Cabin Dining Room Reveal

There’s a square of a room sandwiched between the kitchen and the living room with a window the size of a wall and a staircase wrapped around the backside, once covered in neon green carpet, with just enough space to cozily seat 6 people around the table and 2 at the nearby countertop. I’d love to take you on a walk through The Minne Stuga Cabin Dining Room and tell you more about the flooring that we thought about and fraught about for months. It’s finished.

But first, here’s where we started. I wasn’t kidding about the neon carpet. It was so green, it changed the perceived color of the walls, so much so Kev worried about the overall tone of the cedar and if we’d be able to work with it.

And here’s the charming wall that once stood between the kitchen and the dining room with a small pass-through window, fit for a hotdish or pan of cinnamon rolls. The same wall that Kev and our builder wanted to take down, that I fought hard to keep up. We both won. See below.

Here she is! You might remember that we ended up bumping out the kitchen ever so slightly. The dining room was on the small side, without a way to buy more space, which we needed. But, if we added counter seating in the new kitchen space, we’d be golden. We’re now golden. Golden, literally, from the warm cedar walls and the old schoolhouse chairs and the script on the Marshall speaker and the lack of neon green carpet. But golden mostly because we can sleep as many people as we can seat in the dining room, with plenty of room to walk up the stairs or into the kitchen or through the living room. The dining room makes a bit of a roundabout as you move about the cabin.

With all that said, a tulip table, the kind that nods to the 70s and stands beautifully in the 20s, was the only option for the cabin dining room. Well, not the only, but the best option if you want plenty of knee room. We went with the Aria Table from Room & Board and the marbled white quartz top for a touch of glam. For the chairs, and throughout the cabin, I had to play the balancing act of mixing old with new to keep things feeling just right. So, I found a set of vintage chairs that pulled in the wood tones, that added that scuffed up metal vibe, that were somehow affordable and sturdy too.

End Grain Flooring

If you looked closely in the living room, you might have seen these beautiful floors peeking out from beneath the rug. Were they wood or tile or something else altogether? After making a hard rule to keep the cedar walls cedar, we were stumped, for months, as to what to do for flooring. Traditional hardwood floors paired with the walls might yield a stripey visual. Stone or tile, even with in-floor heating, might feel visually cold come winter. Trust me when I say I tried every last flooring surface in my Photoshop rendering. And then, while perusing our local Room & Board, I saw wood floors unlike I’d ever seen before, with the ring of the wood showing instead of the long grain and cut in a square tile.

It took me another couple of weeks to find out that they’re called End Grain Flooring and then track down where to buy them.

Kaswell Flooring Systems, a family-run company, sells this beloved End Grain Flooring. It comes in both engineered planks, solid strips of blocks, and individual loose blocks. We went with their unfinished engineered oak plank stained in Espresso, which is a long plank of end grain oak wood lamellas laminated to a baltic birch sub-straight, with tongue and groove connection assembly. This specific engineered product can be sanded and refinished up to 3 times.

We had them installed in an offset brick pattern to keep things from looking too geometric. I wish you could see them in person. I hope you can see them in person someday. They are stunning.

Random fact: End Grain Flooring was commonly used in US factories and European streets for its extreme durability, sound absorption, and ease of repair. Now you might see them in museums, libraries, corporate offices, and hospitality environments or even in a cabin near you. It’s not super clear, but behind those faux stems, you can see the half preserved wall mentioned above and the added counter seating. I’ll get a better picture one of these days soon, but it’s just enough space to accommodate extra seating while creating a division between the kitchen and the dining room.

And, on the other side of the counter is a tiny frame I embroidered (can’t you tell?), much like the one in my own kitchen (originally ordered from Etsy), that says—Good things take time. It’s a reminder for myself, and anyone else who needs it, for dinnertime and relationships and cabin renovations, especially during a pandemic. Amen.

Cabin Living Room Reveal

I’d love to walk you through my next favorite room of the cabin—the great room, the living room. Are you sensing a theme here? How can all the rooms be my favorite room? Kev says I’m easily excitable and sometimes speak in hyperbole. He’s not wrong. But his childhood friend, Blake, who feels comfortable enough to be honest with us (a straight gift I tell you), said the same thing on his visit up. Every room ushers you to sink in and cozy up and unwind, with lake views and evergreen views out every window. It’s impossible to pick a favorite. Either way, let’s take a walk through the Cabin Living Room.

You know the drill. Befores before afters. Would you believe me if I told you this was the room that sold us with immediacy? Through the old frosted windows, we could see visions of cozy reading nooks and green couches instead of carpet, all doused in a Swanky-Scandi vibe (if there ever was such a thing).

Maybe those visions weren’t so clear at first sight, but it was love at first sight. We were in love. Especially with the original wood-burning fireplace.

Like all good love stories, the hard parts followed soon after. I’ve talked about those enough already. But, you know the ending, too. Somehow, sometimes, the hard parts have a way of solidifying your love if they don’t take it down in the process. We’re still standing and in love. (Kev, me, and the cabin.) And with that, I’d love to show you the cabin living room, outfitted in a Swanky-Scandi library vibe.

If there was a design thesis for The Minne Stuga, it would be this room and maybe that tufted leather Macalester couch from Room & Board. This was the room that nailed down the design selections for the cabin, from the color palette—muted, rich, earthy tones with a touch of black; to the textures—leathers, wools, and woods; to the golden rule—do not paint the cedar walls. We were so excited to get the chance to partner with our Minnesota neighbors again, Room & Board, to pull this room, plus a couple others, off. (PS: Remember our backyard partnership?)

