New Baby Meal Kits and Crispy Kale and Chickpea Bowls

This time around the new motherhood sun, I had plans to help myself succeed, plans I didn’t know to bother with the first time. You know, plans like childcare outside the house for Linnie and summer camp for Hal; plans like washing my face every day and ordering meal kits to make sure we eat at least one satisfying meal a day. Simple plans thwarted by COVID, all of them except ordering meal kits, which saved dinnertime the first two months as a family of 4, which also inspired this post and recipe for Crispy Kale and Chickpea Bowls now on regular rotation over here. (PS—We’re going a little crazy,  but I’m so thankful for all this extra time with my girls.)




We’re not meal kit people, mostly because I’m picky, Hal’s picky, and I usually enjoy making dinner. That and subscribing to anything reoccurring, other than Bravery Magazine, just makes me nervous. But after Hal came out and we came home, everyone looked to me to make dinner because I’m the dinner maker—the picky, opinionated dinner maker who’s also not very good at delegating, asking for help, or expressing my picky dinnertime opinions. (I’m a 9 on the enneagram. Can you tell?) It was a recipe for unnecessary added stress during a naturally stressful time. 


Six years later and I’m no better at asking for help or expressing my picky opinions. But I’m good at finding creative solutions. So I skipped delegating, meal planning, list-making, and grocery shopping, and picked veggie-packed dinners on the internet. (I craved loads of vegetables after both births.) Dinner fixings arrived at our doorstep, and whoever had a free set of hands made dinner. My mother-in-law, and sometimes Kev, swooped in to make something super satisfying land on the dining room table night after night. It was a huge gift.

In case you’re considering meal kits to make it through a stretch of time, too, here’s our unsolicited thoughts purchased from our wallet and those coupons in the mail rescued from the trash. Note: before we ordered, I took a poll on Instagram stories to see which veggie-based meal kit you recommended between Hello Fresh, Sun Basket, Blue Apron, and Purple Carrot. Hello Fresh was far and away the most recommended, with the rest pretty evenly represented. However, more people took the extra step to write a message about their love of Purple Carrot. So, after looking at meal plans from each of the companies plus your recommendations, we went with Hello Fresh and Purple Carrot.

Pros

The meals were chock full of vegetables.
Super satisfying and delicious.
The recipes stretched our picky palate, so much so we enjoyed meals with ingredients we didn’t think we would.
Most of the packaging was recyclable or compostable (see here). 
You get to see the full recipe and nutrition facts before ordering. They also send a booklet of all the recipes for that week. I saved several to remake some of the recipes on my own.
Because Purple Carrot is vegan, all meals are dairy-free, which is great if you find yourself nursing and needing to remove dairy from your diet in a jiffy.

Cons

The portion sizes were just right to a little on the smaller side.
At first glance, the meals weren’t quite as kid-friendly, but surprisingly our pickiest eater, Hallie (age 6), ate most of the meals and found a couple of new things she liked!
The ratio of vegetables was on the heavier side. I would have preferred a slightly higher ratio of grains. 
Prep time almost always took longer than listed.
A lot of recipes seemed like they could have been developed to cook/prep more efficiently. We did a lot more dishes compared to when I cook my recipes. I’d often go through and edit the recipe before someone attempted it due to this. In fact, this recipe for Crispy Kale and Chickpea Bowls was inspired by a Purple Carrot recipe, but I reworked it to be more efficient, decreasing the prep time and dishes needed.
A good chunk of recipes used meat substitutes, like tofu and seitan. When eating plant-based, we prefer legumes for the main protein, but that’s purely preference. Even still, we enjoyed the meals and are now big fans of Field Roast Sausage. (Their corn dogs are also surprisingly good.)

Hello Fresh (Vegetarian)
Pros

Super satisfying and delicious.
The portion sizes were generous. So much so, we’d often have leftovers for lunch the next day. 
The recipes were familiar yet special, which was great for vegetarian recipes. Some vegetarian meal kit menus were so simple, I might as well make it myself. 
The meals tend to be more kid-friendly or can easily be altered.
There’s a large variety of meals to choose from.

Cons

Sour cream was in almost every recipe. We were pretty tired of it after a couple weeks. This isn’t my favorite creamy fat to cook with (I prefer plain whole milk yogurt), but that’s purely preference. 
Many recipes were heavy on the butter, especially for sauteing. I edited the recipes to use less and swap in olive oil. (I love butter, especially for baking or shmeared on bread, but don’t use it as much for dinners.)

