Power House Overnight Proats

Summer is here! I love nothing more than a comforting bowl of porridge but I have to say on a hot summers morning you can’t beat a refreshing cold overnight oats. This overnight version is almost like a pudding, not overly sweet (just right for the morning time) but texture wise it’s really satisfying and keeps you full and energised until lunch with the combination of slow releasing energy from the oats with the added pinch of protein. If you’re using a completely unflavoured protein, try adding 1-2 tsp. of raw honey or maple to give a little sweetness.

Also, don’t forget to make this recipe your own by adding your favourite toppings or add ons. I suggest a superfood mix like milled flax but whatever you have in your press or love like chopped dried dates, fresh berries, chia seeds etc.  Just remember when adding anything extra like chia or flax (foods that absorb liquid) you may need to add a little extra almond milk usually about 3 tbsp per 1 tbsp of chia or flax to balance this out!

Green Oat Risotto

Risotto one of those dishes I see on a menu and think ah I really want that but I’m going to end up feeling so lethargic and bloated from it! Well no more, you can have that risotto and feel energised and you won’t have to open any of those buttons on your jeans

Savoury Oat & Bacon Crepe

I love crepes! It’s the most exciting breakfast (aside from a runny egg yolk of course). However, I love crepes any time of the day and sometimes a sweet option just isn’t going to satisfy my cravings. Introducing the savoury crepe a La NBF. A combination of serious flavours using a simple oat base savoury crepe that’ll take no time at all to whip up! This crepe can be used for multiple purposes like veggie wraps, tortillas, and served simply rolled up with some hummus or pesto.

Fulfil Chocolate Chip Protein Cookies

What a way to combine two of my favourite things; the cookie and caramel Fulfil Vitamin and Mineral bar and cookies! Using the chopped up Fulfil bar as my chocolate chips is a total winner, how has this not been done before?! And on an even better level, the cookie recipe is so handy and completely fool proof so there’s really no way of messing this one up. Follow the instructions and check out our video on how it’s made! All In One Breakfast Loaf

Bread bread bread – will we ever have enough simple homemade healthy bread recipes? Never! I love experimenting with bread recipes especially using everyday ingredients like oats. This recipe slots in perfectly with all times of day as a breakfast toast served with a little chia jam or as a snack simply alone (it’s got tonnes of flavour by itself) or even teamed with savoury options like hummus, boiled eggs (yes it’s a sweet and savoury combo and it totally works).

Toasted Almond and Vanilla Nice Cream

We don’t need good weather as an excuse to eat ice-cream, so even though the sun is starting to show it’s face, this ice-cream is an awesome dessert all year round! For those of you who have had gelato, this ice cream is a similar texture, creamy, smooth and stringy- yep stringy in a good way! It’s super indulgent and its crazy to think it’s just a few simple ingredients we probably all have in our presses already! Plus, it’s a handy way to use up soft bananas before they go totally off.

Quick Energy Balls

Wellfest 2017

It’s back! Ireland’s only health, fitness and wellness festival returns for it’s third year bigger and better than ever.


I will be there on Saturday, 6th May on the WellFood stage at 5pm demoing some of my favourite new recipes from my new book. And, on the stage right before is The Body Coach!