One of the things we loved most about the original A-frame design was the way they utilized the often unusable space in the bottom angle of the A by filling them with nooks and cubbies. Right from the start, I knew I wanted to use four of the six living room nooks for reading nooks. We’d turn another into a shelf, to both anchor the room and add 1000 visual reminders to put down our phones and pick up a book. We ended up adding a black backdrop to the shelf at the last minute to help the books pop.

But in order to have reading nooks, you have to have cozy cushions. In true fashion, I had a specific fabric in mind—a tweedy confetti wool. You know, one with flecks of color in it like the jacket your dad wore when he was in high school? Like many of my visions, they don’t necessarily exist, at least not at the store down the street. Forty-something hours later, I found the fabric. Online, in Ireland, and for a pretty penny, or whatever their currency is. [Insert Kev rolling eyes here.] After convincing Kev to let me invest in this beautiful Sage Flecked Irish Tweed, I had cushions made. Not once. No. But twice because I mismeasured. [Insert Kev rolling eyes again here.] The faux strikes again. But I sure do love the way they turned out.

Now that I’ve outed my design prowess, or lack thereof, let’s head to the other side of the cabin living room, the fireplace side, which is also still standing. Taiga Design restored this beauty of a hearth, and I couldn’t be more grateful. To the right and left of the wood-burning stove are two Room & Board Swivel chairs, the Charles and the Eos, for flexible seating. Swivel that way for lake viewing, this way for quiet conversations, and to the middle for fireplace gazing. And, if you’re Hallie, tuck your knees in tight and beg for a 360° twirl from dad.

Did I mention that chair and a half is covered in their new line of plaid fabrics? Can you have too much plaid in one room? I sure hope not.

One of my favorite chairs might just be the Charles chair wrapped in Cognac leather, a leather that will age with time and each guest to impart a richer, shared story. Speaking of, through the hardest parts of birthing this idea into the north woods, I tried to steady my focus on setting a stage, a beautiful stage, that draws people together initially, yet fades comfortably into the backdrop of a long conversation, a fun game, a hard story, or the deepest relaxation pose. We were up at the cabin a couple weeks ago and got to read through the guestbook. Balm I tell you. The cushions and the couch and the chair and the windows to the big tall trees, they’re working.

Hold on. Wait one second. Let me zoom out. Can you see it? I can see clearly now, the fog is gone. Look at those windows! They have 20/20 vision, extending all the way up to the point of the A, letting in the maximum amount of light. If you scroll up to the before, you’ll notice the tip of the A was walled in. Taiga, who executed the restoration of the cabin, worked with Marvin to pull off this kind of magic. You can watch the process here. We also installed those big Ultimate Sliding Patio Doors that generously welcome the outside in.

Like a true Minnesotan, never knowing when to say goodbye, I guess I’ll end this post like I end most of my recipes, with a cheers. Here’s to still standing (or resting) on the other side of this big idea under the big tall trees. (We made it.) Here’s to celebrating partnerships with some of my favorite Minnesota companies to make this place more beautiful. And here’s to getting to share it with you. Amen.

Cabin Kitchen

I don’t know about you, but I always save the best for last—the cookie dough balls at the bottom of the soupy ice cream bowl, pizza after salad, lunch then a Justin’s Dark Chocolate Almond Buttercup. But I’m going out of order in sharing rooms of The Minne Stuga, showing you the cabin kitchen way before I share the rest of the spaces. It’s a cookie dough first kinda day because the kitchen might just be my favorite spot in the cabin. That is until I show you my next favorite spot and the one after that. I have so many favorite spots that take me to the deepest of cozy places, but the kitchen just might be at the tippy top.

Before

But first, let’s go back to where we started. We really debated on whether or not to keep the kitchen as is, replacing the floors but keeping most everything else. It was cute and quaint and charming just the way it was. But it was the sleep number that really tipped the decision. Not the mattress. 

After the restoration, we’d be able to sleep 8 but only seat 6 in the dining room, barely. Those two numbers had to match for me. So long story short, we ended up bumping out the kitchen ever so slightly, allowing us to add counter seating so we could sleep and seat the same number of people. 

I also really wanted to add a pop of color in here. We made a hard and fast rule not to paint any of the cedar-clad walls, so I needed places to add big pops of color. Mostly pops of green. 50 shades of green to be exact.

After repairing the bad plumbing overhead (I’ll say no more about that stinky situation) and replacing the windows, the goal was to take this quaint and cozy kitchen down to the studs, bump it out about 4 feet, and install an updated quaint and cozy kitchen. One that felt like it had always been there. You know, without completely blowing the budget.

Here she is! With the walls wrapped in cedar like the rest of the cabin, the kitchen feels right at home. Along with the pop of green, I took the opportunity to also add a pop of pattern to the flooring, mixing cozy classics together. 

Because we had to do so much restoration work on the exterior of the cabin, we had to keep costs down in the kitchen. But I still wanted that custom look. [Insert Kev rolling eyes here.]

Cabinetry

So, how do you get that custom look without a custom price tag? IKEA kitchen cabinets + Semihandmade fronts. Throwing in a fancy range will really kick everything up a notch too.

Semihandmade fronts are super beautiful, incredibly durable, and have made it through heavy use for the last 4+ years at our house (see here). To create a more custom look, we paired their DIY Shaker fronts for the cabinet doors with their DIY Slab fronts for the cabinet drawers, inspired by this custom kitchen. (DIY just means you can have them painted any color you want.) It’s nerve-wracking to mix and match styles but this pairing, shaker + slab, works particularly well together.

We also added in a couple of open-front cabinets to keep things charming and unrefined. Those boxes, however, had to be custom-made from paintable wood in order to match with everything else.

I know, I know. The paint color! What is it? Well, I picked Trailing Vines by Benjamin Moore, but I think it ended up being a lighter shade. If I had to guess from the 50 shades of green swatches on my desk, it’s closer to Tate Olive by Benjamin Moore. Tomato, to-mah-toe, there’s no calling this whole thing off. I’ll take whatever shade of green we ended up with because we have a finished cabin. Amen.