General thoughts on meal kits

There’s unavoidable packaging waste. For this reason, meal kits felt like a great short term solution for our temporary problem (needing to get a satisfying dinner on the table with a new baby), but not necessarily a long term solution due to all the packaging. 
If you’re new to meal kits, you may need to adjust your expectations slightly. You still have to prep, chop, cook food, and clean dishes, which takes time. What you’re buying (and saving time on) is meal planning, curated tested recipes, and portioned out groceries delivered straight to your door.
Meal kits are a great way to learn how to cook, learn new techniques, and think about ingredients in a new way. I learned a whole lot.


If we had to choose just one

Overall, we were really happy with both, but if we had to just choose one, we fell in love with Purple Carrot. Maybe it was the excess of sour cream that tipped us away from choosing Hello Fresh? If I could curate a perfect meal kit, it’d fall somewhere between these two, using olive oil instead of butter, yogurt in place of sour cream, and legumes in place of meat substitutes. Either way, I think you’ll like these Crispy Kale and Chickpea Bowls inspired by Purple Carrot. Spicy, sour, sweet, tart, and crunchy, this recipe is familiar like a gyro, doable on a weeknight, and so satisfying.

Description

Inspired by a Purple Carrot meal, these Crispy Kale and Chickpea Bowls are a bit like a gyro in a bowl, with spicy, crispy chickpeas and a touch of sweetness from the dried tart cherries. Spicy, sour, sweet, tart, crunchy, it’s punchy and fresh yet familiar.







Ingredients
Crispy Chickpeas

2 cans (15 oz.) chickpeas
2 tbsp. olive oil, plus more as needed
1 tsp. kosher salt, plus more as needed
1 tsp. chili powder
1/2 tsp. paprika
1/4 tsp. cayenne

Rice

1 c. 15-minute rice (see notes)
1 tbsp. butter
1/4 tsp. kosher salt

Toppings

4 c. chopped kale, destemmed, about 4 stalks (see notes)
1/2 c. sliced cucumber
1/2 c. sliced radishes
1/2 c. dried tart cherries, roughly chopped
crumbled feta

Tzatziki Sauce

1/2 c. plain whole milk yogurt
1 tsp. dried dill (2 tbsp. chopped fresh dill)
1 tbsp. lemon juice
1 small clove garlic, minced
1/8 tsp. kosher salt
a couple cracks pepper







Instructions


Make the chickpeas. Preheat the oven to 400°F and line a baking sheet with parchment paper. Meanwhile, drain and rinse the chickpeas. Pat dry and place on the baking sheet. Toss with the oil, salt, and spices to evenly coat. Once preheated, roast for 12 minutes before adding in the kale.
Meanwhile, make the 15-minute rice. In a small saucepan, make rice according to package instructions, adding salt and butter. (Note: if your rice takes longer than 15 minutes to cook, begin the recipe by starting with the rice.)
Prep the toppings. While the chickpeas roast and the rice cooks, prepare the kale, cucumbers, radishes, and tart cherries, beginning with the kale that will roast shortly. (To quickly slice veggies, I like to use the OXO Grate and Slice.)
Once the chickpeas have roasted for 12 minutes, add the kale plus a tiny extra glug of oil and sprinkle of salt. Toss to coat and roast for an additional 10 minutes or until the kale is crispy.
Make the tzatziki sauce. In a small bowl, stir together all tzatziki ingredients. This can be made up to 8 hours in advance.
To serve, add rice, chickpeas, and kale to the base of a bowl. Top with cucumbers and radishes, a sprinkle of feta and tart cherries, and a generous dollop of tzatziki.








Notes

I like to keep a trusty 15-minute rice stocked in the pantry for all rice recipes to keep prep time to a minimum. Test a couple out and see which one you like best. Stock that.


Kale takes a bit of time to prep. Lately, I’ve been buying a big bundle at the start of the week, prepping it, and eating on it throughout the week, which cuts down on prep time for this recipe greatly. Sharing my kale prep method soon.

DIY No-Sew Crib Skirt

After I assembled Hal’s crib, I was so disappointed to see this empty, unattended to space between the mattress and the base of the crib. The pictures I had seen of the crib were at the lowest setting, you know, where the mattress rests at the base of the crib, and, as a first-time mom, I didn’t consider how the mattress would look way up high for a really tiny baby. So I attended to the unattended to space and figured out how to make a crib skirt without a sewing machine or much skill. Six years later, I did the same for Linnie’s crib. If that space drives you crazy too, or if you’re just looking to add a pop of pattern, here’s a very simple DIY No-Sew Crib Skirt tutorial.

How to Make a DIY No-Sew Crib Skirt

This crib skirt is not a true crib skirt, but rather individual fabric panels that attach to the metal mattress support on your crib by velcro. As you lower the crib, the panels can adjust and/or come off altogether when no longer needed at the lowest setting. 


