.

Ten years later, with an extra beer in the fridge that I can’t drink, but who I am kidding, I’d be grabbing for wine aged in bourbon barrels if I could, I’ve decided to tackle the unsavory notes of beer bread. Because a quick bread that comes together quickly is a really good thing to have in your recipe deck during chilly, last-minute-get-together, soup season. It’s a good recipe to have for cleaning out the fridge, too.


How to make really good Beer Bread

Scale back on the flour, which is what you’ll find in the recipe below. Most recipes call for 3 cups of flour to 12 oz. of beer. In my kitchen, that always yields an overly chewy crust with a dense crumb. I prefer 2 1/2 cups of flour to 12 oz. of beer. 
Speaking of beer, you want something light in flavor here. A hoppy, bitter beer will taste even more hoppy and bitter out of the oven. Bitter beer bread is a thing, and no one in my house enjoys it. Look for a Pilsner or similar pale lager.
The base of this recipe is simple and foolproof. With that said, take the liberty here to add in extras like cheese, herbs, and fruit. I used an aged Roth Grand Cru, which is a Wisconsin made cheese using classic, Alpine techniques, aging 6+ months in a copper vat. Grand Cru is known for its light floral notes, nutty undertones, a hint of fruitiness. Think gruyere. I took notes from the flavor profile of the Grand Cru, adding in fruity apples, nutty wheat flour, and floral thyme. It creates a harmonious flavor. No one ingredient has a solo in this loaf.
Try not to over mix. Soda breads, which beer bread falls under, naturally yield a hallmark chewy, dense texture. In addition to reducing the flour, try not to over stir. A lot of the lifting work happens in the oven from the bubbly beer and baking powder. When you over stir, you over-activate the gluten in the flour, and it gets anxious and tight. We’re looking for a relaxed flour here.
This is the perfect recipe to add wheat flour. It’s in the beer, it might as well be in the flour too. Feel free to experiment using the ratio below, 2 cups of all-purpose flour to 1/2 cup wheat, spelt, or buckwheat flour. Added nutty flavor is welcome here. Don’t worry,  the all-purpose flour, beer, and baking powder will help to take care of the high rise.

Description

I’ve added a couple extra delicious ingredients to the base of this beer bread recipe to change things up. I hope you feel the liberty to take this fool-proof recipe on a spin. Here’s the base ingredients for the beer bread: flour, baking powder, salt, beer, and maple syrup. Go simple or grate in a little extra goodness. You choose.







Ingredients
DRY

2 c. all-purpose unbleached flour

1/2 c. wheat flour (or something similar)

1 tbsp. aluminum-free baking powder

2 tsp. fresh thyme

1 tsp. kosher salt, heaping

1/2 c. (6 ounces) grated Roth Grand Cru Reserve

1/2 c. shredded apples* 


WET

1 (12 oz.) bottle of light beer, like a Pilsner

1/4 c. maple syrup


OPTIONAL GLAZE

1 tbsp. salted butter

drizzle of maple or honey







Instructions

Preheat oven to 375°F. Drape a piece of parchment over an 8 1/2 x 4 1/2″ loaf pan. Set aside. 
Prep the dry ingredients. In a large bowl, stir together the flours, baking powder, thyme, and salt. Grate the Grand Cru and apples. This is my favorite grater. Toss the cheese and apples into the mixture and stir to coat. 
Prep the wet ingredients. Open the beer and measure out the maple syrup. No reason to dirty up an extra utensil here. Eyeball 1/4 cup in your 1/2 cup measurement. Pour both into the dry ingredients at the same time. Immediately fold the batter with a spatula just until combined, being careful not to overwork the batter. 
Pour batter into prepared loaf pan. Place in the oven to cook for 45-50 minutes. After about 40 minutes, cover the top of the loaf with tented foil as needed to prevent the crust from over-browning. The bread is ready when a toothpick comes out clean from the top center. 
Out of the hot oven, add the optional glaze. Gently shmear the butter over the crust and lightly drizzle with honey or maple syrup. Allow to cool for about 5 minutes before running a thin knife to loosen the loaf. Remove from pan. Serve warm with butter or within a day of making. Best on day one. 








Notes

*Any apple will work for this particular recipe, but apples suited for baking work best as they tend to hold their shape under the heat of the oven. I used Honeycrisp apples, which I also love to eat.


For an extra pretty presentation, add a couple of thinly sliced apples to the top of the loaf before baking and sprinkle with a little extra thyme.