Here’s a little peek inside so you can see the IKEA guts with the Semihandmade fronts. Seamless and beautiful.

Countertops

Would you believe me if I told you the countertops are made out of paper? That matte black beautiful surface is sustainably made from resin-infused paper. I wasn’t familiar with it prior to working with Taiga Design. They use it in a lot of their projects, and I love how it ages, beautifully etching in stories and mishaps and long dinners. The cool thing about it—you can oil it for a richer, darker look or you can leave it as is. And if you want to buff out a mishap, you can. (However, I’m game for all the natural etching of life, on my face and on my counters too.) In-person, it looks a bit like soapstone without the hefty price tag.

Open Shelving 

Are they in or out? Well, in this space, they’re permanently in. And they visually mimic a similar shelf treatment in the living room (coming soon), which is always a design element I lean on—repetition—to pull everything together. It’s also an easy way to add extra charm, with the stacks of ceramic plates and coffee mugs and my favorite bowls and pitchers on display.

Note: a common concern of open shelving is dust collection. It’s a fair concern. With The Minne Stuga rented year-round and in high use, this isn’t as big of a concern for us. 

Did I mention this view looks out to the lake and a pile of evergreens? Heaven is a place.

There’s one part of the kitchen that I’m not showing you quite yet. Do you see the counter jutting out on your left in the picture above? That’s the added counter seating. With stools on one side, the other side is a cabinet of open-front shelving for the piles of food you bring up to the cabin to cook. I’m working on adding a cafe curtain and another pop of color there. More to come! 

Well, there you have it, maybe my most favorite room of all my favorite rooms in the cabin. The room that makes me question it all and want to move way up north under the big tall trees and the starry clear skies. Come stay and you’ll soon see why.

Cabin Loft Reveal

The Minne Stuga Cabin Loft Reveal with Marvin Skycove from The Faux Martha

Life seems to come in waves, in seasons. And after a long season of construction (and other hard things), we’ve made it to the other side of this big idea called The Minne Stuga. When we, Kev and I, took on this idea, we weren’t sure we’d be able to pull it off. I mean, we thought we would, we hoped we would, but it felt a little risky. And then we found out we were pregnant 4 days after putting in our offer on the cabin. And then COVID hit right as we were finally about to start construction, at the same time Linnie was born. (Construction didn’t start for another year.) And then the sky kept falling, for everyone, not just us. 

 This post was created in partnership with Marvin, the same windows we purchased for our home 7 years ago. We worked with Marvin to integrate their new Skycove and Awaken Skylights into The Minne Stuga.

I’ll spare you the rest and leave you with this—I am so happy with how the cabin restoration turned out. It’s beautiful, unreal even. But getting here was one of the hardest things we’ve done. I say it all the time, as a reminder to myself, life is always both/and. Beautiful and hard, tragic and euphoric, awe-inspiring and exhausting. All at the same time. This, too, was that. Now on to the beautiful. I can’t wait to show you the loft of The Minne Stuga.

Before and During

Since a whole lot of time has passed since we first started this project, let’s take a quick walk down memory lane, and look at the BEFORE and DURING of the loft.

There she is, in all her original neon orange carpeted glory. The windows were nice and big (and very old). Yet this room was quite dark sitting at the top of the cedar-clad A-frame. It didn’t help that the lake-facing A-frame windows were fogged and only extended ⅔ of the way up the A.

After realizing the windows would need replacing all throughout the cabin (gulp), we wanted to replace them with the same windows we purchased for our house. So we knocked on Marvin’s door to see if they’d be interested in partnering with us on this big Minnesota-made idea. They said yes and had their own big idea in the works—a glass window box that you can sit in called Marvin Skycove.

So we made room for one. But first, they had to rebuild this wall in order to support the Skycove and another huge picture window in the dining room below.

Lifted by a big fork, the Skycove went in, adding panoramic views into the loft.

Meanwhile, Marvin was also working on the Awaken Skylights, skylights that can open and close for added airflow, with built-in screens to keep the bugs out, and shades to filter or blackout the sun, plus LED lights that mimic daylight or warm light. They’re smart and beautiful and functional.

Here they are in the space! And below is the cabin from the rooftop, looking out to Devil Track Lake with the Awaken Skylights going in.

To say we’re grateful to have these award-winning window features in the cabin is a huge understatement. They are something special. Unreal even.

After

Now that we’re all caught up on the last 2 years …. drum roll, please. Here she is! The finished loft. Sitting at the top of the once dark A-frame, on the second floor of the cabin, is a light-filled, cedar-clad space, where the outside is always inside.

Let’s go back to this big idea. It all started with the hope of creating a quiet offline space, a space we could share in real life. A space with a thousand built-in reminders to rest and disconnect. A space that would hopefully be beautiful on the inside but highlight the grandeur of the outside, luring you and me that way, away from follower counts and double taps and endless scrolling, towards something real, towards something you can touch.

For the cabin loft, in particular, we wanted this space to function as both a place to rest, a place to play a long game, and a place to get lost in a conversation or a book.

It does all that and more. Mostly though, being here does good things to my mind and my heart. I’m happy I get to share something like that with you.

The Marvin Skycove is more than just a window. It’s a piece of furniture. It comes equipped with a bench seat that can fit a cushion or not. I wanted to add an extra cozy pop of pattern and color to break up the heaviness of all the cedar, which I love, but it’s a lot.

We ordered a couple of cushions for the cabin locally and online. This one came from Patio Lane, after seeing a recommendation from Yellow Brick Home. I went with a striped navy blue Sunbrella Strickland Denim (that’s discontinued) with a muted teal welt.