TIME: 2 hours   
HERE’S WHAT YOU’LL NEED:

1.5–2 yards of fabric 
PeelnStick Fabric Tape
Sharp scissors
Measuring tape
3M Velcro Hanging Strips

Step 1

Before beginning, determine the amount of fabric you’ll need by locating the adjustable metal mattress support on your crib. The crib skirt will attach to this. Start by measuring for the front panel (see fig. 1). To do so, measure the length of the metal mattress support. Then measure the height of the space where the crib skirt will be able to be seen, the space between the metal mattress support and where the bottom of the crib begins. (Note: this height will vary from crib to crib. It will also shrink as the baby grows and the mattress lowers.) Add 4 inches to both the length and width to account for a seam and wiggle room. 



Now, get those same measurements for the side panel(s), adding 4 inches to both the length and width. (Note: You may only need one side panel if the crib is cornered in a room. For Linnie’s room, I did one front and one side panel.) You’re ready to order fabric. Here are a couple of my favorite fabric designers and fabric sites: Rifle Paper Co., Rashida Coleman-Hale, Leah Duncan, Cassidy Demkov, Cotton + Steel, and Cloud 9. We used Herb Garden Midnight in canvas from Rifle Paper Co. 



Step 2

Measure out your panels on the fabric, marking with chalk. If using a patterned fabric, check to see how the fabric will sit behind the slats of the crib before cutting. (For example, I wanted to make sure the pink flowers were visible on our crib skirt and not hidden behind the slats, so I adjusted my cut lines accordingly.) Cut the panels using sharp scissors.  



Step 3

Create a seam to keep the fabric panels from unraveling on 3 of the 4 sides. To do so, flip the fabric over so that the backside is face-up. Add a strip of the PeelnStick Fabric Tape to the top of the longest side of the panel, pressing to adhere. On the top two corners, cut about a 3/4-inch long slit at 45° angle. 



Then snip off two right triangles (see fig. 2) so that when folded over, the two seams fit snuggly without overlapping. Remove backing, fold, and press to adhere. Add the fabric tape to the sides to create a seam, while leaving the long bottom cutline of the fabric open. Repeat step on remaining panels. Now you have a crib skirt!



Step 4

To attach the crib skirt to the crib, add velcro to the top side of the metal mattress support. Remove the mattress for this step. Start by sticking together two 3M Velcro Hanging Strips, then cut the strip in half so that you’re left with two velcro squares. You’ll need 3 squares total for the front panel and 2 for each side panel.

For the front panel, attach one square at either end of the metal mattress support, just before the corner rounds, on the top side, so that the crib skirt will look as though it waterfalls over the metal mattress support. Attach another velcro square in the middle. Remove the backing on the velcro and attach the top seam to each of the squares, starting with the middle square. Make sure the panel is hanging where you like it before adhering to the outer velcro squares. Attach the side panels in the same way, adding a velcro square to either end of the metal mattress support. Additional squares can be added if needed to create a taut look. 


As you lower the crib over the months that follow, shorten the crib skirt either by simply trimming off the seamless bottom of each panel or by adding a new velcro square further down on the back of each panel.

Chipotle Kale Slaw Quesadillas

Dinnertime right now is a game of how fast can I get dinner on the table with enough vegetables tucked inside—because, have I gotten enough vegetables today?— before the baby wakes up. It’s also a game of how can I accessorize the same simple meal I’ve made a thousand times over the last couple of months into something new-ish. Just like adding a necklace to the same chambray dress, slaw can somehow dress up the same old same old quesadilla into something oh-my-gosh good. That and swapping your regular quesadilla cheese for something smoky and spicy. Tonight, I won with these Chipotle Kale Slaw Quesadillas.

Birthed from a nearly empty fridge, from a leftover pile of prepped kale, a hunk of cabbage, a couple carrots, from a block of Roth Chipotle Havarti and tortillas from the freezer, and a tiny spoon of chipotle puree, these Chipotle Kale Slaw Quesadillas were shockingly good. I mean, I always hope dinner will be good, but when you’re throwing together yet another quesadilla, a quesadilla made from the last bits of the fridge, well, it’s good to keep your expectations low. Or maybe not. What is it they say? Necessity is the mother of invention.

If you’re like me, you’re an expert quesadilla maker based on the sheer number you’ve made. You need no tips. But I’m going to give you some as long as you promise to tell me yours. First things first, do a quick smash of your beans. They’ll act as glue, much like the melty cheese, and won’t fall out. Beans are also an inexpensive protein, which we’re leaning on extra these days. While you’re at it, add a splash of vinegar and a little red onion for quick flavor.

Second, accidentally and generously sprinkle cheese off the edges of the tortilla for crispy cheese bites. Finally, forget what your mom told you. It isn’t only about what’s on the inside that counts. The top of the quesadilla is precious square footage for things like slaw. Just leave a little thumb space for holding.