In true fashion, I added little pops of old mixed with new to create something rich and memorable.

I almost forgot. Here’s what the Skycove looks like from the outside. It’s hard to tell, but there’s a super thick fog coming off the lake while taking this picture. It’s magic up here. Pure magic.

The Awaken Skylights add so much extra light, it’s unreal. You feel like you’re standing outside. (While working at the cabin and Facetiming Hal, she actually thought I was standing outside.) On a bright day, it’s bright. But with the click of a button, you can draw the shades down. And on a warm day, you can open the skylights, which project from the roof on all four sides for efficient airflow. And on an overcast day, you can turn on the built-in lights to simulate a brighter day.

Simple Vanilla Cake

I’ve had it on my list for years, along with printing pictures of my kids, to work on a really good vanilla cake. A simple yet delicious vanilla cake that comes together easily with a tight sturdy crumb, maybe even skirting the line of dense. A vanilla cake that comes together from the humble remnants of the pantry yet yields something memorable and flavorful. This vanilla cake is that, thanks to the simple reverse creaming method. It’s reliably good every time, even when you run out of all-purpose flour and have to swap in a little whole wheat pastry flour. I can attest.

Simple Vanilla Cake

This simple vanilla cake is made with all the usual suspects: flour, sugar, butter, cream, milk, eggs, and vanilla. I’ve snuck in a little vinegar, too, to add a touch of tang. You know, the same kind of tang buttermilk or sour cream provides, which I never keep stocked in the fridge. Before you scrunch up your nose, let me explain. In the same way that salt has a way of making sweet things taste sweeter, vinegar has a way of making things taste more pronounced, more like themselves. And, in this case, it takes this vanilla cake from dull to perfection. I tested it every which way.

While we’re at it, let’s talk about texture, too. Because just as the flavor of the cake is important, so is the texture, the mouth-feel. When I eat cake, I want each bite to wow. No fluffy cakes for me, unless we’re talking about Angel Food Cake. But between the eggs and the leavening and the beating, cakes tend towards fluffy. Enter the reverse creaming method. I first learned this method from Sarah Kieffer. It went against everything I knew, beating the butter directly into the flour. This can’t be right, I thought. But it made for a tender, tight-crumbed cake packed with flavor. A very memorable cake. So I grabbed her method and my favorite old cake recipe and came up with this. 

Reverse Creaming Method

With the reverse creaming method, you cream the butter directly into the flour/sugar mixture and mix until you’re left with a sandy, coarse meal (see above). Then you add in the liquids, beating on low to incorporate until just combined. It’s a bit like making a scone or a biscuit, with a higher liquid ratio and much tinier specks of butter.

Mixing, whipping, and creaming—they all add air. The goal of the reverse creaming method is to reduce air, yielding a tight crumb. This also helps to create flat cakes. Domed cakes often take longer to cook, as the tall, airy center needs extra time to finish, yielding an overcooked, dry rim of the cake. Not so with this method.

Maybe you’ve seen it in recipes: don’t overbeat or mix until just combined. This is typically an effort to prohibit or stall gluten formation. When making bread, we want lots of gluten formation and stringy webs, requiring a good amount of mixing and kneading to create. There’s always a rest time incorporated, too, to let the gluten relax and stretch back out after a workout. When making pastries and cakes, however, we want just enough gluten formation to hold things together. And, with no rest time before baking, an overmixed batter will yield everything from a tough, chewy, overly airy, or dense result. Once again, the reverse creaming method helps prevent this common baking mistake, allowing you to take as long as you want to combine the butter before adding in the liquids, thus activating the gluten.

I’m still working on a good old-fashioned vanilla buttercream that isn’t cloyingly sweet. I got really close the other day when I wasn’t measuring. Of course. I’ll report back on that front soonish. Until then, here’s to making a really good and really simple vanilla cake. And trying new things, like the reverse creaming method. Amen.

This simple vanilla cake is made from pantry staples and packed with flavor using the reverse creaming method, creaming the butter into the flour. It yields a tight crumb, flat top, and flavorful cake. Take this recipe slow, literally. As usual, I’ve taken this recipe down to the lowest sugar amount possible for it to still taste like cake and remain moist. Like most baked goods, this is best made a day in advance.

Ingredients Wet1/2 c. whole milk1/2 c. heavy cream2 tsp. pure vanilla extract1 tsp. white vinegar4 large eggs, room temperatureDry1 3/4 c. unbleached all-purpose flour1 1/3 c. pure cane sugar1 1/2 tsp. aluminum-free baking powder3/4 tsp. kosher salt1/8 tsp. baking soda3/4 c. (1 1/2 sticks) unsalted butter, room temperature Instructions Preheat the oven to 350°F. Line two 8-inch cake pans along the bottom with parchment paper. To do so, fold a sheet of parchment paper in half, the same width as the cake pan. Trace and cut inside the line. Place both sheets inside the cake pan. Set aside.Combine the wet ingredients. In a liquid measuring cup, add all the wet ingredients except for the eggs. Set aside. (Note: to bring eggs to room temperature more quickly, place in a small bowl covered with warm water.)Meanwhile, mix the dry ingredients. In a stand mixer fitted with a paddle attachment, add all the dry ingredients into the bowl, except for the butter, and mix on low speed to incorporate. Cut the butter into tablespoon-sized slices and add one at a time to the mixer while on low speed. Mix until a sandy, coarse meal forms, about 3-4 minutes. (See picture above for reference.)Once the flour mixture looks like a coarse meal, whisk the eggs into the wet ingredients (the liquid measuring cup) until evenly combined.Pour the wet ingredients into the dry ingredients in 3-4 increments over low speed. Stay low here so as not to add too much air to the batter. Scrape down the sides of the bowl between each addition. Continue mixing on low until you achieve a smooth batter.Now, mix once more on medium-high speed for 2-3 seconds, no more, just to combine everything. Reminder: the goal of this method is to beat in as little additional air as possible while creaming together.Evenly distribute the batter between the two cake pans and rap (a short drop) on the counter a couple of times to remove any large air bubbles.Bake for 24-28 minutes. The cake is done when golden and slightly domed at the top. A light tap on the top to check for doneness will feel springier than you may be used to. It’s ready to come out. Remove from the oven to cool. As the cake cools, the dome will level out and flatten.Remove from the pan after about 10 minutes, sliding a thin knife around the edges to loosen. Carefully remove layers and place on a cooling rack to cool completely before icing.Store cake in an airtight container for up to 4 days. The cake is best after an overnight rest. Emily’s Northern Sidecar

Raise your glass! After a couple years of dreaming and working and fretting, The Minne Stuga is finished (mostly) and open for rental. Getting there, to the finish line, was one of the harder things we’ve done. In the thick of it, I kept recalling a board book we often read Hal and now Linnie—Going on a Bear Hunt. “We can’t go over it,” they say at the sight of every obstacle. “We can’t go under it. Oh no, we’ve got to go through it. Stumble trip! Stumble trip!” Those words turned into wisdom, because after so many obstacles during this project, I wanted out. I couldn’t see a way through the fog and the brush and the mud and all the details I’ll leave offline. But, as Adele says—hello from the other side. I’m still a little disoriented, but I think we’ve made it through. Either way, let’s cheers with a Northern Sidecar. 

My new favorite cocktail is made with Aquavit (pronounced aqua-veet). I’m not sure when I first had this Scandinavian Spirit. Was it the bright blue Fjord Fiesta cocktail from down the street at Hi-Lo Diner (see recipe here)? Or was it a gifted bottle from Emily Vikre of Vikre Distillery? Either way, my first taste wasn’t until my early 30s. It was love at first sip. And when I was searching for a signature cocktail for The Minne Stuga, a cabin in Minnesota with heavy Nordic influence, I knew it had to have Aquavit in it.

And after sipping on a couple of Emily’s Northern Sidecars from her book, Camp Cocktails, I emailed her and asked her if it would be OK to declare this the official cocktail for The Minne Stuga—the recipe we send each guest to shake up while they stay. She said yes. Take a sip and you’ll soon see why I fell in love. It’s so simple to make but tastes as if it was freshly shaken by a mixologist, which comes as no surprise. Emily and her husband, Joel, created Vikre Distillery and Frenchie Cocktails (which were served at The Nordic Winter Party). 

What is a Northern Sidecar?

A Northern Sidecar is Emily’s riff on the Sidecar, which is a classic made from cognac, orange liqueur, lemon juice, and simple syrup. In place of the cognac, she uses their Voyageur Aquavit, aged in cognac barrels. For the orange liqueur, Emily calls out Cointreau. I’ve been a big fan of Dry Curacao lately, so I used that instead. I also swapped the simple syrup for maple syrup, since I pack it in the cooler to make the fluffy multigrain pancake mix at the cabin.

If this Northern Sidecar has to be something, it’s a Nordic Margarita, made with lemon instead of lime, the same ole really good orange liqueur, warmed by hints of cardamom and caraway from the Aquavit, and sweetened with maple. Or maybe I’m still too disoriented to tell the difference. Either way—cheers!

Emily’s Northern Sidecar, from her book Camp Cocktails, is the official cocktail of The Minne Stuga, made with lemon, Aquavit from Vikre Distillery, Orange Liqueur, and maple syrup.

Ingredients 2 oz. Aquavit, preferably aged (try Voyager Aquavit by Vikre Distillery)3/4 oz. Dry Curacao (or Cointreau)3/4 oz. fresh lemon juice1/4 oz. maple syrup (or simple syrup) Instructions

Shake all the ingredients in a cocktail shaker with ice until well chilled. Strain into a cocktail glass and serve. Top with a thin lemon wheel or spiral of lemon peel.

Tip: I once learned from Emily to use good ice. You know, ice made with the same water that you like to drink. Ice, whether shaken or floating in a drink, lends its flavor profile to the drink. So if the ice tastes like freezer burn, so will your drink.

Green Goddess Dressing

Hello? Hi! Is this thing on? It’s me. Melissa. I’m still here, over on the other side of the screen. I just haven’t been here, at my desk, pecking away at the old dirty keyboard like usual. I’ve been everywhere else—up and down the north shore and back again, to the doctors, to the vintage store, back to the doctors, to Target and Target and Target. I wish I could write that we’ve been living our best summer, tending to the tiny garden, relaxing and splashing, and going on summer adventures, but…

We’ve been chasing an idea to the finish line, The Minne Stuga. And the carrot keeps moving. And the basement didn’t get finished as promised. And Linnie keeps getting ear infections. And we keep running and pivoting and looking for the line (and the Gatorade stand and the cheering section). We’re close. We’ve even been able to welcome our first guests, which is just the coolest thing to hear and see people enjoying this cedar-clad respite. I’ll spare you the rest of the long story for now and share this recipe for Green Goddess Dressing before summer gives way to fall. It’s coming. Oh, and I wanted to say hi. Hi! 

How to make a lightened up green goddess dressing from the faux martha

About that Green Goddess Goodness

In the middle of the pandemic, when things got tight, for us and for everyone, we decided to order out once a week, for my sanity and to invest in the places we love. Every other Thursday, we ordered from Hi-Lo Diner. A crispy chicken sandwich for me, with the best slaw this side of the Mississippi plus a side salad with Green Goddess Dressing. I’d save the tiny black plastic cup of dressing and make a salad or two with the leftovers, eventually adding the recipe to my to-recreate list. It’d be a perfect way to use up the plethora of herbs from the garden, I thought.