Description

This Chipotle Kale Slaw was born from the hardy remnants of the fridge and is best on everything, like quesadillas with Chipotle Harvarti and smashed black beans. Also good on burgers (veggie or meat) and chicken sandwiches.







Ingredients
Slaw

1 c. shredded kale
1/4 c. shredded red cabbage
1/4 c. shredded carrot
3 tsp. (or 1 tbsp.) apple cider vinegar
1 1/2 tsp. high-quality mayo
1 tsp. honey
1/4 tsp. chipotle puree*
pinch of kosher salt

Beans

1/2 c. canned black beans
1 tbsp. finely chopped red onion
1/2 tbsp. apple cider vinegar
pinch of kosher salt

Quesadilla

1 c. (6 oz. block) grated Roth Chipotle Havarti 
4 (7-inch) tortillas
cooking spray







Instructions


Make the slaw. Prepare the kale, cabbage, and carrot. This is my favorite cheese and vegetable shredder. Set aside. In a medium bowl, whisk together the vinegar, mayo, honey, chipotle puree, and salt until evenly combined. Add in the prepared vegetables and toss to evenly coat. Set aside for about 10 minutes to allow the flavors to develop. This can be made a day in advance. 
Mash the beans. Add all the bean ingredients to a small bowl and mash with the back of a fork. Set aside. 
Make the quesadilla. To a cast iron skillet, or something similar, heat over medium. Grate the Roth Chipotle Havarti.  Lightly spray or drizzle oil on the warmed skillet before adding a tortilla. Spread 1/2 of the bean mixture (about 1/4 cup) evenly over the tortilla. Top with 1/2 of the cheese (about 1/2 cup) and cover with a tortilla. Cook until the cheese is melted and the tortilla is crisped, flipping halfway through. Remove to a cutting board and cook the additional quesadilla. 
To serve, cut into wedges and top with slaw.








Notes

I always keep chipotle puree in the fridge, which is just a can of chipotles in adobo pureed into a smooth pile of heat. It’ll keep indefinitely. At the ready, a little plop in a recipe adds so much flavor!

This is a lesson we’ve learned over and over again in our young adult life—to remember to infuse the hard parts with something else.

We forgot how to laugh, Kev and I, after we had Hal when we were deep in the thick of things without much sleep. Ping pong seemed to help with that. I’ve felt that here, on the internet, forgetting how to hold this space, sometimes too tightly, too nervously, too buttoned-up, and other times, not at all. I’ve felt it through the sleepy sludge of breakfast time, eating the same old oats for the 43rd day in a row. What a silly thing to forget to do—to forget to have fun. Bright Blueberry Lemon Overnight Oats from The Faux Martha

Description

These Bright Blueberry Lemon Overnight Oats are meant to be made in advance—the night before or days to weeks in advance—for a quick final prep the morning of. Made with blitzed freeze-dried blueberries and spirulina, this recipe turns a magical, natural shade of blue. Before making, see notes below on how to make blueberry powder.







Ingredients
Overnight Oats

1/2 c. old fashioned oats
1 tsp. blitzed blueberry powder (see notes to make)
heaping 1/8 tsp. spirulina powder (what is spirulina?)
pinch of kosher salt
a couple of grates of fresh lemon zest
about 1/2 c. drinking water

Toppings

2 tsp. packed brown sugar, or to taste
splash of milk (cow or plant-based)
unsweetened shredded coconut (optional)
a sprinkle of granola (optional)
a couple of roughly chopped pecans (optional)
a pinch of chia seeds (optional)







Instructions

To make the night before:

Add all overnight oat ingredients to a serving bowl or bowl with a lid. Pour just enough water to wet all the oats, about 1/2 cup, but no more. Cover and refrigerate until morning.
The morning of, add brown sugar to taste and milk for creaminess. Top with optional toppings and serve chilled.

To make days in advance:

Add all the overnight oat ingredients to individual jars with a lid, omitting the water and including the brown sugar. This can be done up to 3 weeks in advance.
The night before eating, soak in just enough water to barely cover the top. The morning of, add milk to reach desired creaminess. Top with optional toppings and serve chilled.








Notes

To make the blueberry powder, blitz a package of freeze-dried blueberries (I use these) in a high-powered blender or food processor until a fine powder. Humidity may cause the blueberries to stick together. In that case, add a pinch of oats to the blender to help absorb the extra moisture. Store in an airtight container.


To make a large batch for multiple people at one time, size this recipe up as needed and make in a container with a lid large enough to hold the contents. Soak and assemble as directed.