The garden never happened, like most things this summer, but the Green Goddess Dressing recipe did. Made with overpriced fresh herbs from the grocery store and lots of pantry staples like yogurt and garlic and olives and mayo and lemon, it’s so bright and delicious. And comes together under a quick whirl of the blender. 

This Green Goddess Dressing is best on anything—a huge summer salad, the glue to your chicken salad, a sauce to your veg burger, or a dip for your carrots. If you’ve never imbibed in Green Goddess Dressing, the base flavor is a cross between ranch and caesar, with green peppery flakes of herby brightness. To make this recipe pantry-friendly, I’ve swapped plain whole milk yogurt, that I always have on hand, for the sour cream more traditionally used. And I’ve subbed salty green olives in place of the anchovies. I think you’re gonna love it.

Vanilla Ice Cream

Creamy vanilla ice cream recipe from the faux martha

When I take Hal to swimming lessons, Mr. Noah always asks, “What’s your favorite ice cream.” (He teaches them to swim by scooping ice cream through the water.) Hal always responds with, “Vanilla.” And Mr. Noah always waits, even after the vanilla proclamation, expecting a new ice cream flavor. A less, you know, vanilla flavor. No, not from this family. We love a good old-fashioned homemade vanilla ice cream. One that’s creamy and super scoopable straight out of the freezer with no trace of ice. That’s this recipe.

How to make creamy vanilla ice cream

There are a couple of things to know about pulling off a creamy homemade vanilla ice cream. You’d think by just adding heavy cream to your ice cream that it would be creamy. Not necessarily so. While ice cream does need a high level of fat to produce something creamy and delicious when frozen, it also needs a thickener. If you look at the back of the ice cream carton from the store, you might see things like gums and starches. That’s one way to do it. But it adds no flavor in the process. For that reason, I love to lean on good old-fashioned egg yolks. They are rich and creamy and at-the-ready in the fridge. When combined with the hot milk and heavy cream, it turns into a creamy custard, yielding a good old-fashioned homemade vanilla ice cream.

How to temper egg yolks

Now, before you start making the vanilla ice cream, let’s talk about how to temper eggs, aka how to start cooking them before adding them to the entire mixture. To do so, whisk the eggs and a bit of the sugar together until creamy and slightly more pale than when you started. Now we’re going to temper the eggs, begin cooking them. When pouring a hot liquid into egg yolks, they cook fast, so fast you may end up scrambling the eggs. Instead, pour a little bit of the hot cream in at a time, whisking constantly as you pour.

Imagine cooking scrambled eggs. Once the eggs hit the heat of the pan, they begin to firm up. The same thing will happen when the heat is coming from the top, from the liquid. So, whisk constantly and pour a little bit at a time. You’ve got this creamy homemade vanilla ice cream in the bag!

Oh, and Mr. Noah, just a heads up. She’s gonna say vanilla ice cream this week and next week and probably the week after.

A simple, creamy recipe for old-fashioned homemade vanilla ice cream made with heavy cream, whole milk, yolks, and sugar. (Note: This 10-year-old recipe was updated June 2021. I swapped the additional ingredient of half and half for equal parts heavy cream and milk. One less ingredient to buy with the same great results.)

Ingredients 2 1/2 c. whole milk2 c. heavy cream1 c. + 2 tbsp. pure cane sugar, divided1/2 tsp. flaky kosher salt3 egg yolks1 tbsp. pure vanilla extract Instructions In a heavy-bottomed saucepan or dutch oven, large enough to hold the liquids if they were to double in size, combine the whole milk, heavy cream, 1 cup of the sugar, and salt. Whisk to combine.Heat over medium-high heat until the sugar dissolves and begins to simmer, whisking occasionally so as not to scald the mixture. Turn down the heat as necessary.Meanwhile, in a small bowl whisk together the egg yolks and 2 tablespoons of sugar until creamy and slightly more pale than when you began, about 1 minute. Set aside.Once the milk mixture comes to a low simmer, carefully measure out about one cup. Pour about 1/3 of it into the egg mixture, whisking constantly to temper the eggs. (You’ll want to work quickly and constantly here so that you don’t curdle/scramble the egg as you temper them.) Whisk in the remaining milk, whisking constantly to combine. Now add the egg mixture into the saucepan, whisking continually. Cook for about 1-2 minutes more until the mixture begins to thicken enough to coat the back of a spoon. Remove from heat. Stir in the vanilla extract.Pour mixture in a large bowl over a fine-mesh sieve to catch any egg clumps. Cover and place in the fridge to cool, about 3 hours. To speed up the cooling process, place a bowl in an ice bath or place in the freezer sans ice bath for 30 minutes.Once the mixture is cold, make ice cream according to your machine’s instructions. Ice cream is best after an overnight freeze post churning. Notes

Here’s the Ice Cream Maker I use. It’s necessary that the basin is completely frozen before use, about 24 hours, so plan accordingly.

Cabin Update

I have a page permanently bookmarked in a book with a title more provocative than its contents, which are great by the way. The book is called Steal Like an Artist. And the bookmarked page is titled “The Life of a Project.” And on that page is a line graph with a point way up high called “This is the best idea ever.” Have you ever been there? (I’m always way up there.) The line steadily drops lower and lower into the “dark night of the soul.” They are to be expected yet always show up completely by surprise when working on a new project, especially something you’ve never done before. We are currently in one, a dark night. But one thing we know to be true in Minnesota—the dark days always get shorter and brighter and longer. In fact, light hangs in the sky this far north into the 10:00 hour.