DIY Baby Mobile

DIY baby mobile tutorial from the faux martha


We invested in a couple of pieces for Linnie’s room that would last deep into life. But I just couldn’t bring myself to invest in this cute $90 mobile that would only last months. Instead, I made a similar mobile for Linnie’s room for under $30. (We’ll turn those felted wool balls into a garland when she’s no longer enamored with lying on her back and looking up at the world.) If you’ve been dreaming of an easy tutorial for a DIY Baby Mobile, well, here it is.

How to Make a DIY Baby Mobile
TIME: 3 hours   COST: $30
Here’s what you’ll need:

10″ Metal Hoop
Cotton Yarn (in Ecru)
30 Felted Wool Balls, mixed sizes (3cm, 2.5cm, 2cm in vanilla bean)
Large yarn sewing needle

STEP 1

First, tightly wrap the hoop in the yarn. To do so, start by holding about a 1/2″ of the yarn on the loop, wrapping the yarn over it to hide the endpoint. Once you’ve wrapped the entire hoop, carefully tuck the end of the yarn underneath the last loop. (Note: During Step 2, loop your first dangling strand of the mobile over this intersection to add extra stability.)

STEP 2

Next, make the stands. Cut six pieces of yarn, about 28″ long. Then thread the yarn through the large needle. Next, choose 5 wool balls of mixed sizes for each strand. Pierce the center of each wool ball with the needle, and pull it onto the strand of yarn. To the last ball, thread the yarn back through the ball, near the initial hole, and tie off a discrete knot at the top of the ball. This is the bottom of the strand. Set aside and repeat to the other stands. 


Step 3

Attach the strands to the prepared hoop. To do so, grab the top of each strand, and simply loop several times around the hoop so that final length of the strand is between 20–21″ long, with the yarn falling on the outside of the hoop, as opposed to the inside. Tie a discrete knot after looping. 



Step 4

Snip off the excess yarn at the base of each knot, adjusting the length of the strand first, if needed. Adjust the placement of the balls as desired, keeping things unevenly spaced for the best appearance.


Step 5

Now to hang the mobile. Cut two 22″ strands of yarn. With the first strand, wrap several times on opposite sides of the hoop, and tie a discrete knot at each end, snipping off any extra yarn. Attach the other strand perpendicular to the first strand, doing your best to make sure the length of this strand is even with the first one as the weight of the mobile will center on their intersection point. Set aside.

Finally, cut an extra-long strand of yarn for hanging. Pick up the center of the two strands just attached to the hoop and run the extra-long strand underneath both. With a hook attached securely to the ceiling, hang the strand, adjusting to your desired length. Tie the strand into a secure small bow or knot. Gently tug on the hoop to level your DIY Baby Mobile. To spin, gently twist two opposing strands. And voila!

Linden’s Nursery

From guest room to Linden’s nursery, the transformation is complete, minus a tinker here and a tinker there. (See the moodboard here.) It’s strange to design a space for someone you don’t know yet, but it’s also one of my favorite things to do in the last weeks of pregnancy—to create a space she’ll hopefully love to play in and sleep in. Please sleep, I prayed as I set the level on the shelf while Kev screwed it into the wall. Please be level, too. Made from shallow prayers, teamwork, hand-me-downs, so many stripes, and last-minute Target drive-up pick-ups (because COVID), I’d love to take you on a tour of Linnie’s room.

Last time we did the newborn dance, we rocked Hal in the same wooden rocking chair my dad was rocked in. Super creaky, so uncomfortable, but wrapped in family history, I loved it. Kev, the main baby rocker, didn’t. We rocked a lot in that chair because Hal needed a whole lot of rocking to get to sleep…for 15 minutes. As soon as we found out Linnie was on the way, Kev went on the hunt for a nice rocking chair and found this beauty of a glider from Room & Board on Craiglist.

Guess who falls asleep without rocking? Maybe it’s just Linnie’s specialty or maybe it’s thanks to the Taking Cara Babies newborn class. Either way, this will become our reading chair just as soon as her wobbly neck stiffens up a bit. This chair was also our nursing chair for the first 2 months (and it was really great for that), but we seemed to have traded problems this time around. Hal was a rockstar nurser and struggled to sleep. Linnie has struggled to nurse and is a rockstar sleeper. (I’m exclusively pumping for now. Call me crazy. No really.)

When Linnie’s room was a guest room, we had a wall of wallpaper that I just couldn’t get to work for a tiny human’s room. (I tried because I hate to waste.) So we traded that removable red and white collegiate paper for removable pale blush stripes from the Chasing Paper x Pehr wallpaper collection. Kev took pity on me at 38 weeks pregnant and helped me hang it. Linnie loves to stare into the stripes as she falls asleep. Maybe this, too, was the answer to my sleep prayer. Hypnosis by cute striped wallpaper.

Long and skinny, this room was in need of a narrow bookcase that’ll fit even when her crib turns into a big kid bed. I found the perfect bookcase in the perfect color with the perfect depth at a price point Kev didn’t find so perfect. His Craiglist search came up empty, so we bought that perfect sage green bookshelf with the help of a gift card and money saved from a couple DIY projects that I’ll share soon. You know, every room needs some high to elevate the low. Let’s just call this bookshelf that.

When building the house, we opted for smaller bedrooms with closets large enough to fit a dresser, you know, to hide the daily mess of clothes. We tucked Linnie’s changing table/dresser in the closet too, topped it with a hand-me-down changing pad, and wrapped it in a pretty cover to match the wallpaper. Stripes upon stripes. Can you have too many? I hope not. With leftover crib skirt fabric and a little fabric glue, I covered the cardboard storage boxes for holding diaper supplies. A closet can be cute too. I still need to make another tiny mobile to hang over the changing table and distract Linnie during diaper changes. Have you tried this trick? It’s a lifesaver.



Welp, all 3 bedrooms now have permanent residents, leaving no room in the inn for the temporary kind. We always said we’d finish out the basement before adding to our family, to create a comfortable space for guests to sleep, and then we bought a cabin 4 days before finding out Linnie was on the way. So…it might be a decade before that can happen. But lotsa cozy cabin design is coming to the blog soon, just as soon as I share a couple more baby room DIYs.

Linden’s Room Inspiration


Oh, hi. It’s me again. We’ve been getting a 9-hour stretch of sleep outta this baby for the last week (!!), something we didn’t get outta Hal until she was over a year. Things are starting to feel normal again. You know, new normal. With that, I’m wading my way back online. Though it shouldn’t go without mentioning, using the word normal about life feels strange right now, like it’s a word worth holding back on. Nothing is normal outside the walls of our house, neighborhood, and country between the centuries-long lack of basic human rights extended towards our Black neighbors and the months-long pandemic. If anything, a new normal, a more equitable normal, is in order here, too. It’s a heavy time to be dipping my toes back into this space. I’m not quite sure how to do it all and do it all well, but here I am, tripping along. Oh, hi.



I’m certain we were just hanging the wallpaper in the guest room and calling it done. I guess we were. Now our guest-friendly room has been taken over by a tiny, wiggly human, shades of sage greens and pale pinks, a new striped wallpaper, and a cozy Craigslist rocking chair. “Where will we stay when we visit?” my mother-in-law asked when we told her we were pregnant. We still haven’t figured that one out yet. But, over the last couple of months, we have figured out a sweet space for Linnie to rest her 90th% percentile head and play and spit up and play. I think she likes it.



Here’s the moodboard that started it all. Her room is almost ready to share with sources included. In the meantime, I’m over on the Solly Baby Blog sharing more about the inspiration for Linnie’s room design, 5 tips for designing a cohesive nursery, plus a sneak peek of her finished room. I’m having trouble keeping my word on any sort of timeline these days since becoming a fulltime stay-at-home-mom (since camp and daycare are canceled) and a fit-it-in-when-you-can working mom.

She’s Here


Hello. Hi! I didn’t mean to completely disappear. Or disappear without saying I was disappearing. I planned on taking a maternity leave, some time off and away from the internet. I also planned on mentioning it. And then one week went by, and then another and another, until we had ourselves an 7 8 week old (I started this post a week ago if that tells you anything about the state of things). I guess it goes without saying—she’s here! Linden June Coleman arrived on April 1st during a pandemic. After a couple days of consistent but false labor, very early on a Wednesday, we barely made it to the hospital in time to meet her. On the walk waddle from the triage room to the delivery room, mid-migraine, my water broke, and I went from 5 to 10 cm dilated. She was in our arms 10 minutes later, the longest, most painful 10 minutes later. Maybe she was in just as big of a rush to get home and quarantine as we were.



The last 8 weeks have been so sweet and so hard. Linnie loves her big sister, Hallie, saving all her coos and half-smiles just for her. I think she’s starting to like her dad and mom, but it’s too soon to tell. She’s a great little sleeper at night, something new to us, and she’s had a time learning to nurse, something new to us. As my friend Lindsay says, “There are no good days just good moments.” That couldn’t be more true. Most days I feel like the seven dwarfs all at once—Grumpy, Sleepy, and Grateful. Wait, there is no Grateful. I guess that makes me Dopey. We’re also playing the role of Doc and charting her growth since doctor’s appointments are limited right now due to the virus. 