Speaking of the dark night(s), this cabin update is coming to you about a month late for 10,000 reasons. Was it the construction delays? Or it the news of the oversold dishwasher that took days to track down in the first place? Or the out-of-stock everything? Or shipping things twice because they never made it to the cabin the first time? Or having to cancel our very first guests? Or more at-home-school due to excessive heat? Or the case of hand foot mouth followed by double pink eye flanked by a couple of double ear infections. Or was it… I’ll stop. Everything is fine. We’re alive and mostly well. Yet nothing is going to plan. On this project, in our lives, and right outside our front door. I’ll spare you all the details. Some of them are far more provocative than the title of the book above.

We’re in a season of what’s-going-to-happen-today? We must be close to the end. I hope. I think. There’s a good chance we’re in that season because we’ve packed our lives too full, with no buffer for the unpredictable, taking on a large project that’s been completely unpredictable. I tell you all this so you know that the self-proclaimed minimalist overdoes it. So you know that really cool projects online are also really taxing offline. So you know that sometimes we’re all in a season of doggy paddling. (That feels more like sinking. That might be my permanent season. I never really learned to swim properly.) I’m best at sharing the pretty final pictures. But the in-between, where I spend a good hunk of my life, neither here nor there, well, that’s worth sharing too. I think. I hope.

Let’s start outside. We have a roof! And siding! Well, some siding. Can you spot the kitchen bump-out underneath the upstairs deck? It’s clad in black shou sugi ban, the Japanese preservation technique of charring wood. 

Here’s a close-up of the Brava Roof Tiles in weathered shake, the Kebony Character Siding, and the original stone. The milk chocolate siding will quickly grey out, leaving behind a creamy grey in the next year or so. Stay tuned to see the final color.

Let’s jump over to the other side of the cabin, where the Marvin Skycove window hangs, literally. It’s a glass box hanging (very securely) off the side of the cabin with a panoramic full view of the trees. It’s magic. I’ll show you the inside of it in a sec. 

We’re going to slip inside to the first floor, just on the other side of the huge picture frame window. Ok, now you’re in the dining room. Can you imagine sipping your morning coffee here, eating Angry Trout takeout, or playing a card game? I think I can, I think I can. 

1, 2, 3, turn around. You’re standing in the kitchen, the space that’s now a touch bigger. This room used to be completely walled in. We took one wall down and will add back in lower cabinets, where the big trashcan is, and counter seating while keeping the top open for prime tree visibility. Everyone else was team open up the whole kitchen. I was team keep it cozy. We met someplace in the middle. 

Let’s turn to your left and head into the living room, where you can see clearly now (are you singing it yet?) to the lake. Before these windows were permanently cloudy, no cleaning trick would do. Now they are equipped with 20/20 vision glass. 

Wanna step out onto the deck? It’s safe to step out there now, minus the railing that’s coming real soon. The old deck was rotting and holey and hanging by a wobbly pole. Sidenote: We’re adding a propane firepit out here with ever-lasting, all-weather outdoor furniture from Loll (the same ones we have in our backyard).

When you walk back in, head through the living room, the dining room, and then hang a left. We won’t go upstairs just yet. 

I want to take you to the bathroom, where we moved the shower from the interior wall right next to the window for maximum light. It’s clad in Satin Black large craftsman tile from Mercury Mosaics. This was a risky move, doing a mass tiling in black, but it is stunning in person. I love that it’s made in Minnesota and matches the period-specific tile that was selected by the original owners. We just gave it a modern update.

On the topic of tile, let’s just head upstairs into the other bathroom, also clad in Mercury Mosaics. The shower wall is in their Aged Moss, a matte tile that varies in color. It looks like the earth and might be my favorite tile wall. (These iPhone pictures don’t do it justice.)

The floors are clad in their Midnight Sky large craftsman tile. Originally I wanted to use a dark green grout so that the floor would read more as a solid color, but it’s growing on me. Just in case I change my mind, has anyone used this grout stain? Am I crazy to try it?

If you turn around, you’re in the loft with the aforementioned Marvin Skycove that we saw from the outside. A striped cushion is coming for you to cozy up into that glass nook. And if you look up, you can catch the stars through the Marvin Awaken Skylights by night. I’ll just sleep right here and call it glamping. (There’s actually a lofted bed built-in just behind me, above the bathroom. I’ll sleep there. Sorry Kev.)   

And would you look at that? Hold on, shimmy to your right. Now you can see it. The A-frame windows have been replaced and the glass extends all the way to the top of the A for prime lake viewing, which was originally walled with wood. Can you believe it? My dad always said I made a better door than a window when standing in front of the TV growing up. That’s how I felt about the old orientation of these windows (see here). 

And as Hal says, “last but least,” we have carpet! Well, we previously had carpet too. Remember the neon green and orange? It’s been replaced with Flor carpet tiles in Tweed Indeed in Peat. (I’ve been eyeing them for years.) While the upstairs is carpeted and the downstairs will be set in wood, end grain flooring to be exact. (I can’t wait to show you!)  

Ok, that’s it for now. Back to chasing down missing packages and reminding myself that the dark nights eventually give way to the long, bright days under the big tall trees at a cabin way up north. You know, the place to get lost to get found, to be bored and get inspired. The place to listen to the bonfire crackle, the crickets chirp, the birds sing, the tall trees whistle, and the big cats howl. The place to disconnect to reconnect. I can’t wait for you to come up. It’ll all be worth it. I think. I know.

Fluffy Multigrain Pancake Mix

I can’t think about one thing, without thinking about everything. My brain is wired for systems, which makes things super efficient once a system is in place and ultra inefficient when not (which is most of life). So naturally, while designing The Minne Stuga, I’ve been thinking about a packable pancake mix that you can prep ahead of time so that you don’t have to lug a bag of flour in your suitcase. Naturally. Ha. Those two are not mutually exclusive in a normal brain. But alas, I don’t have one of those. So I give you a fluffy multigrain pancake mix that’s packable, cakey, filling, and so delicious. They’re best on vacation. Or at home. Or around the campfire.