Linden is the name of a tree, the big tall one growing in my neighbor Patty’s yard, and the name of a quaint neighborhood in Minneapolis. Kev picked it, and I loved it. As we questioned if we’d try to add another to our family or just stay the 3 of us, Kev kept coming back to the visual of a tree. Planting and growing a tree is really hard work in the early years, with little to show for it. But in the later years, all that watering and pruning yields a big ole canopy of leaves. Maybe. Hopefully. Nothing is promised. But we took a gamble on maybe and hopefully and welcomed Linden into this world. We call her Linnie and Lin and Linden, too. I hope we get forever with each other. Under a big tall tree, like the one in Patty’s yard.

Preparing for Baby (and other things) with Mise en Place


Maybe you’ve noticed it, too. When your physical world is chaotic, like ours is right now with baby supplies spilling out everywhere (see picture below), so is your mental world. And when your mental world is chaotic, like ours has become with the pandemic (and I’m guessing yours has too), so is your physical world. The two have a way of mirroring each other. And when both are wildly out of sorts, things have a way of feeling uncontrollably out of control.



A couple weeks ago, when the baby’s room looked like this, life felt wildly out of control. It looked chaotic and felt like it too. (Sorry about all the grumpiness, family.) Would we actually be able to organize 6 years of saved Hallie’s clothes to the point of usable for the baby? Would I be able to get the spruce green to agree with the basil and the sage green? Do we even have a spot to keep the diapers downstairs? Little did I know that this chaos was nothing compared to what was to come. 




 DISCLOSURE
This post was created in a long term partnership with OXO, a brand that I’ve had in my home since day one of adulthood. I’m grateful for an ongoing partnership with a company that I buy with my own money, that makes my kitchen work so well, so well I’m leaning on their smart products for the baby.


While I had planned on writing this post about preparing for the baby, bringing calm to the chaos, and highlighting a smart little diaper caddy that fits snuggly on a shelf and goes where we need it to go with everything contained, I shifted the focus a bit to make this idea more applicable to what’s happening right now. Because I find myself grabbing the same kitchen wisdom that helped to organize the baby’s room is also helpful in bringing some calm to the chaos of our new normal with everyone at home. All the time. Maybe you’ll find it helpful too. It goes like this: Control what you can, in the healthiest way you can, because there’s lots you can’t control. And lean on the kitchen wisdom known as mise en place. 


What is Mise en Place?

Mise en place means “everything in its place.” It’s a cooking method used in the space of the kitchen, where you get everything prepped and ready before starting on a recipe. It understands that physical readiness equates with mental readiness. The kitchen is cleaned. The vegetables are chopped. The herbs measured out. The oven is preheated and all the pans and cooking utensils are out. Everything is at-the-ready and in its place. So that when you start cooking, you can reach for things almost blindly and handle the unknowns. Because mise en place also understands that the unknowns are to be expected in the kitchen, in life. When you prepare and create space for them, you’re better equipped to handle them.


Imagine beginning a recipe with the heat on high and nothing at the ready. It’s the perfect recipe for chaos. It’s the best way to describe the state of things right now. Give yourself time to be human and then mise en place the best way you know how—in the baby’s room, the closet, the kitchen, and the family schedule.



How to use Mise en Place Outside the Kitchen

I borrowed the idea of mise en place from the kitchen, where our go-to OXO containers and tools have brought calm to our chaos. Now they’re here to help outside of the kitchen too. To accomplish this in the kitchen, check out The Minimalist Kitchen Course. However, it’s important to note that when supplies are limited and diminishing, like they are currently, this may not be the best time to pare down and organize. 


1. Determine the needs. 

Whether a room, a closet, a cabinet, or a schedule, list out all the individual needs. Take the baby room, for example. It needs to store clothes and toys. It needs to sleep a baby, rock a baby, change a diaper, etc. This exercise in determining the needs is deep and wide and can be applied to both physical and mental spaces. 


2. Understand the capacity. 

Everything has a capacity—from a schedule to a room to a jar. Get really realistic with what this space or your calendar can actually hold. Can it perform all your needs? Do you need to scale back or get extra creative within the confines? Remember, the goal is to achieve calm over chaos. Less (chaos) is more (calm).


3. Create zones to meet needs. 

Give each need a zone, a physical place to exist—a place to change the diapers, a place to read, a place to think. This is the practical idea of creating physical boundaries, of compartmentalizing. This can also apply to the different mental spaces we live in. For example, let’s take news consumption during a pandemic. I’ve limited myself to catching up on the news in the evenings and not all throughout the day, like I was at first.


4. Give everything a home. 

When you’re cooking, this home may look like a bowl or an OXO POP Container. In a room, it might look like a shelf or a bin or an OXO Tot Diaper Caddy. This will allow for easy retrieval and a place to put it back to when you’re done with it. I can’t think of a good reason to spend precious mental energy hunting for the non-precious things. (We’ve been working on helping a tiny 6-year-old do this in her room, considering both her capacity, her habits, and the capacity of her room.) 