First things first, are you one of those cooks-on-vacation types of people? We’ve become those people. Mostly to save a little money. But more importantly, so that Kev and I don’t get mad at each other every other night while trying to pick a restaurant (we both suffer from decision fatigue and FOBO: fear of better options). Also, I never feel like my best self after eating out 3 times a day. And since we have kids whose current eating schedule is more rigid than flexible, packable pancake mix (and most other meals) it is.

Now that I have many knocks against me, please let this Fluffy Multigrain Pancake Mix even the score. The base of this recipe is modeled after the Multigrain Pancakes in my book, which are a trusty favorite over here. It’s been modified to make multiple batches prepped in advance with neat and tidy ratios. (Each mix makes 2 batches.) I’ve added in quick oats, too, for an extra filling boost to last you through your hike or to the next meal. The name of the game of this recipe is simple. And these are just that.

But Melissa, you’re using 3 different grains in this recipe. How is that simple? I can see why you’d think that. Good news, there are plenty of recipes out there made with only all-purpose flour if that’s what you’re looking for. But I almost always prefer the hit of wheat in my breakfasts, as it helps to fill me up faster, keep me full longer, without weighing me down. After trying lots of wheat flour varieties on the market over the years, I’ve become partial to Whole Wheat Pastry Flour. It’s not as heavy as the more traditional whole wheat flour. Nor is it as bitter. It’s just right. I’ve been buying the Whole Foods store brand. The best part, when the mix is prepped ahead of time, it makes measuring multiple grains easier. Not that it was really that hard in the first place.

(And if you’re like, lady, just give me the boxed mix. Might I recommend Kodiak Cakes? We love them!)

How to Make the Fluffy Multigrain Pancake Mix

Ahead of time, like a month or a week before, whisk together all the dry ingredients: the all-purpose flour, wheat pastry flour, quick-cooking oats (not old-fashioned), baking powder, baking soda, and salt. Store in an airtight jar or container. If you end up loving this recipe, you can easily size it up for lots of at-the-ready pancakes.

On the morning of, just add an egg, half a stick of melted butter, and 1 1/2 cups milk to 2 cups of your multigrain pancake mix. Stir together until just mixed, nothing more. Overmixing always creates a tougher pancake. Why? Think bread. We mix it and knead bread to build lots of tight gluten webs. And then we let it rest, which helps to relax the gluten so it’s tight but not tough. With pancakes, neither of those things are in our favor, so easy does it.

Cook on a warmed griddle over low heat, cast iron if you have it, until the top of the pancake begins to bubble, the edges begin to cook, and the bottom begins to golden, about 1 minute. Flip and cook about a minute more. Resist patting that cute cake on the top. It’ll halt the cooking process prematurely, leaving you with gummy insides. Top with Minnesota tapped maple syrup and a pint of berries and enjoy. Where ever you find yourself.

This multigrain pancake has been designed as a mix. Make the mix weeks in advance for easy pancake prep the morning of. Just add an egg, milk, and butter.

Ingredients Multigrain Pancake Mix2 1/4 c. all-purpose unbleached flour1 c. whole wheat pastry flour1 c. quick-cooking oats (not old fashioned)2 tbsp. pure cane sugar1 tbsp. aluminum-free baking powder1 tsp. baking soda1 tsp. kosher saltTo make a batch1/4 c. unsalted butter, melted1 1/2 c. whole milk1 large egg2 c. multigrain pancake mix Instructions Make the multigrain pancake mix. In a large bowl, whisk together all the pancake mix ingredients. Store in an airtight jar or container in the pantry up to 3 months. This can easily be doubled to make 4 batches or tripled to make 6 batches, etc.To make a batch of pancakes, begin by preheating a cast iron griddle over low heat. Melt the butter in a small saucepan over low heat until half melted. Remove from the heat to allow to continue melting and cooling. Meanwhile, measure the milk out into a liquid measuring cup, and whisk in the egg until evenly combined.Measure out 2 cups of the premade pancake mix to a large mixing bowl. Pour in the milk mixture and give it a couple of stirs before adding in the melted butter. Stir batter until just combined. No more. Overmixing will yield a tough pancake.Cook the pancakes. Using a 2-ounce spring release scoop (or 1/4 cup), pour batter onto the preheated griddle, gently spreading it to about 4.5″ in diameter. Look for bubbles to appear on the surface and a golden brown bottom before flipping, about 1 minute. Flip and cook for about one minute more or until a light tap to the center is mostly firm. Note: don’t be tempted to pat the pancake down with your spatula while cooking as it will stall the cooking process, leaving you with a gummy interior. Stack pancakes and serve warm.To store leftovers, allow pancakes to cool unstacked before placing in an container or bag. This will help with sticking. Pancakes will keep for up to 4 days. To reheat, toast until warm and place in a tortilla warmer or in a dish towel to soften and steam. Notes

When we cook on vacation, we tend to only buy salted butter. In that case, either omit the salt from the mix or reduce by half.

Quick-cooking oats perform best in this recipe as old-fashioned oats don’t get enough time to absorb the liquid before cooking, leaving you with a lumpy-textured pancake. Trust me.

You may notice I add the milk mixture and butter separately. Because the milk is cold and the butter is warm, they like to reach the same temp once they come together as quickly as possible, which can result in hard butter clumps. But, when you add them in separately and stir the milk into the room temperature flour, the butter stays melted, and you don’t have to wait for everything to reach room temperature. It’s a win-win.

Try your best not to overmix the pancake batter (or any pancake batter for that matter) as it yields a tougher pancake.

If your pancakes are cooking too fast on the outsides before the middle is able to cook through, that’s a good sign you need to turn down the heat.