PS—This caddy has a spot for everything—for diapers, for our wipe dispenser that opens and dispenses one wipe at a time with a single hand, a wipeable and foldable changing mat, and a little drawer for other necessities like diaper cream. It easily moves room-to-room, which we’ll be doing a lot of at first as we figure out our new rhythm. 


5. Get rid of the things you don’t need.

How do you get rid of anything right now? Well, maybe don’t. But here’s the thinking behind the excess and the extra: These are the things most often taking up space and impeding access to the necessary things. This might look like the thoughtful gift that you aren’t able to use or the overflow of extras spilling over, like diapers. Donate the gift and give the overflow a home, a designated space to live. Because as we’ve all learned, some back stock is beneficial, even crucial.


6. Unexpected chaos is to be expected. 

Say that out loud a time or two. Unexpected chaos is to be expected. Mise en place is preparation for that. When you’ve created space in your physical and mental world to attend to the unexpected, well then, you have a bit of space to attend to it. It’s not perfect or fool-proof, but it’s space. And space is a precious resource. 


I’m not sure what these next couple of weeks will look like for you, for me. I hope you find some calm in the chaos, a caddy for the diapers, and a bowl for the carrots while the heat is on higher than normal. Sending you my very best. The State of Things


How are you doing? Last week, over the span of 24 hours, everyone in my Rolodex seemed to reach out asking the same question. How are you doing? It was comforting until I realized they were just as worried about us as we are. 38 weeks pregnant during a pandemic, this must be a storyline from a movie, a movie we’ve all been cast in.


How am I doing? Well, my anxiety is worse than my heartburn, which is saying something this deep into pregnancy. At any given point throughout the day, my emotions are all over the place, rolling up like a yo-yo to the tippy top of what used to be my stomach, hanging steady for a second like the old Melissa, before falling back down the ever-growing hill of my bump. Who will watch Hal if we go into labor early? Will they be as careful as we’re trying to be? Is the hospital the safest place to have a baby right now? Will they have a bed for us? Is my doctor being careful? Should I have a home birth to guarantee Kev will get to be there too? What if the baby gets sick? What if we get sick? Should I do the induction offered next week? All questions I never thought I’d have to ask.


On Dateline a couple of weeks ago, you know the show you shouldn’t watch alone, a grieving mother said she worked long and hard on changing her thought patterns from “What if?” to “What is?” Because what-if never seems to give us good answers, at least that’s what I always say to my tiny what-iffer. Though, right now some of these what-ifs are helping us to better prepare. Maybe there’s a purpose for them after all.


How am I doing? Well, I’m trying really hard to stay in the what-is, in the concrete, in the now, and in the Braxton Hicks. Because there is no predicting tomorrow. So for now, I’m finishing up the baby’s room, hanging her muted pink striped wallpaper. Kev helped last weekend, which was so helpful, and we reminisced about living in Chicago lots of years ago and debated on whether we should go to XOCO or Pizano’s for dinner. Of course, we did neither because we’re in Minneapolis and quarantined and 38 weeks pregnant. My mother-in-law forewent her flight and drove 12 straight hours a whole week early to be with us. No more worrying about who will take care of our sweet girl when we leave for a night or two to meet our other sweet girl. Kev is sequestered to a room upstairs doing teletherapy for the first time in his career, with a wrapped up heavy blanket at the foot of the door and Hallie’s old sound machine on full blast to ensure privacy. I’m extra thankful for work—for his and mine. When I’m not trying to walk or lunge this baby out, around the house and on the treadmill in the basement, or pretending I can still do the 10 push-up challenge (I can only do 5), I’m wrapping up a couple of final posts and a tiny website update before taking some time off.



Hal is missing her friends but loves being at home with everyone. We’re natural homebodies. She thrives on routine, so we’re trying to give her that, even though planning isn’t our strong suit, tagging in and out of work to do so. So far, she’s really loved Bravery School. I think we’ll do a bit of that again today. She’s also been loving the Stories Podcast and jumping down the indoor hopscotch track made from painter’s tape. We’ve been ending our days with an episode of The Great British Bake Off. Only a decade late to that show and a bag of flour short to curb our nightly baking craving.



I know this post is out of the ordinary, but I wanted to show up, at least for a quick second. I hope this is all just a crazy story we get to tell one day—for you, for me, for my neighbor down the street. But I know that it might be, will be, more than that for some of us, for a lot of us. How are you doing? I hope you’re staying well and finding a safe place or person for your what-ifs and an ounce of extra something to live in the what-is.
